1 tablespoon olive oil, plus more as needed
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced

Step 2 Coarsely chop the drained and cooled beans in a food processor, using only a couple of pulses. Or, break up the beans using your hands. Add the sauteed veggies to the chopped beans and then add the egg, seasonings and bread crumbs. Step 3 After forming the patties, saute them in canola oil until they're golden, about 3 minutes on each side over medium high heat. Add a slice of cheddar and finish the bean burger in a 400 degree oven for 2 or 3. minutes.

AMISH HALF MOON PIES OR PREACHING PIES

BLACK BEAN BURGER WITH AN EGG ON TOP

Black Bean Burger With an Egg on Top image

This is a vegetarian burger that does not mimic the texture or look of ground meat, but it isn't meant to. It's more like the most excellent refried beans. Though you can serve this well-seasoned patty like a traditional burger, on a bun with the usual condiments, it is at its best topped with a fried egg. Dusted with fine cornmeal, the burgers are pan-fried as the mixture is too soft to grill. After frying, they are baked until crisp. For convenience, they may be fried in advance and reheated.

Provided by David Tanis

Categories     burgers, grains and rice, vegetables, main course

Time 1h

Yield 6 servings

Number Of Ingredients 15

2 (15-ounce) cans black beans, or 4 cups cooked black beans, on the firm side
1 cup cooked brown rice, cooled
1 cup chopped cilantro, leaves and tender stems, plus sprigs for garnish
1 serrano chile, finely chopped
1 cup chopped scallions, both white and green parts
1/2 teaspoon chipotle chile powder or pimentón picante
2 teaspoons cumin seeds, toasted and ground, or 1 1/2 teaspoons ground cumin
Pinch of ground cayenne
Salt
1 large egg, beaten
2 tablespoons cornstarch dissolved in 1 tablespoon cold water
Neutral oil, such as grapeseed or safflower, for frying
Fine cornmeal, for coating patties
1 sunny-side up egg per person (optional, but recommended)
Toasted buns, lettuce leaves and condiments (optional)

Steps:

  • Put beans in a colander set over a bowl and drain well. (Reserve juices for another purpose or discard.) Pat the beans dry with paper towels, then mash them a bit with a wooden spoon or potato masher, but leave them chunky.
  • Transfer beans to a large bowl with the rice and toss together. Add chopped cilantro, serrano chile, scallions, chipotle powder, cumin and pinch of cayenne, to taste. Season generously with salt and mix well to incorporate.
  • Add the egg to the cornstarch solution and beat together, then drizzle it all over the bean mixture and mix well to distribute.
  • Form mixture into six thick patties of equal size. Each patty should weigh about 4 1/2 ounces. Place patties on a baking sheet and place in freezer for 10 minutes to firm. (For a firmer mixture, prepare a day in advance of cooking and refrigerate.)
  • Heat oven to 350 degrees. Add 1/2-inch oil to a heavy skillet over medium heat. Dust patties lightly on both sides with fine cornmeal. (It's OK if they are slightly frozen.) When oil is shimmering, slip the patties into the pan; work in batches to avoid crowding, or use two pans. Fry the burgers gently, about 3 minutes per side until nicely browned, adjusting heat as necessary. Transfer burgers to a baking sheet and let them crisp further for about 20 minutes in the oven (or let them cool and reheat later).
  • Meanwhile, fry the eggs, if using. Put a sunny-side-up egg on top of each warm burger, and serve on buns or warm plates with lettuce and condiments, if using. Garnish with cilantro sprigs.

ANASAZI BEAN VEGGIE BURGERS

Anasazi Bean Veggie Burgers image

Chef Brad Fosseen serves these delicious, hearty burgers at his Spokane restaurants and they are one of the most popular dishes on the menu! The burger is great as is or you can add additional seasonings (such as chili powder or curry) in the 4th step. When sauteing the burgers, start with a cold pan; it gives them a nice crust. At the restaurant, the chef sautees the burger for 2-3 minutes, flips it, adds a cheese slice, and then finishes it in a 400-degree oven for a couple more minutes. These can also be baked. This recipe makes 4 very large burgers or 6 medium size burgers.

Categories     Lunch/Snacks

Time 1h25m

Yield 6 burgers

Number Of Ingredients 11

1 cup dried anasazi beans (can also use canned beans) or 1 cup dried pinto bean, no soaking necessary (can also use canned beans)
1 tablespoon olive oil, plus more as needed
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced
1/4 cup carrot, diced
1 teaspoon cumin
1/2 teaspoon cayenne pepper
salt and pepper
1 egg
1 cup dried breadcrumbs, approximately

Steps:

  • Cook the beans in water (with a pinch of salt) for approximately 1 hour, until soft but not mushy. (Pinto beans will take about 20 minutes longer.) Drain (but don't rinse) and cool.
  • Heat 1 tablespoon olive oil in a frying pan. Saute the onion, bell peppers and carrot until soft, about 10 minutes. Cool.
  • Process the beans in a food processor until roughly chopped (only a couple of pulses). Remove the beans and repeat that step for the vegetables.
  • Combine beans and vegetables in a large mixing bowl, season with cumin, cayenne pepper and salt and pepper to taste. Add the egg and then work the bread crumbs into the bean mixture, starting with small amounts and gradually adding more. It should hold together and have a texture similar to pie dough. If the mixture seems a little dry, add up to 1 tablespoon additional olive oil.
  • Form patties. Starting with a cold pan, saute with 1 tablespoon olive oil until golden, approximately 3 minutes on each side. Add a slice of cheddar and serve with mayonnaise.

WHITE BEAN BURGERS

White Bean Burgers image

These have a delicate texture and a wonderful savory taste. They're a little tricky to turn, as they can fall apart. Don't make them too thick and use an offset spatula, and it will be easier for you. They should be cooked on a flat griddle or pan; don't try to grill them on a barbecue.

Provided by Martha Rose Shulman

Categories     dinner, easy, weekday, burgers, main course

Time 2h30m

Yield 6 patties

Number Of Ingredients 13

2 cans white beans, drained and rinsed
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
Salt to taste
2 to 3 large garlic cloves (to taste), green shoots removed, minced
2/3 cup finely grated carrot
3 tablespoons freshly squeezed lemon juice
1/4 cup finely chopped parsley
2 teaspoons minced fresh sage or thyme
1/2 cup fresh bread crumbs
1 egg, beaten
Freshly ground pepper to taste
Whole grain hamburger buns and the condiments of your choice

Steps:

  • Heat 1 tablespoon of the olive oil in a medium-size skillet and add the onion. Cook, stirring, until tender, about 5 minutes. Add a pinch of salt, the garlic and the grated carrot, and continue to cook for another minute or two, until fragrant and the carrot has softened slightly. Remove from the heat.
  • In a food processor fitted with the steel blade, puree the beans with the lemon juice. Transfer to a bowl and stir in the onion mixture, the parsley, sage or thyme, the bread crumbs and the egg. Season to taste. Shape into patties, ½- to ¾-inch thick. Set on a parchment-covered baking sheet and cover with plastic wrap. Refrigerate for 1 to 2 hours.
  • Heat the remaining oil in a large, heavy skillet or on a griddle over medium heat and brown the patties for 4 minutes on each side, being very careful when you turn them over. An offset spatula works well for this. Serve on whole grain buns, with the condiments of your choice.
