EASY BATTER FRUIT COBBLER



Easy Batter Fruit Cobbler image

Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

4 tablespoons butter
¾ cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
  • Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
  • Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

1 pint blueberries
1 pint raspberries
1 pint blackberries
1 pint strawberries, hulled and sliced in half
1/2 cup granulated sugar, plus more, for dusting
Pinch cinnamon
2 tablespoons cornstarch
1/2 lemon, juiced
1 recipe Blueberry Scone Dough, recipe follows
Melted butter
2 cups unbleached flour, plus more for rolling berries
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
1/4 cup unsalted butter, chilled and cut in chunks
3/4 cup buttermilk or cream
1 egg
1 pint fresh blueberries

Steps:

  • Preheat oven to 400 degrees F. In a mixing bowl, combine berries with sugar, cinnamon, cornstarch and lemon juice. Stir gently to combine. Spread berry mixture out on a 10-inch tart or gratin dish. Dollop spoonfuls of scone dough evenly over the top of the fruit; leave a border around the edge of the dish for spreading. Drizzle the surface with melted butter and dust with sugar. Set on a cookie sheet and bake for 25 to 35 minutes until the top is golden brown and the fruit juices bubbling.
  • Cool for 15 minutes before serving. Serve with heavy cream, whipped cream or vanilla ice cream.
  • In a large bowl, sift together flour, baking powder, salt and sugar; mix thoroughly. Cut in butter using 2 forks or a pastry blender. The butter pieces should be coated with flour and resemble crumbs.
  • In another bowl, mix buttermilk and egg together, and then add to the flour mixture. Mix just to incorporate, do no overwork the dough.
  • Roll blueberries in flour to coat, this will help prevent the fruit from sinking to the bottom of the scone when baked. Fold the blueberries into batter, being careful not to bruise.

A few leftover blueberries, strawberries and a peach from other dishes I've made this past week was just the perfect amount of fruit for a cobbler. I added a little orange zest to the batter and tossed some cubed cream cheese in with the fruit. It was an amazing dessert! Hope you enjoy!

4 c fresh fruit (i used blueberries, strawberries and peaches)
2 Tbsp sugar
1/2 c butter
1 1/2 c self-rising flour
1 c sugar
1/2 c brown sugar
pinch salt
1 tsp orange zest, (optional)
1 1/2 c milk
1 tsp vanilla extract
3 oz cream cheese, cubed (optional)
cinnamon sugar

Steps:

  • 1. Preheat oven to 350 degrees. Melt butter in a 9 x 13-inch pan as oven preheats being careful to not burn your butter. Once melted remove pan from oven.
  • 2. Clean and cut up fruit, sprinkle with 2 tbsp sugar and gently toss; set aside.
  • 3. In a medium mixing bowl, whisk together the flour, sugar, salt and orange zest. Add milk and vanilla; whisk until combined and no lumps.
  • 4. Pour batter into pan with melted butter; top with fruit and cream cheese. Sprinkle cinnamon sugar on top.
  • 5. Bake at 350 degrees for 40 to 45 minutes.

This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

1/2 cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
  • Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
  • Serve hot with ice cream if you wish.
  • I put 8-10 on the servings it depends on the size of the servings.

Dot with butter. , In another bowl, combine the flour, cornmeal, baking powder, cinnamon, salt and remaining sugar. Stir in milk and oil just until moistened. Spread over fruit mixture. , Bake at 375° for 35-40 minutes or until bubbly and top is golden brown. Serve warm.
