MAYONNAISE CAKE I
The addition of mayonnaise makes this easy chocolate cake recipe nice and moist.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
- Sift all-purpose flour, salt, baking soda, and cocoa together.
- Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
- Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

MEMORY LANE MAYONNAISE CAKE
A very moist white cake. Cake holds up well when sent through the mail. During WWII many of these were sent to our soldiers overseas. This recipe handed down from mother to daughter for generations. Original Author is unknown. There are no additional eggs needed in this recipe, the eggs come from the mayonnaise.

Steps:
- Grease a loaf or an Angel food cake pan.
- Mix sugar, mayonnaise and vanilla in large bowl.
- Sift together the flour and salt.
- Dissolve baking soda in hot water and pour over dates and nuts if using them. (If not using dates and nuts just add the plain baking soda and water mixture to the batter). Combine all and beat until well blended.
- Pour into prepared cake pan.
- Bake 1 hour at 350°F.
- NOTE: If you do not use the dates and nuts, cake will take less baking time.
- Depending on your oven, approximately 30 minutes less time.
- If you prefer a chocolate cake add 3 tbsp unsweetened cocoa powder to the flour before sifting.

DELICIOUSLY MOIST WHITE CAKE
This is a white cake i came up with by combining a couple of different recipe's. It reminds me a bit in its flavor of fresh pancakes! But just slightly!!! I use alot of vanilla in it, but you can substitute the vanilla for part vanilla part almond extract - part rum flavoring!! (yum!!!) or you can just put in less vanilla! I've done it all those ways, and each way comes out spectacular! When you take it out of the oven DON'T EAT IT RIGHT AWAY!!! It needs to sit until its cool and thats when it will have the best flavor. Hope you enjoy!!!

- Preheat oven to 350F (175C).
- Grease, line, grease again and flour 2 9 in by 2 in cake pans.
- In a small bowl combine the milk and vinegar. Allow to sit for a minute, and then add the baking soda.
- In a medium bowl lightly combine the egg whites, a quarter cup milk, and the vanilla (and any other flavorings you are using).
- In a mixing bowl, combine the dry ingredients and mix them together on low to blend.
- Add the butter/margarine and remaining 3/4 cup milk. Mix on low speed until dry ingredients are moistened. Increase to medium speed and beat for 2 minutes to aerate.
- Scrape down the sides and add a small amount of the egg mixture, beating for 20 seconds to incorporate. Continue in the same method twice more until all the egg mixture has been incorporated.
- Add the boiling water. Scrape down the sides of the bowl AND scrape the bottom of the bowl to loosen anything stuck to it. Beat on low to incorporate then increase to high for 30 seconds.
- Pour in to the prepared pans. The batter should fill half way in each.
- Bake for 35 minutes in the top half of the oven if possible.

ONE-BOWL CHOCOLATE-MAYONNAISE CAKE
Born out of a scarcity of fresh eggs, chocolate-mayonnaise cake is one of those Depression-era recipes that sounds a lot stranger than it tastes. After all, cakes rely on eggs and fat for tenderness and richness, and mayo is made of exactly those things, plus some salt and vinegar to give it tang. But you don't taste the tanginess of the mayo, and if you didn't tell anyone it was there, they would never know. Which is to say, don't let a lack of eggs or butter stop you from making cake. This cake is ridiculously good for the small amount of effort you put into it.

- To a large mixing bowl, add cocoa powder and chopped bittersweet chocolate (if using). Pour in boiling liquid, and let it sit for a few minutes, then whisk until smooth. The chocolate will have melted, if you used it, and the cocoa dissolved.
- Whisk in mayonnaise, salt, baking soda, 3/4 cup granulated sugar until smooth. Then whisk in a teaspoon of vanilla extract, if you have it (or a dash of Bourbon or brandy or just leave it out entirely). Finally, whisk in 1 1/2 cups flour (either all-purpose or cake flour), mixing vigorously to eliminate any lumps.
- Grease an 8- or 9-inch pan (square, round, star-shaped, anything is good). Pour the batter into the pan, and bake at 350 degrees for 22 to 40 minutes, until the top springs back when the center is lightly pressed. The deeper the pan, the longer it will take to bake through.
- Let cool, and sprinkle with confectioners' sugar to finish.

Moist and spicy. Requested by my Mom. She had me leave the nutmeg out as she could not eat that, so I heaped the measures of the other spices.
