EASY PEANUT BUTTER PIE



Easy Peanut Butter Pie image

This rich, old-fashioned dessert was an immediate hit with three girlfriends I used to live with. Now my husband and I run a small church camp and our two boys consume a lot of our time and energy-as well as my peanut butter pie!

Yield 8-10 servings.

Number Of Ingredients 10

1 cup confectioners' sugar
1/2 cup creamy peanut butter
1 pastry shell (9 inches), baked
2/3 cup sugar
1/4 cup cornstarch
2 cups whole milk
3 large eggs, separated
1/4 teaspoon salt
3 tablespoons butter
1/4 teaspoon vanilla extract

Steps:

  • Place confectioners' sugar in a small bowl. Cut in peanut butter until crumbly. Spread half of mixture in pastry shell. , In a large saucepan, combine the sugar and cornstarch. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in butter and vanilla; set aside., In a small bowl, beat egg whites until stiff peaks form. Spread reserved custard evenly over peanut butter mixture. Spread meringue over hot filling, sealing edges to crust. Sprinkle with reserved peanut butter mixture. Bake at 350° for 12-15 minutes or until the meringue is golden brown. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Store leftovers in the refrigerator.

This peanut butter pie is another recipe my friend (Irene) sent to me, along with the "Pecan Pie Bars". (I already have a peanut butter pie posted BUT this is different) Inspired by: RestlessChipotle.com

PRETZEL CRUST:
1 1/2 to 2 c coarsely crushed pretzels, reserve some for the top
2/3 c butter, melted
FILLINGS:
1/3 c caramel sauce, either homemade or commercial
1 pkg (12 oz) milk-chocolate chips, bittersweet, semi sweet, dark, or a combination (reserve some for topping)
1/3 c heavy cream
1 1/3 c creamy peanut butter
1 pkg (8 ounce) cream cheese, softened
1/2 c sugar (or splenda/stevia)
1 pt heavy cream
1/3 c sugar (or splenda/stevia)

Steps:

  • 1. Toss pretzel crumbs with melted butter, then press into a 10-inch pie pan. Bake at 350° for apx. 10 mins. Allow to cool
  • 2. Bring 1/3 cup of heavy cream just to a simmer, then remove from heat and add chocolate chips; stir until smooth and set aside.
  • 3. Using the paddle attachement on your mixer, beat peanut butter and cream cheese until combined. Add 1/2 sugar and beat until thoroughly incorporated (no graininess.)
  • 4. Using a clean bowl, whip cream until it just begins to thicken; continue to whip as you slowly add in the 1/3 cup of sugar. Whip until the cream is fluffy... then stop! You want to be careful not to overbeat.
  • 5. Using a gentle touch, slowly fold half of the whipped cream into the peanut butter mixture. Repeat with second half of the whipped cream.
  • 6. Add the caramel to your cooled pretzel crust; chill until set (apx 10 minutes). Repeat this step, this time adding the chocolate. Finally, top with the peanut butter mixture and a sprinkling of the reserved chocolate and pretzels.

Two of my favorite things...peanut butter and hot fudge. This is a delicious pie. I tried it out the first time at a church social and it was an instant hit. I was asked to make it again the next day for a football party.

1 prepared graham cracker pie crust
1 cup peanut butter
8 ounces cream cheese, at room temperature
1/2 cup sugar
12 ounces Cool Whip
1 (11 ounce) jar hot fudge topping

Steps:

  • In medium bowl, beat together the peanut butter, cream cheese, and sugar until creamy.
  • Gently fold in cool whip.
  • Pour mixture into pie shell.
  • Heat hot fudge in microwave safe bowl until just soft and then spread it over pie.
  • Refrigerate for at least 1 hour.
  • You can garnish with swirls of chocolate, drizzles of hot fudge and peanut butter or chocolate and peanut butter chips.

1 cup chunky peanut butter
1 (8-ounce) package cream cheese softened
1 cup sugar
2 tablespoons butter or margarine
1 tablespoon vanilla extract
1 9 inch graham cracker pie crust
1 cup whipped topping
1/3 cup caramel ice cream topping

Steps:

  • Using an electric mixer, beat the peanut butter, cream cheese, sugar, butter, and vanilla together in a large bowl. Pour mixture into the graham cracker crust. Chill overnight. The next day, use a spatula to gently cover the top of the pie with the whipped topping. Warm the caramel topping in a microwave, stirring at 15-second intervals until pourable. Be careful not to burn. Swirl or drip the warmed caramel on top of the whipped topping before serving.

1 cup peanut butter (any style)
1 (8 ounce) package cream cheese (softened)
1 cup whipping cream (not whipped cream)
2 tablespoons vanilla
1 (10 inch) Oreo cookie pie crusts or 1 (10 inch) graham cracker pie crust

Steps:

  • Cream sugar, peanut butter, cream cheese and butter. Whip the cream adding in vanilla, fold into peanut butter mixture and pour into crust. Chill overnight. Serve with Chocolate topping if desired.
  • Sometimes I crush oreos, mini M&Ms, or Reese Pieces and lightly press into top of pie, or I crush some almonds and lightly press into top.
  • WARNING- VERY RICH. A small piece is PLENTY!

1 cup creamy peanut butter
8 ounces cream cheese, softened
1/2 cup sugar
4 1/2 cups whipped topping, divided
1 chocolate wafer pie crust
12 ounces chocolate fudge topping, divided
1/2 cup mini chocolate chip
1/4 cup peanuts, shelled and crushed

Steps:

  • Microwave fudge topping till slightly runny. Spoon some into bottom of pie shell until just covered. Refrigerate.
  • Beat 1 cup peanut butter, cream cheese and sugar in large bowl with an electric mixer on medium, till well combined. Fold in 3 cups whipped topping until combined.
  • Spoon mixture into pie shell. Using a spatula, smooth mixture to edges of pie. Spread remaining whipped topping over this layer.
  • Using a spoon, drizzle remaining fudge over top of the pie.
  • Sprinkle with chocolate chips and peanuts. Refrigerate until ready to serve.
