IRISH CHANNEL CORNED BEEF AND CABBAGE

Number Of Ingredients 6

3 pounds corned beef
1 onion, chopped
1 1/2 cups water
1 14-oz. can chicken broth
4 carrots, chopped
1 head cabbage, broken apart

Steps:

  • Rinse the corned beef and cut off excess fat.
  • Place the onion on the bottom of the slow cooker.
  • Place the corned beef on top of the onion.
  • Add water, chicken broth, carrots and cabbage.
  • Cook on low heat for 8 to 10 hours, or until meat is cooked and vegetables are tender.

3 -4 lbs lean corned beef
1/2 cup dry red wine
1 (1 1/4 ounce) packet dry onion soup mix
2 tablespoons dark brown sugar

Steps:

  • Put corned beef into a roasting pan with a tight fitting lid (use aluminum foil to cover pan under lid to seal better). Pour wine over and spread dried onion soup on top. Pat it down with your hand so it covers the meat well.
  • Roast the meat, covered, in a preheated 275 to 300 oven until it is fork-tender. This usually takes 2 to 3 hours or more, depending on size of the beef.
  • When the meat is tender, spread the brown sugar evenly over the meat, return it to the oven and cook it uncovered until the sugar melts.
  • If you remove the beef 30 minutes before ready to serve, it carves easier. Very sharp knife, very thin slices.
  • Terrific for sandwiches.

One of our re-entry students at Orange Coast College has brought this recipe in to share with other students for the last two years. EVERYONE loves it! Since this takes so long to cook, I usually make 4-6 at the same time.

1 boneless corned beef brisket, point cut
3/8 cup yellow mustard
1/2 cup brown sugar
1 whole clove (optional)
ginger ale

Steps:

  • Preheat oven to 350 degrees.
  • Place corned beef on a rack in a pan, fat side up, and cover with tin foil.
  • Cook for 3-4 hours.
  • Mix yellow mustard and brown sugar in a bowl.
  • Uncover corned beef.
  • Score the top of the corned beef, and stick whole cloves in the top if desired.
  • Baste with gingerale.
  • Spoon mustard sauce on top and sides of beef.
  • Place back in oven and cook for another ½ hour or so, until nicely browned and the meat is falling apart.
