Easy Homemade Chili image

Easy homemade chili. Goes great with cornbread or over corn chips for a chili pie! I like to use spicy pinto beans.

1 pound ground beef
1 onion, chopped
1 (14.5 ounce) can stewed tomatoes
1 (15 ounce) can tomato sauce
1 (15 ounce) can kidney beans
1 ½ cups water
1 pinch chili powder
1 pinch garlic powder
salt and pepper to taste

Steps:

  • In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
  • Season with the chili powder, garlic powder, salt and ground black pepper to taste. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.

This is my hubbys dish. Serve with cooked rice or fritos. For a bit more spice try adding a mild pepper

3 (15 ounce) cans chili beans
1 (15 ounce) can tomato paste
1 (6 ounce) can diced tomatoes
1 1/4 ounces chili seasoning mix
1 lb ground beef

Steps:

  • Fry beef in deep pot till brown.
  • drain grease and rinse cooked meat.
  • return meat to pot adding seasonings, beans, paste and tomatoes.
  • Let simmer 20-30 min.
  • Serve with cooked rice or fritos. For a bit more spice try adding a mild pepper.

A co-worker of my husbands shared this recipe with him many years ago. I just found it -- all crumbled up on the original piece of paper he was handed. I'm posting it here so I will always know where to find it.

1 1/4 lbs ground turkey
1 cup chopped onion
4 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon cumin seed
1 (8 ounce) can tomato sauce
1/8 teaspoon ground red pepper
1/8 teaspoon black pepper
1 cup water
1 (15 ounce) can kidney beans, drained and rinsed
1 (3 1/8 ounce) package chili seasoning mix (preferably D.L. Jardin's Texas Chili Works)

Steps:

  • Brown meat; add onion and garlic. Saute for a few minutes.
  • Add remaining ingredients except kidney beans.
  • Cover and simmer 1 1/2 to 2 hours. If you want a thicker chili, thicken with some flour and water.
  • Add kidney beans and heat through.

This is the only chili recipe I've used for the last 8 years or so. I think its pretty outstanding. I vary the hot ingredients depending on who will be eating it and the mood I'm in. I've also used ground venison and it was just as good.

1 cup onion, diced
1 cup green pepper, diced
1 large celery rib, diced
3 garlic cloves, minced
3 tablespoons vegetable oil
4 lbs ground beef
1 1/2 teaspoons jalapeno peppers, seeded and diced
1 tablespoon ground cumin
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon Tabasco sauce (or to taste)
1 1/2 bay leaves, crumbled
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon Mrs. Dash seasoning mix
1/2 teaspoon red pepper flakes
1/2 cup chili powder
2/3 cup dark beer
1 (16 ounce) can stewed tomatoes
1 (8 ounce) can tomato paste
1 teaspoon Worcestershire sauce
2 tablespoons honey
1 1/2 cups water
kidney bean (optional)
cheddar cheese (optional)
sour cream (optional)

Steps:

  • In a large kettle, stir fry the onion, green pepper, celery and garlic in the vegetable oil for about 8 minutes or until tender.
  • Add the ground beef and cook until done.
  • Drain.
  • Return meat to kettle, add remainder of ingredients (and kidney beans) and enough water to come to the top of the chili ingredients.
  • Stir til mixed completely.
  • Simmer on low heat, uncovered for at least 3 hours.
  • Top with cheddar cheese and sour cream if desired.

Every year when football season rolls around and the weather begins to cool, my husband requests I make this hearty, beanless chili. It receives rave reviews from everyone.

2 pounds ground beef
1 large onion, chopped
6 cloves garlic, chopped
⅓ cup chili powder
1 ½ teaspoons ground cumin
1 ½ teaspoons dried basil
1 (28 ounce) can diced tomatoes with juice
1 (4 ounce) can diced green chile peppers, drained
1 (15 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
1 tablespoon white vinegar
3 tablespoons brown sugar
1 teaspoon hot pepper sauce (e.g. Tabasco™)
2 teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Place the ground beef, onion and garlic in a large saucepan over medium heat. Cook, stirring to crumble the beef, until the beef is no longer pink and the onion is tender. Drain off the fat and return the pan to the stove. Combine the chili powder, cumin and basil; sprinkle over the beef. Cook and stir to coat the meat and toast the spices a little.
  • Pour in the tomatoes, green chilies, tomato sauce, beer and vinegar. Bring to a boil and stir to loosen any bits that are stuck to the bottom of the pan. Mix in the brown sugar, hot pepper sauce, salt and pepper. Reduce the heat to low, cover and simmer for 3 hours. Remove the lid for the last 30 minutes of cooking.

  • SAUTE ONIONS AND MEAT: In large pot, heat oil to medium high. Add onions and saute for 2-3 minutes. Add ground beef, breaking up with large spoon. Saute, stirring occasionally, until brown all over, about 4-5 minutes.
  • ADD SPICES ETC: Lower heat to medium. Add garlic and jalapeno and cook for 2 minutes. Add chili powder, salt, cumin and tomato paste. Stir to mix well.
  • ADD LIQUIDS: Add tomatoes, broth and water. Bring to boil, then reduce the heat to low and simmer for 1 hour 10 minutes without the cover. Stir occasionally.
  • ADD BEANS TO FINISH: Add beans. No need to rinse. The liquid will help thicken the chili. Bring to boil, then lower heat and simmer for another 20-30 minutes, uncovered, until the chili is the consistency (thickness) you like. Taste and adjust seasonings (chili powder, cumin, salt).
