Time 40m

Number Of Ingredients 13

1/2 c milk
1/4 c water
2 Tbsp butter
2 c flour (up to 1/2 cup more, if needed)
2 Tbsp sugar
1 tsp salt
1 egg
1 pkg fast rise yeast
12 chunks mozzarella cheese
olive oil
melted butter
garlic salt
parmesan cheese

Steps:

  • 1. Combine milk, water and butter and heat to 115 - 125 degrees. Place 1 cup flour, sugar, salt, egg and dry yeast in large bowl.
  • 2. Add heated liquid and beat at medium speed for 2 minutes. Slowly stir in remaining 1 cup flour. (Dough will be sticky).**(See NOTE). Turn dough out onto a well-floured surface and knead until firm and smooth, about 10 minutes. Cover & let rest 10 minutes.
  • 3. Divide dough into 12 equal balls. Flatten each ball into a circle, approximately 3-4" across. Place a mozzarella chunk in the middle and close up, pinching dough together to seal. Place in a well-greased muffin pan or on cookie sheet at least 1" apart, and put in warm place until doubled in size, about 1/2 hour to 45 minutes.
  • 4. Brush tops with mixture of melted butter and olive oil. Sprinkle lightly with garlic salt. Sprinkle parmesan cheese on top.
  • 5. Preheat oven to 400. Bake for 10-15 minutes or until browned. **NOTE: The dough will be sticky and wet. Turn out onto well floured surface and use well floured hands to work with the dough, using extra flour as needed. Do not use too much, as you want to keep the dough soft. This creates a very light, fluffy roll.

  • In a large mixing bowl, combine yeast, milk, butter, sugar, salt and egg, and whisk until well combined and yeast is dissolved. The butter might still be a little lumpy in the mixture at this point.
  • Transfer the dough mixture onto a clean and lightly greased surface. The oil will help keep the dough from sticking to your hands initially. You can even lightly oil your hands too.
  • In a small mixing bowl, add cream cheese and mozzarella. Stir with a spatula until well combined.
  • Arrange the cheese filled dough balls on a large skillet or parchment-lined baking sheet. Leave 1/2-inch of space in between each dough ball.

  • In a large bowl, combine the yeast, warm water, and sugar and allow to proof for 10 minutes or until foamy. Add the salt, vegetable oil, and egg yolk and stir to combine. Add in 3 cups of the flour and mix well, then add enough remaining flour, half a cup at a time, to make a soft dough that barely sticks to your finger (I'm usually right around the 4 1/2 cup mark but you might need a little more or a little less). Knead the dough using a dough hook attachment on a standing mixer or by hand for 3-4 minutes, or until satiny and smooth. Shape the dough into a ball and place in a lightly oiled ball, cover lightly with plastic wrap, and allow to rise for 1 hour.
  • While the dough is rising, combine the softened butter and garlic bread seasoning in a small bowl and stir together. Set aside. Prepare a muffin pan by spraying each cup with cooking spray.
  • When the dough is fully risen, turn it out onto a lightly floured surface and roll into an 6x18-inch rectangle. Spread the garlic butter over the dough, all the way to the edges, and then sprinkle the mozzarella cheese evenly over the butter.
  • Working from the long edge, roll up the dough tightly just like you would with cinnamon rolls, pinching the edges when done. Using a long piece of thread or dental floss, cut the rolled dough into 12 equal slices by sliding the thread under the roll, pulling both ends of the string up and crossing them over each other, then pulling tight to create the slice. Place each sliced roll into the individual cups of a prepared muffin pan (mine often seem too big for each muffin cup but I just squish them in as best I can - the pan is just meant to help give some shape to the muffins instead of baking them with their sides touching like cinnamon rolls in a rectangular baking dish) and cover with a clean cloth. Preheat oven to 350 degrees. and allow the rolls to rise while the oven is heating.
