15-MINUTE MEDITERRANEAN PASTA
It doesn't get any easier than this Mediterranean-inspired pasta. With just a few simple pantry ingredients, a couple of fresh ingredients, and 15 minutes this easy dinner is ready to serve.

Steps:
- Bring a large pot of water to a boil. Add the spaghetti and cook it according to package directions.
- While the spaghetti is boiling, add the garlic and olive oil to a small pan. Heat the oil over medium-low heat and let the garlic gently cook in the oil, for about ten minutes. Adjust the heat, if needed, so the garlic doesn't brown too quickly. After ten minutes discard the garlic and turn off the heat.
- Once the spaghetti is cooked, drain it and return it to the pot. Add everything, except the feta cheese, to the pot with the spaghetti and toss it all to combine. Add 3/4 of the feta, reserve some for serving, and give it one more gentle toss. Serve right away with the extra feta on the side.

MEDITERRANEAN GARLIC HERB BEEF AND PASTA
This recipe comes from inspiration. I was asked to cook something for dinner and my mind pulled this together while in the store.I put my mind to work so I could make what I hoped would be a great Italian meal. My family loved it and I hope you and yours does too.

Steps:
- Cut beef tips into bit size pieces.
- Place in bowl and add 8oz of marinade.
- Mix well and place in refrigerator for 30 minute to an hour.
- After beef has marinaded,get a large skillet and add 2tbls of olive oil.
- Make sure skillet is as hot as possible.
- Add beef and cook until done.
- Saute onions and garlic.
- Then saute bell peppers and zucchini (saute only to the point it is softened but still crisp).
- Finally saute the mushrooms.
- Cut and remove seeds from tomatoes.
- Then dice tomatoes.
- Mix all ingredients into a large skillet and keep warm.
- Boil pasta until desired softness.
- Strain then put in a large bowl and toss with 3 tbls of olive oil.
- Then mix in the beef and vegetables and toss well,adding last 4oz of marinade as you toss ingredients together.

BEEF STROGANOFF WITH HERBY PASTA
If you usually serve beef stroganoff with rice, try it with pappardelle pasta instead - it works beautifully with the creamy sauce

- Freeze the beef for 45 mins before you begin, slice as thinly as you can, then season.
- In a large, non-stick frying pan, melt half the butter with half the oil. Increase the heat, then quickly sear the beef in batches until browned on both sides. Remove the meat and set aside. Repeat with the mushrooms, then set aside with the beef. Boil the pasta.
- Add the remaining butter and oil to the pan and soften the shallots for a few mins. Stir in the flour for 1 min, then gradually stir in the stock. Bubble for 5 mins until thickened, then stir in the mustard, purée, crème fraîche and seasoning. Bubble for 1 min more, then return the beef and mushrooms to the pan.
- Drain the pasta, toss with half the parsley, season, then serve with the creamy stroganoff, sprinkled with the remaining parsley.

- Put pasta on to cook, following package directions.
- While pasta is cooking, place the olive oil, herbs, lemon juice, water, salt & pepper and garlic in a bowl. Whisk together well.
- Drain pasta and place in large bowl or back in cooking pan.
- Add dressing over pasta, toss till combined.
- Add remaining ingredients and toss gently until well combined.
- Serve hot or at room temperature, and enjoy!

- Prepare the Eggplant. Place eggplant slices on a large tray. Sprinkle generously with salt and set aside for 20 minutes or so (the eggplant will sweat out any bitterness). Using a paper towel, pat the eggplant dry and wipe any excess salt.
- Broil the Eggplant. Spray or brush the eggplant generously with extra virgin olive oil. Place on top rack of heated oven to broil for 4-5 minutes or so, watching very carefully. The eggplant should "wilt" and brown. Remove from heat and set aside. (you will need to switch oven to bake later)
- Cook the pasta. Bring a large pot of water to a boil, season well with kosher salt. Cook the pasta to al l dante according to package instructions. This might take about 11 minutes or so. When ready, drain, reserving a little bit of the pasta cooking water.
- Prepare meat sauce. While the pasta is cooking, heat 2 tablespoons extra virgin olive oil in a large deeper pan. Cook the onions over medium-high heat until translucent, about 3 minutes, tossing regularly. Add the garlic and cook for another minute, again tossing regularly. Add the meat and spices, and season with Kosher salt and black pepper. Using a wooden spoon, break the meat up into smaller piece, continue to stir until the meat is fully cooked through and has browned (about 7 to 10 minutes). Add the canned crushed tomatoes and tomato sauce. Bring to a boil, then lower to simmer for 15 minutes or so. Carefully taste and adjust salt, if needed add more salt.
