1 lb macaroni noodles, cooked and drained
1 lb hamburger, browned and drained
1 (10 ounce) can cream of mushroom soup
10 ounces milk
1/2 teaspoon seasoning, blend
1 cup grated cheddar cheese

Steps:

  • Mix together soup, milk and seasoning in a large pot.
  • Stir in noodles and beef. Cook over medium high heat until heated through. During final minutes of cooking time, stir in grated cheese.

280 ml milk
150 g macaroni
30 g butter (or similar)
40 g plain flour
1 teaspoon paprika
1/2 teaspoon mustard powder
50 g grated cheddar cheese
50 g shallots, diced
50 g broccoli
50 g bacon, chopped
2 tomatoes, thinly sliced
20 g breadcrumbs (a handful)
20 g grated parmesan cheese

Steps:

  • Boil Macaroni and brocoli for 10 minutes.
  • Melt the butter in a pan, add shallots and bacon.
  • Stir in the flour, paprika and mustard powderto make a paste.
  • Gradually add the ,milk to the paste whilst stirring to make a smooth sauce. Once thickened slightly add Cheddar, remove from heat and stir.
  • Put macaroni and brocoli into an ovenproof dish, then add the cheese and bacon sauce, stir.
  • Arrange tomatoes slices to cover the macaroni cheese, then cover with breadcrumbs and parmesan.
  • Pop in the oven for 20 minutes at gas mark 7/ 425 Fahrenheit/220 Celsius.

MUM'S MACARONI CASSEROLE

This is a family favourite handed down from my Mother In Law and the first meal my husband made me when we began dating. It pretty much won me over, oh and the fact that he spilled the macaroni shells everywhere. :)

1 onion
2 celery ribs
1 red capsicum
750 g minced beef
1 pinch dried marjoram
2 (420 g) tins cream of chicken and mushroom soup (or one of each flavour)
500 g macaroni pasta shells
1 cube beef stock powder
salt and pepper
1 pinch dried parsley flakes

Steps:

  • Boil macaroni to packet instructions.
  • Chop all vegetables finely.
  • Fry the onion until opaque then add celery and capsicum.
  • Fry the mince in a separate pan until browned all over and drain.
  • Add mince to vegetables and then add both cans of soup and stir until all ingredients are combined.
  • Add the beef stock, marjoram, parsley and salt and pepper and stir through.
  • Simmer covered for 1/2 hour.
  • After 1/2 hour, alternately layer the macaroni shells and then your sauce, like you would a lasagna in an oven proof casserole dish with lid. Finish with a meat layer. If you wish you can add some grated cheese. Place the lid on and put into a moderately hot oven (180degrees) for 1/2 hours.
  • Serve with salad or hot crusty rolls or vegetables.

1 tablespoon butter
1/2 cup chopped onion
1 1/2 cups uncooked elbow macaroni
1 (19 ounce) can tomatoes
1 cup water
1 teaspoon salt
1/4 teaspoon pepper
buttered breadcrumbs (optional)

Steps:

  • Heat butter, saute onions until transparent.
  • Place in 2 quart casserole.
  • Add remaining ingredients.
  • Stir well, breaking the tomatoes into small pieces.
  • Bake at 350F for 65 mins or til macaroni is tender.
  • Top with buttered crumbs during last 10 mins of baking if desired.
  • Excellent meal with sausages and a salad.
