This is an old recipe that is another family favorite. It has chocolate, walnuts, marshmallows and coconut in it. What more do you need, Enjoy!!!!!!!!!!!!!!!!!!

6 ounce(s) semi-sweet chocolate chips
2 tablespoon(s) butter or margarine
1 large egg
1 cup(s) sifted confectioners sugar
1 cup(s) chopped walnuts
2 cup(s) marshmallows, mini
1/2 cup(s) coconut, flaked

Steps:

  • Melt chocolate and butter over low heat. Remove from heat; Blend in egg, Stir in sugar, nuts, and marshmallows, Blending well. Shape into 1-inch balls, roll in coconut. Chill. Makes about 48.

ITALIAN HORNS

1 brick cream cheese
1 cup ricotta cheese
1/2 cup jarred green olives with pimiento drained very well
1 clove garlic, grated or finely chopped
8 slices prosciutto di Parma
8 slices Genoa salami
8 slices copicolla (hot ham)
8 sesame bread sticks
8 celery sticks, ribs halved lengthwise, leafy tops intact
Roasted red peppers
Eggplant in extra-virgin olive oil
Artichoke hearts
Giardiniera hot vegetable salad
Marinated mushrooms

Steps:

  • Combine cream cheese, ricotta, olives with pimiento and garlic in processor bowl and process until smooth.
  • To make each horn, place a piece of prosciutto on work surface and spread with a layer of cheese, top that layer with a slice each of Genoa and ham layered next to each other. Spread more cheese over the salami and ham and place a bread stick and a celery stick at 1 end of the meats with ends hanging off to the side. Wrap and roll the meat forming a fancy Italian horn. Repeat with remaining ingredients.
  • Arrange a platter with antipasti and garnish with a pile of Italian horns.

AMERICAN-ITALIAN ALL'AMATRICIANA



American-Italian all'Amatriciana image

Salt
1 pound whole-wheat cassarecci, rigatoni or penne pasta
1 tablespoon extra-virgin olive oil
6 slices lean peppered bacon, chopped
1 large red onion, chopped
4 cloves garlic, finely chopped or grated
1 cup chicken stock
1 (28-ounce) can crushed fire roasted tomatoes
Black pepper
A handful flat-leaf parsley, chopped
Shredded sharp white Cheddar, to pass at table

Steps:

  • Heat water to boil for pasta, season with salt and cook pasta to al dente.
  • Heat a deep skillet over medium-high heat with extra-virgin olive oil, a turn of the pan. Add bacon and crisp 4 to 5 minutes then add onions and garlic cook to soften, 5 to 6 minutes. Stir in stock then tomatoes and season with pepper to taste. Simmer sauce 15 minutes. Toss pasta with sauce and parsley. Serve with grated sharp white Cheddar.

1/2 cup Campari
1 bottle sparkling dry white wine or bubbly Prosecco

Steps:

  • Add the oranges and lemons to a large glass pitcher. Pour in the Campari and muddle with a large wooden spoon to release the fruit juices. Fill the pitcher with a bottle of chilled sparkling wine and pour over chilled glasses filled with ice.

3/4 lb sweet Italian sausage, sliced into pieces
1 cup chopped green pepper
1 cup chopped onion
4 garlic cloves, chopped
2 tablespoons olive oil
1 (16 ounce) can tomatoes
1 (29 ounce) can tomato puree
1/2 cup chopped parsley
2 teaspoons oregano
1/4 teaspoon pepper
3 whole cloves
1/4 cup grated romano cheese or 1/4 cup parmesan cheese
3 (9 ounce) packages angel hair pasta

Steps:

  • Saute the first five ingredients in oil until light brown. Add tomatoes, puree, parsley and seasonings. Bring to boil, reduce heat, cover and simmer 4 minutes. Stir in cheese and simmer 10 minutes more. Cook pasta according to directions on package. Serve with sauce and grated cheese.
