MUSHROOM AND RED WINE STEAK SAUCE

Steps:
- Heat 2 tablespoons of the butter in large skillet over medium heat until melted. Add the red pepper and shallots and gently cook until the shallots soften, about 3 minutes. Add the mushrooms and season with salt and pepper. Cover and cook for 10 minutes, then take off the cover and cook until the mushrooms are golden brown, another 10 minutes. Add the thyme and garlic and cook until fragrant, then deglaze with the wine and cook until the alcohol scent dissipates, another 2 to 3 minutes. Add the remaining 2 tablespoons butter and cook until melted; season again. Serve over steak, pork chops or chicken.

Steps:
- In a heavy skillet, melt butter, add garlic and shallots and sauté until fragrant, about 2-3 minutes.
- Add mushrooms and cook, stirring frequently, over moderate heat for 5-7 minutes, until mushrooms are soft.
- Stir in wine and cook over high heat for 2-3 minutes more.
- Add basil and parsley and salt and pepper to taste. Heat through.

- Add the stock and simmer for 10-12 minutes, or until the liquid is reduced by half. Whisk in the remaining butter until the sauce becomes creamy. Stir in the tarragon leaves, adjust the seasoning and keep warm.
- Meanwhile, heat the oil in a medium-sized non-stick pan, season the steaks and cook according to your preference. Transfer to a warm plate and keep warm.
- Clean the pan and heat the olive or rapeseed oil. Add the potatoes and sauté for 3-4 minutes. Sprinkle over the cheese and serve with the steak and sauce.
