SWEET AND SOUR GREEN BEANS



Sweet And Sour Green Beans image

1 cup STAR Red Wine Vinegar
3 Tbs. sugar
3 Tbs. STAR Orginale Olive Oil
1 1/2 lbs. green beans, trimmed and cut into 1 1/2 inch pieces
salt and pepper
1/2 cup slivered almonds, toasted

Steps:

  • In large saucepan, bring red wine vinegar and sugar to boil over medium-high heat. Boil until reduced to 1/2 cup, about 10 minutes, watching carefully. Whisk in olive oil. Meanwhile, cook beans in a large pot of boiling salted water until just tender, stirring occasionally, about 5 minutes. Drain. Pour vinegar mixture into same pot and return to simmer, whisking constantly. Return beans to pot and toss to coat. Season to taste with salt and pepper. Transfer beans to bowl and sprinkle with almonds.;

3 tablespoons minced shallots
1 tablespoon minced garlic
2 large potatoes, diced
Kosher salt and black pepper
1 pound green beans, trimmed
1 tablespoon olive oil
2 tablespoons butter

Steps:

  • Bring a large stockpot of salted water to a boil. Add the green beans and cook until bright green, approximately 1 minute. Remove the green beans from the pot and place them into an ice bath. Heat the oil and 1 tablespoon of the butter in a large saute pan over medium heat. Add the shallots and garlic and cook, stirring to mix well until the shallots are softened, 3 to 4 minutes. Add the potatoes and remaining tablespoon of butter and sprinkle with salt and pepper. Cook the potatoes, stirring occasionally, until just tender, about 10 minutes. Add the green beans to the pan and cook until they are heated through, 3 to 4 minutes more. Season with salt and pepper.

TOASTED ALMOND GREEN BEANS



Toasted Almond Green Beans image

2 cans (14.5-oz each) Del Monte® Cut Green Beans, drained
3 oz. slivered almonds
3 Tbsp. butter, divided use
1 Tbsp. Worcestershire sauce
11/2 tsp. lemon juice
1/4 tsp. ground cumin
1/8 tsp. salt or to taste
Black pepper to taste

Steps:

  • 1. Heat large skillet over medium-high heat. Add almonds, cook 2-3 minutes or until browned, stirring frequently, being careful not to burn. Add 2 Tbsp. of the butter, Worcestershire, lemon juice, and cumin. Cook until butter has melted, stirring constantly. Set aside on separate plate.
  • 2. Melt remaining butter over medium-high heat. Add beans, cook 2 minutes, stirring occasionally. Remove from heat, sprinkle almond mixture over all. Salt and pepper to taste.
  • Note: May toss and let stand for 5 minutes to absorb flavors.

5 cups fresh green beans, snapped and washed
2 cups chicken broth, seasoned with garlic (I use Swanson's)
4 pieces bacon
2 tablespoons bacon grease
1 teaspoon crushed red pepper flakes
1 tablespoon salt
water, to cover green beans

Steps:

  • Using a large pan, put all the ingredients in the pan.
  • Bring to a boil.
  • Cook for approximately two and a half hours.
  • If needed add more water.
  • Make sure the beans are really tender before serving.

1 small onion, chopped
1 garlic clove, chopped
1/4 cup extra-virgin olive oil
1 1/2 cups tomato pulp
1 pound green beans, stem end snapped off
Freshly ground black pepper, fresh red hot pepper, or dried chili pepper flakes
Coarse sea salt
1/4 cup boiling water
2 tablespoons chopped basil

Steps:

  • Put the onion and the garlic in a heavy-bottomed 3-quart pot, drizzle with 2 tablespoons of extra virgin olive oil, and stir to coat the vegetables.
  • Place the pot over low heat and cook the onion and garlic for 10 minutes or until tender.
  • Add the tomato, green beans, and pepper (or hot pepper) and season with salt. Bring to a simmer and cover with a tight-fitting lid. Cooking time will depend on the quality and freshness of the beans, which should be tender and soft. Check after 10 minutes to make sure that cooking liquid is sufficient. Add 1/4 cup boiling water if necessary. If beans expel too much water, uncover and cook over high heat to thicken sauce.
  • Add the basil, cook for 2-3 minutes, remove from heat, and stir in remaining 2 tablespoons of extra-virgin olive oil.
