It may seem simple, but it's my favorite way to have tuna. Seared fish steaks are a Cajun tradition.

1 ½ pounds fresh tuna steaks, 1 inch thick
2 tablespoons Cajun seasoning
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Generously coat tuna with Cajun seasoning.
  • Heat oil and butter in a large skillet over high heat. When oil is nearly smoking, place steaks in pan. Cook on one side for 3 to 4 minutes, or until blackened. Turn steaks, and cook for 3 to 4 minutes, or to desired doneness.

This delicious blackened tuna steak recipe is easy to make in half an hour. The mango avocado salsa provides a hint of sweet and a lot of texture.

2 tablespoons paprika
1 tablespoon dried oregano
1 tablespoon dried thyme
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper, or to taste
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1 scallion, thinly sliced into rounds
1 tablespoon freshly squeezed lime juice
1 ripe ataulfo (champagne) mango, cut into small chunks
1 ripe haas avocado, cut into small chunks
1/4 cup chopped fresh cilantro
Sea salt, to taste
Freshly ground black pepper, to taste
2 yellowfin tuna steaks (6-8 ounces each)
2 tablespoons blackening seasoning
Cooking spray

Steps:

  • To make the seasoning mix, whisk all ingredients together and store in an airtight container. The mix should keep well for at least three months.
  • To make the mango avocado salsa, mix all ingredients in a medium bowl. Taste and adjust the seasonings if desired.
  • To make the grilled blackened tuna steaks, heat a grill over high heat (or a grill pan on the stove over medium-high).
  • Coat the tuna steaks with the blackening seasoning on all sides, then spray the top and bottom with cooking spray.
  • Add the steaks to the hot grill and cook for 1-2 minutes per side, or until black grill marks have formed but the inside is still rare. Serve hot topped with mango avocado salsa.

2 tbsp lime juice

4 tuna steaks
1 Fresh mango, peeled, pitted, and chopped
1/4 cup red bell pepper, finely chopped
1/4 Spanish onion, finely chopped
1 Scallion, finely chopped
2 tbsp fresh cilantro, chopped
1 Jalapeno pepper, seeded and minced
2 tbsp lime juice
1 1/2 tsp olive oil
2 tbsp paprika

1 tsp ground black pepper
1 tsp dried thyme
1 tsp dried basil
1 tsp dried oregano
1 tbsp garlic powder
4 tbsp olive oil

Steps:

  • 1.) Whisk together the olive oil, lime juice, and garlic in a bowl. Rub the tuna steaks with the mixture. Place the steaks in a sealable container and chill in refrigerator 3 hours. 2.) Combine the mango, bell pepper, Spanish onion, scallion, cilantro, and jalapeno pepper in a bowl; stir. Add the lime juice and 1 1/2 tsp olive oil and toss to combine. chill in refrigerator 1 hour. 3.) Stir together the paprika, cayenne pepper, onion powder, salt, pepper, thyme, basil, oregano, and garlic powder in a bowl. Remove the tuna steaks from the refrigerator and gently rinse with water and then dip each side of each steak in the spice mixture to coat. 4.) Heat 2 tbsp olive oil in a large skillet over med heat. Gently lay the tuna steaks into the hot oil. Cook the tuna on one side for 3 minutes; remove to a plate. Pour the remaining 2 tsp olive oil into the skillet and let it get hot. Lay the tuna with the uncooked side down into the skillet and cook another 3 minutes; remove from heat immediately. 5.) Spoon about 1/2 cup of the mango salsa onto each of the 4 plates. Lay the tuna steaks atop the salsa and serve immediately.

2 tablespoons good olive oil, plus extra for searing
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled, minced fresh ginger
1 1/2 teaspoons minced garlic
2 ripe mangos, peeled, seeded, and small diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons minced fresh jalapeno pepper, to taste (1 pepper)
2 teaspoons minced fresh mint leaves
2 tuna steaks

Steps:

  • Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
  • Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
  • Serve the tuna on top of the mango salsa.

1 mango, peeled, pitted and diced (about 1 cup)
1 tablespoon finely diced red onion
1/8 cup diced red bell pepper
1/2 jalapeno, seeded and diced
1 lime, juice of

3 tablespoons fresh cilantro, chopped
1 lb fresh cod, cut into 4 servings

Steps:

  • Mix 1 tablespoon chili powder, 1 teaspoon paprika, 1/2 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon kosher salt, 1 teaspoon brown sugar and 1 tablespoon vegetable oil in a small bowl and stir to combine a paste.
  • Preheat oven to 400F degrees.
  • To prepare the fish, start by wiping the flesh with a dry paper towel to remove any excess moisture.
  • Rub the blackening paste on one side of the fish.
  • Pour a small amount of vegetable oil into a large saute pan and heat over medium-high heat. When pan is nice and hot, carefully place fish into preheated pan. Sear on both sides for 2-3 minutes each side. Remove fish from pan and place onto a cookie sheet lined with tinfoil. Place pan into preheated oven and bake for 10-15 minutes or until cod is cooked through.
  • Remove pan from oven and place fish on top of steamed rice or whatever you're serving. Top fish with salsa, a lime wedge and extra cilantro.
  • For Mango salsa, mix 1 mango, red onion, diced red bell pepper, 1/2 jalapeno, and juice of 1 lime, 3 tablespoons fresh cilantro, and salt to taste. Can be made a few hours ahead. Taste just before serving and adjust seasoning as needed.

2 tbsp smoked paprika
1 tsp dried oregano
½ tsp cayenne pepper (or just a pinch if you want less heat)
1 tbsp soft light brown sugar
2 limes , zested, 1 juiced and 1 cut into wedges
1 garlic clove , crushed
3 tbsp olive or rapeseed oil
3 peppers , cut into chunks
2 red onions , peeled and cut into wedges
2 x 400g cans black beans , drained
850g side of salmon , pin-boned and scaled
3 small or 2 large ripe avocados
1 small, firm ripe mango
1 red chilli , finely chopped
small bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.
  • Remove from the oven and give the veg and beans a good mix. Lay the salmon on top, skin-side down, then brush over the remaining spice paste. Bake for a further 25 mins, until the salmon is cooked through.
  • Meanwhile, for the salsa, halve, stone and finely chop the avocados and mango. Mix with the lime juice, chilli, coriander and some salt. Serve the salmon, veg and beans with the salsa and lime wedges for squeezing over.

Tuna, 6-10 oz. fresh as market provides. The thicker the better. I like Ahi tuna pre-packaged and slightly frozen.
Seasoning, Old Montreal works well but you can use what ever you'd like.
Olive Oil, 1 tb.
Mango, 1 ripe, peeled and diced
Onion, small diced
lime, juice of 1
garlic, 2 cloves crushed
cilantro, 2-3 tb.
jalapeno, 1 small dice.(The heat comes from the seeds and ribs, remove if you'd like)

Steps:

  • Dredge or cover Tuna with seasoning. Pre-heat heavy pan until very hot. add olive oil. Quickly sear tuna, 2 minutes per side. Remove and place in fridge to cool.( If the tuna is slightly frozen it will keep it from over cooking. Tuna should be served rare) Combine mango, lime, onion cilantro, garlic and jalapeno. Salt and fresh ground pepper to taste.(If mango is not ripe, saute along with onion until soft.) To serve, slice very thin and palce on plate, add mango salsa on side.

I am guessing on times as I haven't had a chance to make this yet since we still have several feet of snow on!!! (Doesn't include marinating time.) **Made this last night on the griddle pan on the stovetop. Loved it and can't wait to try this on the charcoal grill... Light, filling and flavorful!

1/4 cup olive oil
4 tablespoons lime juice, fresh squeezed
1/2 cup reduced sodium soy sauce

  • In a small bowl, toss remaining ingredients and chill.
  • Remove tuna steaks from the marinade. Cook on a hot grill for about 3-5 minutes per side so that the steaks remain pink in the center. Spoon the chilled salsa over each steak and garnish with a cilantro sprig if desired.
