2 tablespoons sugar (7/8 oz)
1/2 teaspoon active dry yeast
5 1/2 cups flour (1 lb 12 oz)
2 tablespoons kosher salt (3/4 oz)
1 tablespoon extra virgin olive oil, plus more (1/2 oz)

Steps:

  • Combine sugar, olive oil, yeast, and 2 cups cold water in bowl of a stand mixer fitted with a dough hook.
  • Let sit until foamy, about 8-10 minutes.
  • Mix flour and salt in a bowl.
  • With motor running, slowly add flour mixture.
  • Mix until a smooth dough forms, about 8-10 minutes.
  • Transfer dough to a greased baking sheet.
  • Cover with plastic wrap.
  • Let sit at room temperature 1 hour.
  • Divide dough into 4 balls.
  • Transfer to a greased 9 inch by 13 inch dish.
  • Brush tops with olive oil.
  • Cover with plastic wrap.
  • Refrigerate for 48 hours. Makes four 12 oz balls.

Classic Naples Style

Classic Naples style "Napoletana" Pizza Dough by Peter Reinhart (my hero breadmaker) This is for the pizza dough only, top as you desire before placing in oven

Number Of Ingredients 5

22 1/2 ounces unbleached all-purpose flour, 5 cups
1/2 ounce kosher salt, 2 teaspoons
1 teaspoon instant yeast
1/4 cup warm water, to dissolve yeast in and should be deducted from total water below
14 ounces water, room temperature

Steps:

  • Add all dry ingredients to mixing bowl and stir to distribute.
  • Add all liquid ingredients, including oil, water and yeast water.
  • Use large spoon and stir until all ingredients are evenly distributed and fully hydrated - all flour absorbed, about 1-2 minutes.
  • Let dough rest from 1-5 minutes and and then continue to mix for additional minute.
  • Add water or flour, a little at a time, as needed. Dough should be soft, supple and tacky to touch.
  • Rub olive oil on work surface to make an oil slick about 1 foot in diameter.
  • Transfer dough to surface, rub some oil on your hands to prevent sticking.
  • Stretch and fold dough to fold into a ball.
  • Cover dough still on oil slick, with clean bowl or transfer to an oiled bowl.
  • Perform 3 more stretch and folds, at 5 minute intervals.
  • Rub more oil on work surface as needed to prevent sticking.
  • After each stretch and fold dough will become firmer, less sticky and bouncier.
  • After final stretch and fold put dough into oiled bowl, cover bowl, not dough itself, with plastic wrap and lplace in refrigerator for up to 3 days.
  • When ready to bake, stretch out to desired size, place on pan lined with white corn meal to prevent sticking.
  • Top as desired, recommend my Pizza sauce listed on here instead of those pre-bottled stuff.
  • Place pizza stone or pan in hot oven. Use a super hot oven (as high as it goes, mine reaches around 500 F) the reason for using super hot is because the longer pizza bakes the drier and more boring the crust will become.
  • Shouldn't take more than 5-8 minutes.

  • Day 1: Make the starter. Mix everything together in the bowl of an electric mixer, crumbling in the yeast if it’s fresh or sprinkling the dry yeast over the water. Mix just long enough to make sure all the flour is wet. The starter will be wet and sticky. Cover tightly with plastic wrap and let the starter rest at room temperature (about 70ºF/21ºC) for 24 hours.
  • Day 2: Make the dough. By this time, the starter should be bubbly and smell like sex. For the dough, pour the water into a small bowl, crumble in the yeast, and whisk them together until no lumps remain; or, if using dry yeast, you can just sprinkle the yeast over the starter.
  • Mix and knead. Add the water (or water/yeast mixture) to the starter and then the flour, and then the salt. Attach the dough hook and mix on low speed for 8 minutes. Switch to medium-low speed and mix for another 4 minutes. The dough should be somewhat loose, since it has a fair amount of water in it. But if you’re mixer is less than 600 watts and the mixer is straining, remove half of the dough and mix the dough in 2 batches to avoid burning out your mixer motor. Recombine the dough at the end of mixing both batches.
  • Ferment. Cover tightly and let the dough ferment in the refrigerator until it proofs, rises, and almost doubles in size, at least 2 hours or up to 24 hours for more flavor. You could also let the dough rise at room temperature for 5 to 6 hours if you’re pressed for time.
