Ingredients

2 vine-ripe tomatoes, seeds removed and chopped
1 head iceberg lettuce, chopped
1 romaine heart, chopped
One 15-ounce can chickpeas, rinsed and drained
5 ounces dry salami, julienned
1 cup grated fresh mozzarella
1/3 cup olive oil
1/3 cup freshly grated Parmesan
1/3 cup white wine vinegar
1 teaspoon dry mustard
Kosher salt and freshly ground black pepper

Steps:

Add the tomatoes, iceberg, romaine, chickpeas, salami and mozzarella to a large salad bowl.
Add the olive oil, Parmesan, vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a measuring cup or mason jar. Whisk to combine.
Add the dressing to the salad and toss to combine. Serve immediately.

FROZEN ICEBERG SALAD

1 large head iceberg lettuce, outer layer removed, end trimmed
2 tablespoons dijon mustard
2 tablespoons champagne vinegar
Kosher salt
1/2 cup extra-virgin olive oil
3 tablespoons chopped fresh tarragon

Steps:

Place the head of lettuce on a flat surface and cut in half, then cut each half into 2 wedges. Transfer the lettuce to a small tray and put it in the freezer until just before serving. (It can remain in there for up to 2 hours, if necessary.)
Whisk the mustard, vinegar and a pinch of salt in a medium bowl. Slowly whisk in the olive oil and add the tarragon. Taste for seasoning.
When ready to serve, transfer the lettuce to a platter and drizzle with the dressing. Serve immediately.

My Mom loves this and every time I make it I think of her. You basically take Iceberg lettuce but you can use Romaine, cucumber, tomatoes, Hebrew National Salami chunks, and she always used Wishbone Italian dressing and oregano on top. I sometimes use bagged salad which has shredded carrots and red cabbage too. I like to add hard boiled egg slices. There's a lot you can do with add ins. Enjoy!

1 head iceberg lettuce, torn into pieces
2 tomatoes, cut into wedges
1 small cucumber, peeled and sliced
1 cup kosher salami, cubed
Italian dressing, to taste
oregano, to taste
1 hard-boiled egg, sliced (optional)

Steps:

Gently toss lettuce, tomatoes, salami and cucuber in a bowl.
Put into 4 salad bowls and add dressing, to taste and sprinkle with oregano, to taste. Add hard boiled egg slices if you like.

6 ounces crumbled blue cheese, at room temperature
1/3 cup vegetable oil
2/3 cup mayonnaise
2 tablespoons white wine vinegar
1 tablespoon hot sauce, such as Crystal or Louisiana, plus more if desired
Kosher salt and freshly cracked black pepper
1 head iceberg lettuce, cut into quarters through the equator (circular slices)
1 cup cherry tomatoes, cut into quarters
6 slices cooked bacon, crumbled or chopped into pieces
1/4 cup thinly sliced chives

Steps:

For the dressing: In a medium bowl, whisk together the blue cheese, oil, mayonnaise, vinegar and hot sauce. Season with salt and pepper and add more hot sauce if preferred. Set aside.
For the salad: Divide the lettuce rounds among 4 plates. Pour 1/2 cup of the dressing over each. Top each with one-quarter of the tomatoes and bacon. Sprinkle some chives on top. Serve immediately.

1 red bell pepper, chopped

One 6-ounce jar marinated artichoke hearts, drained and chopped
1/2 medium red onion, finely minced
1 cup cherry tomatoes, halved
8 whole pepperoncini

1 garlic clove, minced

Steps:

Mix all the salad ingredients in a large bowl.

Steps:

Whisk oil, vinegar, mayonnaise, sugar, oregano, and garlic in a small bowl. Season with salt and pepper.
Cut lettuce in half through stem end. Tear apart into large pieces. Arrange on a platter and scatter onion, provolone, mozzarella, and peperoncini over, nestling in among leaves. Drizzle with dressing to coat to your liking (you'll probably have some extra) and top with more black pepper.
