½ cup moong dal ((yellow mung lentils))
¼ cup onions ((1 small onion fine chopped))
½ cup tomatoes ((1 large tomato, deseeded & chopped))
1 tablespoon oil (or ghee)
½ teaspoon cumin seeds
1 teaspoon ginger ((peeled & fine chopped))
1 green chili ((slit or chopped, deseeded if required))
4 to 5 curry leaves ((or 1 bay leaf))
⅛ teaspoon turmeric
¼ teaspoon Kashmiri red chilli powder
½ teaspoon garam masala
1¾ to 2 cups water
1 teaspoon kasuri methi ( (dried fenugreek leaves, optional))
1 tablespoon ghee (or oil or butter)
2 to 3 garlic cloves (crushed )
1 dried red chilli
¼ teaspoon mustard seeds ((optional))
½ teaspoon cumin seeds
6 to 8 curry leaves ((optional))
⅛ teaspoon hing ((asafoetida, optional))
¼ teaspoon red chilli powder

Steps:

  • Add moong dal to a bowl and rinse it well and drain the water. Repeat rinsing a few times until the water runs clear. Let soak until you prepare the rest.
  • Chop onions, tomatoes, green chilies and ginger.

2 ½ cups moong dal (split husked mung beans)
2 ½ cups water
1 ½ teaspoons salt
½ teaspoon grated fresh ginger root
1 teaspoon diced jalapeno chile pepper
½ cup diced tomatoes
3 teaspoons lemon juice
½ teaspoon ground turmeric
2 teaspoons vegetable oil
1 teaspoon cumin seed
½ dried red chile pepper
1 pinch Asafoetida
2 cloves garlic, finely chopped
¼ cup chopped fresh cilantro

Steps:

  • Rinse the dal, checking for any debris; add to saucepan with 2 1/2 cups water. Allow to soak for 30 minutes.
  • Bring dal, water, and salt to a boil. Reduce heat to medium-low and cook until beans are very tender and mixture has thickened, 15 to 20 minutes. Add more water, if necessary, to prevent drying out. Stir in ginger, jalapeno pepper, tomato, lemon juice, and turmeric.
  • Heat oil in a small saucepan and add cumin seed and red chile pepper. When pepper is heated, add Asafoetida powder and garlic. Stir mixture into split peas and add cilantro; mix well.

1 cup masoor dal
3 cups water
4 tablespoons oil
1 teaspoon black mustard seeds
1/4 teaspoon hing
12 curry leaves
1 -2 roughly chopped tomato
2 minced serrano chilies
5 -6 ounces chopped fresh spinach
1/2 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
salt, as needed
2 teaspoons lemon juice
chopped cilantro, for garnish

Steps:

  • Rinse 1 cup masoor dal (the orange lentils), or split yellow moong dal or toor dal and place ithe lentils in a crockpot whose insides you have lightly oiled.
  • Add 3 cups water, put the crockpot on high and cook for two hours.
  • Stir, and check to see if more water is needed. Keep checking for water and stirring every 30 minutes until the lentils are cooked smooth.
  • When it is almost time to eat, in a large nonstick frying pan put the oil and mustard seeds. Heat over high heat until the mustard seeds have popped for about 10 seconds.
  • Quickly stir in the hing and curry leaves.
  • Add the tomatoes (optional) and serrano chilies. Stir-fry for about 4 minutes.
  • Add the spinach (this is optional). Stir-fry until the spinach is very tender, adding a little water if needed.
  • Stir in the turmeric, ground cumin and ground coriander.
  • Combine the spices and lentils either in the frying pan or the crockpot and mix until well blended. Check for water.
  • Add salt to taste and stir in the lemon juice. If desired, garnish with a little cilantro.
  • Variation: Instead of the spinach you can add 1 minced carrot that you have cooked in a bowl of water in the microwave for about 10 minutes, along with 1 large diced potato. When adding the cooked carrot and potato pieces to the fryiing pan, add 1/2 cup frozen green beans and 1/4 cup frozen peas. If you want to use fresh green beans, cook them in the microwave like you did the carrots and potato.

A quick and easy to make recipe, adapted from a recipe by international culinary celebrity Kurma Dasa from one of the cards in the 52 card set 'Quick Vegetarian recipes you can prepare in a hurry'. Kurma Dasa believes that "Life in the fast lane shouldn't mean life in the fast food lane'. The estimated times below for preparation and cooking do not include the one hour needed for soaking the split mung beans. On reading White Rose Child's review, I checked the source for this recipe and Kurma Dasa definitely specified 3 tablespoons of cumin. Several of the ingredients in this recipe are way too hot for my taste preferences. I often use cumin in recipes but nothing like 3 teaspoons let alone 3 tablespoons. I suggest that you use cumin - and any other ingredients - to suit your taste preferences.

1 cup split mung beans, soaked in water for 1 hour, rinsed and drained
7 cups water
1/2 teaspoon turmeric powder
1 cup carrot, diced
2 cups small cauliflower florets (or 1 cup of each of cauliflower florets and broccoli floret) or 2 cups small broccoli florets (or 1 cup of each of cauliflower florets and broccoli floret)
3 tablespoons ghee
3 tablespoons cumin seeds or 3 tablespoons cumin, to meet your taste preferences
1/2 teaspoon fennel seed
1 -2 chile, seeded and chopped
1 tablespoon fresh gingerroot, spoon, chopped
1/4 cup fresh coriander leaves, chopped
3 tablespoons fresh lemon juice
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Add the mung beans, water, turmeric and carrots to a heavy-based medium pan over a high heat and bring the water to the boil; reduce the heat and allow the contents of the pan to simmer, semi-covered, for 15 minutes, or until the mung beans start to break down; add the cauliflower florets to the pan and simmer for another 10 minutes.
  • Meanwhile, heat the ghee in a small pan over a medium heat; add the cumin and fennel seeds and gently cook them, stirring occasionally, until they have darkened a few shades; add the chilies and ginger and continue cooking until aromatic.
  • Pour the contents of the small pan into the simmering soup in the medium-sized pan; add the fresh coriander leaves, lemon juice, salt and pepper; serve hot in individual serving dishes with a simple rice dish or bread.

1 teaspoon ginger paste

2 tablespoons coriander, chopped
1 tablespoon cumin
3 tablespoons oil
2 1/2 cups whole wheat flour

Steps:

  • Wash dals very well.
  • Cook them with ginger garlic salt red chilies and turmeric powder till done.then leave it for cool.
  • now Mix dal and all ingredients and knead for 2 minutes. Make a big roll, cover, and let it stand for 15 minutes. Tapping a little water, knead dough again for 3 minutes. Make a big roll again.
  • Make 8 ball and roll . Spread little ghee all over and bring all edges together. Press to flatten. With the help of a little dry flour roll into thin round pancake. On a hot Tava, cook like a Parantha, that is browning with ghee on one side. Repeat procedure until finished.

150 g channa dal
100 g sabut mung dal (whole Mung)
750 ml water
1 tablespoon ginger, chopped
1 tablespoon garlic, crushed
green onion, chopped (you can substitute them with 1 medium onion if green onion is not available)
1/2 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon garam masala
2 tablespoons ghee
salt, to taste
chili powder, to taste

Steps:

  • Mix the dals and clean them.
  • Now wash the dals properly.
  • In a pressure cooker, put dal, water, ginger, garlic, turmeric, salt, chili powder and close.
  • Place cooker on maximum heat and bring it to full cooking pressure.
  • Now reduce the heat to medium and cook for 15 minutes.
  • Do not take the steam out.
  • Let it cool gradually.
  • Meanwhile, heat oil in a frying pan.
  • Fry cumin and turn off the heat.
  • Now add green onions and garam masala.
  • Since the oil is hot, onions will get cooked a little.
  • In case you are using normal onion, you will have to fry it a little.
  • Pour this mixture on dal and stir.
  • Give dal another boil and serve hot.
