Egg Scramble image

A yummy mix of veggies and eggs, topped with cheese and hot sauce. You may also use Indian curry spice or garam masala instead of cayenne and omit the cheese if you like.

1 potato, peeled
1 small onion, chopped
2 cloves garlic, chopped
½ cup chopped fresh spinach
4 eggs, beaten
2 tomatoes, seeded and chopped
salt and pepper to taste
ground cayenne pepper to taste
1 dash hot pepper sauce
¼ cup shredded Cheddar cheese

Steps:

  • Bring a small pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • Saute the onion and garlic in a lightly oiled skillet over medium high heat. When onion is soft, stir in the spinach and cook until wilted, about 2 minutes.
  • Reduce heat to medium and pour in the eggs. Cook until the bottom has set, about 2 minutes. Stir in the potatoes and tomatoes; sprinkle on the salt, pepper, cayenne and hot sauce. Cook, stirring occasionally, until eggs have set. Sprinkle with grated cheese and serve warm.

1 baked potato
2 tablespoons green peppers, chopped
2 tablespoons onions, chopped
1/4 teaspoon garlic powder
1/4 teaspoon hot sauce
pepper
1 teaspoon margarine
2 eggs
2 egg whites
2 teaspoons water
1/4 cup lowfat mozzarella cheese, shredded
1 tomatoes, sliced

Steps:

  • Cube baked potato into bite-sized pieces.
  • Add green pepper, onion, garlic powder, hot sauce, and pepper to taste.
  • saute in margarine in a non-stick skillet for 2 minutes.
  • Beat gently into potato mixture.
  • Cook until firm.
  • Sprinkle with cheese and served with sliced tomatoes on the side.

1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread
8 eggs
1/4 cup OSCAR MAYER Real Bacon Recipe Pieces
1/8 tsp. pepper

Steps:

  • Beat cream cheese spread and eggs lightly with wire whisk until well blended. Pour into skillet sprayed with cooking spray.
  • Cook on medium-low heat until eggs begin to set, stirring occasionally.
  • Add bacon; continue cooking until eggs are set and cream cheese spread is melted, stirring occasionally. Sprinkle with pepper.

  • In a medium bowl, crack the eggs and whisk them together until well-beaten. Stir in the shredded cheese, fresh herbs, kosher salt, and plenty of fresh ground pepper. Or, complete Step 1 of the Tofu Scramble.
  • Heat the olive oil in a large skillet over medium high heat. When hot, add the onion and peppers. Cook 3 to 4 minutes until tender and just starting to brown, stirring occasionally. Reduce heat to low. Add a pinch of salt and the baby greens. Cook for 30 seconds until wilted. Remove and set aside.
  • Keep heat on low. Pour in the eggs. Cook for 20 to 30 seconds. When the eggs just start to set, use a flat spatula to scrape sections of eggs, gently stirring constantly until cooked but still soft, about 1 minute. Or, complete Step 2 of the Tofu Scramble.
