MAKEOVER MOM'S APPLE DUMPLINGS



Makeover Mom's Apple Dumplings image

The result of this makeover is a decadent dessert from Gina Hill of Ottawa, Kansas, with a still syrupy-sweet sauce and tender, flaky, homemade crust. Best of all, it's got half the calories of the original. It also has 60% less fat, saturated fat and cholesterol of Gina's Mom's recipe. And, inadvertently, as a bonus, Makeover Mom's Apple Dumplings are also much lower in sodium.

Number Of Ingredients 19

1-1/4 cups water
1/2 cup sugar
Sugar substitute equivalent to 1/3 cup sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon butter
2 to 4 drops red food coloring, optional
DUMPLINGS:
1-3/4 cups all-purpose flour
1-1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold butter
2 tablespoons canola oil
1/3 cup 2% milk
2 teaspoons sugar, divided
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 small tart apples, peeled and cored
3/4 cup fat-free half-and-half

Steps:

  • For syrup, in a small saucepan, bring the water, sugar, sugar substitute, cinnamon and nutmeg to a boil, stirring occasionally. Remove from the heat; add butter and food coloring if desired. Stir until butter is melted. Pour into an 11x7-in. baking dish coated with cooking spray; set aside., For dumplings, in a small bowl, combine the flour, baking powder and salt; cut in butter until crumbly. Gently stir in oil. Gradually add milk, tossing with a fork until dough forms a ball. Shape into a log. Cover and refrigerate for 30 minutes. Combine 1 teaspoon sugar, cinnamon and nutmeg; set aside. , Divide dough into six portions (return five portions to the refrigerator until ready to use). On a lightly floured surface, roll one portion into a 6-in. square. Place an apple in the center; sprinkle with about 1/4 teaspoon reserved spice mixture. Bring up corners of pastry to center and pinch edges to seal. , Place dumpling in syrup in baking dish. Repeat with remaining pastry, apples and spice mixture. Sprinkle with remaining sugar. Bake at 375° for 35 minutes or until pastry is golden brown and apples are tender. Serve warm with half-and-half.

1 (15 ounce) package frozen pie crusts
4 small apples
4 teaspoons sugar
4 teaspoons cinnamon
nutmeg
1/4 cup butter

Steps:

  • roll out pie crust. cut into 4 even sections.
  • peel, core, and quarter apples.
  • place 1 whole apple into 1 section of dough. fill with 1 teaspoons sugar, 1 teaspoons cinnamon, a pinch of nutmeg, and 1 pat of butter. bring up sides of dough to enclose apple. place in greased baking dish.
  • repeat with rest of apples.
  • bake at 350F for 20 minutes or until apples are soft.

My Mom's Apple Dumplings image

I don't know where my mom got this recipe....it may have been from my grandma...but this was one of my few favorite deserts growing up. It is good for breakfast with milk too! She told me that she was making these last weekend, and I just had to post the recipe. If only I could make them taste as good as she. The trick is using Cortland Apples from Pennsylvania...unfortunately I can't find them anywhere in Arizona.

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
3/4 cup buttermilk, although I think my mom substituted with milk soured with lemon juice
8 small apples, peeled, cored and wedged but keep together
4 teaspoons cinnamon
4 tablespoons butter
2 tablespoons sugar
1 cup sugar
1/2 cup water

Steps:

  • Sift flour twice. Once on its own and a second time with the baking soda and salt. Cut in shortening until the mixture is fine, like a cornmeal.
  • Add buttermilk. Mix until a stiff dough forms.
  • Turn dough out on to a floured board and knead slightly.
  • Roll the dough into a 20x10 inch rectangle. Cut into 8 5" squares.
  • Place an apple (already cored, peeled, and sectioned) into the center of each square. Stand it up as if you were putting a puzzle together. Top each apple with 1/2 TBS butter, some sugar, and cinnamon.
  • Fold the corners of each square to the top and center, covering each apple completely. Make sure the tops are sealed well.
  • Place the dumplings on a greased baking pan (a casserole pan) and bake for 15 minutes at 425 degrees.
  • In the meantime, make a simple syrup with the 1 cup of sugar and 1/2 cup water (heat until sugar dissolves in a pan).
  • Pour this syrup over the dumplings, and place back in oven to bake for another 15 minutes at 425 degrees.
  • Serve with ice cream for desert or milk for breakfast! Yummy!

2 cups all-purpose flour, sifted
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/3 cups milk

Steps:

  • Sift flour , baking powder and salt into a mixing bowl.
  • Pour in milk.
  • Stir briskly with a fork just until ingredients are moistened.
  • Drop the dumpling dough by tablespoonsful into boiling chicken broth.
  • Cover and cook for 12 minutes.
  • Don't remove lid during the 12 minutes.
  • Your chicken and dumplings are ready to serve.

  • Peel and core the apples. Place in a bowl and add the 1/2 cup of sugar and 1 1/2 teaspoons of cinnamon. Shake and coat well.
  • I use 1/2 apple per dumpling. Place 1/2 apple in the center of each pie crust square. Dot with butter. (Please note, in the photos, I forgot to add the butter inside so I dotted the butter over the tops before going in the oven! ). Pull the corners of the crust up over the apples and seal at the top. I really smash it down and mold the crust around the apple. Place the dumplings into a deep baking dish.
  • Boil together for 3 minutes all the syrup ingredients then immediately pour over and around the dumplings. Bake at 425 (F) for 40-45 minutes, until the apples are cooked through. I baste the dumplings with the syrup mixture a couple of times during the last half of the baking time, this creates a crispy, shiny texture of the pie dough.
