FORGET-ME-NOTS (FORGOTTEN COOKIES)
I've always referred to them as Forget-Me-Nots. Great for the holiday table, cookie swap or as a gift.

Steps:
- Preheat oven to 350 degrees. Line baking sheet with foil or parchment paper. Do not grease.
- Beat egg whites until stiff peaks form.
- Stir together salt and sugar then gradually beat into the beaten whites.
- Stir in vanilla and fold in the chocolate chips.
- Drop by mounded teaspoonfuls on the lined baking sheet and place in preheated oven. Immediately turn oven off. Let cookies dry over night. Resist peaking so as not to let out the heat.

- Heat oven to 350. Mix all ingredients together. Batter will be lumpy. Spoon into lightly greased muffin tins. Fill each one 3/4 full. bake 25 minutes till edges are brown; dont let the tops get too brown. Serve hot, no need to add butter. you will see.

FORGOTTEN COOKIES II
Easy to make. Just mix them and put in the oven and forget them for 5 to 6 hours. I do them at night and leave them all night in the oven.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper or aluminum foil.
- In a large glass or metal mixing bowl, beat egg whites and salt until foamy. Gradually add sugar, continuing to beat until whites form stiff peaks. Fold in the vanilla and chocolate chips. Add peanuts if desired. Spoon onto the prepared cookie sheets.
- Place the cookies into the preheated oven, shut the door and turn off the oven immediately. Let cookies sit in the turned off oven for 5 to 6 hours or overnight.

MOM'S HOMEMADE BISCUITS
My mom made these when I was growing up by just throwing everything into a bowl with no measuring. We liked them so much that we all needed the recipe so after several tries this is her recipe and they are great. Very delicate biscuit, do not roll with rolling pin just flour board and use hands to press dough out about 1 inch thick and then cut .

Steps:
- Mix together flour, sugar and salt. Add baking powder and then cut in shortening with pastry blender until thoroughly incorporated.
- Add milk and mix only until a soft dough forms. Dough may be slightly sticky but that is normal.
- Generously flour counter or board and transfer dough on top dusting with a small amount of flour if dough is sticky. Pat dough out with hands till about 1 inch thick and cut with biscuit cutter or large glass dipped in flour. Place on baking sheet about 1 1/2 inch apart. Bake 425 degrees for 12 to 15 minutes or until golden brown.
- Note: Do not roll out with rolling pin as that will make for harder biscuits.

MOM'S BISCUITS
These biscuits are really quick and easy. A great biscuit to whip-up when you have company for breakfast (they will love waking up to the smell of these!). I can understand why Anna's child like these ... I like the crunchy too.

- 1. Add flour to large bowl, add in salt and baking power, add shortening with fork mix crumble up shortening in flour. Add milk or buttermilk mix well until it feels like elastic to fingers.
- 2. In a cake pan spoon dough in bake in per heated oven 400 degrees for 20 min.or golden brown. Serve warm.
