OLD FASHIONED PRUNE CAKE



Old Fashioned Prune Cake image

This is a very moist and rich cake. A little troublesome, but well worth it!

1 cup vegetable oil
3 eggs
1 ½ cups white sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup buttermilk
1 ¼ teaspoons vanilla extract
1 cup prunes, pitted and chopped
1 ½ cups chopped pecans
¾ cup butter
¾ cup buttermilk
1 ½ teaspoons dark corn syrup
1 ½ cups white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt or tube pan.
  • In a medium bowl, mix together flour, soda, salt, allspice, cinnamon and nutmeg. Set aside.
  • In a large bowl, combine oil, eggs and 1 1/2 cup sugar. Beat 2 minutes at medium speed.
  • Add flour mixture, alternating with 1 cup buttermilk, starting and ending with dry ingredients. beat well after each addition. Stir in prunes, pecans and 1 1/4 teaspoon vanilla.
  • Pour into greased and floured bundt or tube pan and bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick comes out clean when inserted in the center.
  • Make large, deep holes in hot cake and pour topping in holes and on top of cake a little at a time, giving it time to soak in.
  • For the topping: In saucepan, over medium heat, cook butter, 3/4 cup buttermilk, corn syrup and 1 1/2 cup sugar until sugar and butter melt. Remove from heat and add 2 teaspoons vanilla and stir.

Every fall, we looked forward to Mom making this family recipe with fresh Italian prunes. Canned prunes can also be used or any other canned fruit. It isn't a very sweet cake, but the powdered sugar drizzle adds just the right touch. Enjoy!

1/2 cup butter
1/2 cup sugar
1 cup milk
1 egg
2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
1 dash salt
6 -8 italian prunes, split
2/3 cup sugar
2/3 cup flour
6 tablespoons butter
powdered sugar, drizzle

Steps:

  • Melt butter. Mix in sugar, milk, egg, flour, baking powder, vanilla and salt.
  • Grease 9x13 cookie sheet and spread batter around pan.
  • Lay halved prunes on top of batter with small amount of juice, if using canned prunes.
  • Combine streusel ingredients until blended and crumbly. Sprinkle over top.
  • Bake 325°F for 25 to 30 minutes.
  • While still warm, mix powdered sugar, vanilla and milk until you have a thin frosting. Drizzle around the pan in the amount that you prefer.
  • Cut into squares.

This recipe was on a 3x5 card in Mom's grey cookbook. My memory recalls a wonderfully moist and delicious cake.

1 cup sugar
2/3 cup shortening
2/3 cup milk or 2/3 cup prune juice
1 1/2 cups flour
1 pinch salt
2 eggs
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon baking soda
1 cup prune, chopped

Steps:

  • mix all ingredients togeather like regular cake. Grease and flour lightly bundt cake pan and pour cake mix inches.
  • Bale in 375 degree oven for 25 minutes.

1 cup canola oil
2 cups sugar

1 cup buttermilk
1 teaspoon nutmeg
1 teaspoon salt
1 teaspoon cinnamon

1 cup prune, cooked and chopped
1/2 cup sugar
1/2 cup buttermilk
1/4 cup butter
1/2 teaspoon baking soda

Steps:

  • Mix ingredients all together.
  • Pour into 13 x 9-inch greased pan.
  • Bake at 350°F for approximately 40 - 45 minutes. Check very carefully. My mom didn't put down the time in the oven.
  • While cake is cooking, put ingredients for topping in pan. Bring to a boil.
  • While cake is still hot, pierce the top with a fork.
  • Spoon topping over cake until it is absorbed.
