Acorn Squash with Apple image

Peeling an acorn squash is the key to this delicious dish that's cooked in a microwave. A fast and easy delight for busy families.

1 acorn squash
2 apples, cored and sliced
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon finely chopped walnuts
½ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • To easily peel the acorn squash without losing a lot of vegetable, gently drop the squash in a large pot of boiling water, and boil for 15 minutes. Pour off the boiling water and fill with cold water and let sit 5 minutes to cool. When cool enough to handle, use a knife to slice off the peel on the ridges and use a teaspoon to dig out the peel in the valleys. Slice the squash in half and remove the seeds and stem. Then slice the halves into sections and finally cut into 1 inch chunks.
  • Place the squash chunks into a large microwave-safe bowl along with the apples. Dot with pieces of butter. Sprinkle the brown sugar, walnuts, salt and cinnamon over the top. Cover with plastic wrap, and poke a few holes in it for ventilation.
  • Cook in the microwave for 7 1/2 minutes on full power. Remove, uncover, and stir. Return to the microwave, and cook for another 7 1/2 minutes on full power, until tender. Serve hot.

3 acorn squash, halved and seeded
2 tablespoons stick margarine
1 cup chopped onions
3 cups peeled, seeded, and chopped Granny Smith apples
½ cup golden raisins
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place the squash onto a baking sheet cut side down. Fill the baking sheet with 1/2 inch of water.
  • Bake the squash in the preheated oven for 40 minutes. Drain off any water remaining in the baking sheet.
  • While the squash is baking, melt the margarine in a large skillet over medium heat. Cook the onion and apple in the margarine until the onion has softened and turned translucent, 10 to 15 minutes. Scrape the mixture into a bowl to cool until the squash has finished baking.
  • Once the squash is done, stir the raisins, brown sugar, cinnamon, and Cheddar cheese into the apple mixture. Turn the squash cut side up on the baking sheet and fill with the apple mixture. Return the squash to the oven; bake until the filling is hot and the cheese has melted, about 15 minutes.

1 medium acorn squash
2 teaspoons butter
1 medium fuji apple, cored and finely diced
1/4 cup dried cranberries
3 -4 tablespoons orange juice
1/4 teaspoon apple pie spice
2 tablespoons pecans, finely chopped
1 tablespoon orange zest
1 tablespoon maple syrup

Steps:

  • Cut the squash in half; discard seeds.
  • Place the squash cut side down in a microwave safe dish; add 1/2 inch of water.
  • Microwave on high, uncovered, for 10 to 12 minutes or until tender; drain.
  • While the squash is cooking, melt the butter in a non-stick skillet and add the diced apple.
  • Cook, stirring frequently for 2 to 3 minutes, add the orange juice, apple pie spice, cranberries and chopped pecans.
  • Continue to cook for 1 to 2 minutes or until the orange juice has evaporated, stir in orange zest.
  • Divide the mixture between the squash halves, drizzle with maple syrup and place under broiler for a few minutes to brown lightly.
  • Let stand for 5 minutes before serving.
  • Hint: For easier cutting of the squash, place in microwave and microwave on high for 1 minute or until slightly warm.

1 acorn squash
2 apples, 1 Fuji and 1 Granny Smith; peeled, cored, and chopped into a petite size
2 tsp lemon juice
1/4 c white sugar
1/2 tsp apple pie spice
2 pinch Kosher salt
2 pinch black pepper
4 tsp brown sugar; separated
3 slice bacon; cooked and crumbled
1/4 c toasted walnuts; chopped
4 Tbsp salted butter; separated

Steps:

  • 1. Mix together the chopped apples and lemon juice.
  • 2. Mix together the sugars and spice.
  • 3. Combine the apples with the sugar and spice mixture.
  • 4. Fold in the crumbled bacon and chopped walnuts. Set aside while you prepare the acorn squash. (That will give the apple filling time to have its flavors come together.)
  • 5. Cut the acorn squash in half and remove seeds.
  • 6. Set on a round microwave-safe dish and pierce the inside of the squash with a fork.
  • 7. Melt 2 Tbsp of butter. Brush the inside of the squash with the melted butter.
  • 8. Sprinkle 2 tsp of brown sugar and a couple of pinches of salt and pepper over acorn squash halves to season the squash.
  • 9. Then microwave for 6 minutes.
  • 10. Fill the squash with the apple filling. (Depending on the size of your squash you may have some extra filling leftover.) Dot the top of each squash with the remaining 2 Tbsp of butter. Sprinkle the remaining 2 tsp of brown sugar over the filling.
  • 11. Microwave again for 6 minutes.
  • 12. Remove from the microwave. The dish will be hot so use pot holders to remove the dish from the microwave. Let it sit in the dish for a few minutes to cool. Then serve.

In preparing for the fall/winter holidays I came across this soup. I was looking for something that could be made ahead and served for a family get-together. Since it has no cream, this recipe looks like it would reheat easily. The original recipe is by Joyce Goldstein and the ingredients were doubled for a large gathering.

1 tablespoon butter, unsalted
1 tablespoon olive oil
1 large onion (about 2 cups)
1 granny smith apple, peeled, cored and diced (about 1 cup)
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon cinnamon
5 cups butternut squash, peeled and diced (2 whole squash)
6 cups chicken stock
salt, to taste
fresh ground pepper, to taste
1 granny smith apple, thinly sliced for garnish

Steps:

  • Melt the butter and olive oil in a soup pot over moderate heat.
  • Add the diced onions and apples and cook until tender, about 10 minutes.
  • Stir in the spices, cook for one minute.
  • Add the squash and chicken stock, bring to a boil, reduce the heat, and simmer, uncovered, until the squash is very tender, about 20-30 minutes.
  • In a blender or food processor, puree the vegetables in batches with a little bit of the stock.
  • Transfer puree mixture into a large bowl.
  • Stir in enough of the remaining stock to make a medium-thick soup.
  • Reserve any leftover stock if not serving right away, as the soup may thicken on standing. This is rich broth so if you have any left just add it to your favorite homemade soup or freeze for another use.
  • Season with salt and pepper and adjust the spices.
  • This soup may be made a day ahead, refrigerated uncovered until cold and then covered to store.
  • To serve, in a large pot heat the soup almost to scalding.
  • Ladle into bowls and top with thin slices of apple.

1 acorn squash
1 little water
2 apples, cored and sliced thin
canola oil
maple syrup
pumpkin pie spice

Steps:

  • Preheat oven to 350.
  • Cut the acorn squash and scoop out the seeds and strings.
  • Put a little water in a baking pan; place the halves face down and bake for 1/2 hour.
  • Then, take it out and put the sliced apples in the middle (some will fall over the sides, it's okay); drizzle with canola oil and maple syrup, and sprinkle with pumpkin pie spice.
  • Bake for another 1/2 hour to 40 minutes (until the apples are soft and browning).
  • Put your acorn squash halves in individual plates; scoop up the stray apples and stray maple syrup and spoon over the squash.

1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 small acorn squash, halved and seeded
3/4 cup raisins
4 tablespoons butter
1/2 cup water

Steps:

  • In a small bowl, mix brown sugar, cinnamon and nutmeg; spoon into squash halves. Sprinkle with raisins. Top each with 1 tablespoon butter. Wrap each half individually in heavy-duty foil, sealing tightly., Pour water into a 5-qt. slow cooker. Place squash in slow cooker, cut side up (packets may be stacked).
