I have been making this recipe for years. It has a real cheesy smooth sauce. I got it from an old Better Homes and Garden recipe book my mom gave to me years ago.

12 ounces pasta shells
9 ounces canned tuna, drained
1/2 cup Miracle Whip or 1/2 cup mayonnaise
1 cup celery, diced
2 cups frozen peas, thawed
1/3 cup onion, diced
1 (10 ounce) can cream of mushroom soup
1/2 cup milk
1 1/2 cups Velveeta cheese, cubed
potato chips, crushed for top

Steps:

  • Preheat oven at 425°F.
  • Cook noodles in boiling salted water till tender; drain. Combine cooked noodles, drained tuna, mayonnaise, onion, celery, peas.
  • Blend soup and milk in a saucepan over low heat. Add cheese and salt and pepper to taste; stir until cheese is melted. Add to noodle mixture. Spray a casserole dish with Pam. Put mixture into casserole dish and sprinkle crushed potato chips on top.
  • Bake for about 20 minutes or until bubbly on top.

This tuna noodle casserole is the best with a classic creamy taste from my childhood. The sauce is rich and creamy but not overwhelmingly heavy. The crunch from the topping and fresh bite from the parsley create the perfect balance. Let's not forget that this is a great budget-friendly meal to feed a crowd!

1 (12 ounce) package egg noodles
4 ¼ teaspoons kosher salt, divided
4 tablespoons salted butter, divided
5 teaspoons olive oil, divided
1 (8 ounce) package sliced fresh mushrooms
1 small white onion, minced
¼ cup all-purpose flour
2 cups milk
1 ½ cups chicken stock
2 tablespoons lemon juice
1 teaspoon Dijon mustard
½ teaspoon ground black pepper
1 ½ cups shredded white Cheddar cheese
1 cup frozen sweet peas
2 (6 ounce) cans tuna, drained
1 cup panko bread crumbs
¼ teaspoon ground paprika
2 tablespoons finely chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of water to a boil. Add egg noodles and 3 teaspoons salt to the boiling water; cook until tender yet firm to the bite, about 6 minutes. Drain noodles. Return to pot and set aside.
  • Heat 2 tablespoons butter and 1 tablespoon oil in a large skillet over medium-high heat. Add mushrooms and onion and cook until mushrooms are softened and onions are translucent, about 4 minutes. Add remaining butter; stir constantly until melted. Sprinkle flour over vegetable mixture and cook, stirring constantly, for 1 minute. Stir in milk and stock and bring to a simmer, stirring often. Simmer for 5 minutes. Stir in lemon juice, Dijon mustard, 1 teaspoon salt, and pepper.
  • Add sauce mixture to reserved noodles. Stir in 1 cup Cheddar cheese, peas, and tuna. Pour mixture into the prepared baking dish and sprinkle remaining Cheddar cheese over the top.
  • Stir together bread crumbs, remaining 2 teaspoons oil, remaining 1/4 teaspoon salt, and paprika in a small bowl. Sprinkle bread crumb mixture evenly over the casserole.
  • Bake in the preheated oven until golden and bubbly, 25 to 30 minutes. Sprinkle with parsley and serve.

I've been making tuna noodle casserole for decades. I usually modify it a bit depending on what I have on hand. Tonight I was very happy with the result and am posting it for future reference.

10 ounces whole wheat noodles
2 (7 ounce) cans tuna (drained)
10 1/2 ounces cream of mushroom soup
1/2 soup can milk
2 tablespoons green chili peppers, chopped (roasted and peeled or canned)
1 small shallot, minced
2 tablespoons red bell peppers (chopped fine)
2 stalks celery (chopped fine)
2 cups monterey jack cheese (shredded with 1/3 of it reserved for topping)
1 tablespoon butter
3 ounces potato chips (crunched)
1 tablespoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 350°F Butter a casserole dish (I used a large enameled dutch oven.) Bring 6 quarts of water and the salt to a boil. Add noodles. Mix all remaining ingredients except noodles and reserved cheese together. When noodles are about 1 minute away from done. Drain them and add to the mixed ingredients.
  • Put in the casserole dish and top with reserved cheese. Top all with crushed potato chips. Bake about 30 minutes or until the chips are starting to brown slightly around the edges.

2 cups egg noodles, cooked
1 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
1 cup frozen peas
1 pouch (6.4 oz.) chunk albacore tuna in water
4 green onions, sliced
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1 tsp. zest and 2 Tbsp. juice from 1 lemon
1/2 tsp. garlic powder
1/4 tsp. black pepper
8 round buttery crackers, crushed
1 Tbsp. butter, melted

Steps:

  • Heat oven to 350ºF.
  • Combine first 5 ingredients in large bowl. Mix cream cheese spread, lemon zest, juice and seasonings until blended. Add to noodle mixture; mix lightly. Spoon into 1-1/2-qt. casserole sprayed with cooking spray; cover.
  • Bake 20 min. Meanwhile, combine cracker crumbs and butter.
  • Stir tuna mixture; top with crumb mixture. Bake, uncovered, 8 to 10 min. or until tuna mixture is heated through and topping is golden brown.

I love Tuna Casserole, but I do admit to being very picky about it. I have searched far and wide for a recipe that I liked, and by-jove, I think I've got it. I do admit that one of my favorite tuna casseroles is "Stouffers Tuna Casserole". I just love the flavor, but I admit, I have not been able to recreate it (dang preservatives). But this one is pretty good. It's not fat free, but it is ooey, gooey goodness.

2 can(s) tuna
1 cup(s) mayonnaise
1/4 cup(s) finely chopped onion (too much onion is overwhelming)
1 tablespoon(s) green onion (if you like it)
2 tablespoon(s) finely chopped celery
1/2 package(s) frozen peas (optional)
2 can(s) cream of chicken soup (secret ingredient)
1/4 cup(s) small cubed carrots (optional)
1 cup(s) mozzerella cheese
- paprika (optional)
1 package(s) wide egg noodles

Steps:

  • Preheat oven to 360 degrees. You don't want it too hot, as it might burn food. Also, you might want to spray the sides of baking dish with cooking spray, as the cheese sometimes sticks to pan. Your choice.
  • In a large bowl, combine Tuna, Mayo, onions, green onions, celery and carrots together, toss.
  • Slowly add Cream Of Chicken soup, one can at a time. Slowly mix.
  • Cook wide egg noodles according to package directions (7 to 8 minutes in hot, salty water)drain and slowly mix hot noodles into tuna and veggie mix. Add Mozzarella cheese. Add extra sharp cheddar cheese (Monterey Jack cheese is good too), mix well. Put a layer of cheese (your choice, Mozzarella or Monterey Jack is best, as it doesn't burn).
  • Cook in oven at 360 degrees until cheese is nice and melted. Let stand for a few minutes.
  • **You can variate this recipe with whatever spices you like. Sometimes I add peas, but I found I like it better without.
