This apricot nectar cake combines a lemon cake mix, lemon Jello, and sweet apricot nectar to make a delectable and cheery dessert!

For the Cake:
15.25-oz box lemon cake mix
3-oz package lemon Jello
1 cup apricot nectar
1/2 cup vegetable oil
4 eggs
For the Glaze:
1 cup powdered sugar
2 TBSP lemon juice

Steps:

  • Preheat oven to 325F and grease a bundt pan well.
  • In the bowl of a stand mixer (or in a mixing bowl with an electric mixer), combine lemon cake mix, lemon gelatin, apricot nectar, vegetable oil, and eggs.
  • Mix on low speed just until ingredients are combined, then increase speed to high and mix for two minutes.
  • Pour batter into prepared bundt pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes, then carefully loosen from the sides of the pan by sliding a knife around the edges. Invert cake onto a serving plate.
  • While the cake is still warm, whisk together confectioner's sugar and lemon juice until smooth. Brush glaze onto warm cake. The glaze will harden into a satiny finish as the cake cools.

Credits to Linda Griffith and Kate Parker. This is a hybridization of their Apricot Nectar cake recipes that I found on Just a Pinch. Both are delicious, but this adaptation is the BEST!

1 box duncan hines "lemon supreme" cake mix
4 large eggs
3/4 c vegetable oil
1 pkg lemon gelatin
1 tsp lemon extract
3/4 c apricot nectar
HOT GLAZE
3 Tbsp butter
2 1/2 c confectioners' sugar
juice and zest of 2 lemons
ICING
2-3 c confectioners' sugar
2-3 tsp apricot nectar

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour tube or Bundt pan. Set aside. Mix cake mix, jello, nectar and oil. Add eggs, one at a time, beating well after each/stir in lemon extract until well blended. Bake 30 - 40 minutes until top springs back when lightly touched.
  • 2. Hot Glaze: Melt butter over medium heat. Add in confectioner's sugar, lemon juice and lemon zest. Cook, while stirring constantly until slightly thickened. With bamboo skewer or chopstick, poke holes in top of cake while still in pan. Strain glaze through tea strainer, spread candied zest on baking parchment or non stick foil to cool and dry slightly. Reserve for garnish. Pour glaze over over cake while both are still hot. Let glaze soak in for minimum of 1/2 to 1 hour. Turn out onto cake plate. Cool completely.
  • 3. Icing: Mix apricot nectar with 2 cups powdered sugar until it is thick, but slightly pour-able. Drizzle over top of cake and allow to drip down sides. Garnish with reserved candied lemon zest.

This was one of my mothero-in-law Goldie's signature cakes. I haven't made this in years, but found the recipe tucked into one of my cookbooks so thought I would give it a whirl and see if it tasted as good as my memory thinks.

1 box lemon flavored cake mix
1/2 c granulated sugar
1 c apricot nectar
1/3 c cooking oil
4 large eggs
GLAZE INGREDIENTS
2 Tbsp lemon juice
1 c confectioners (powdered) sugar
1/4 c apricot nectar

Steps:

  • 1. Preheat oven to 325º Butter and flour bundt or tube pan and set aside
  • 2. With electric mixer, beat together cake mix, sugar, oil and 1 cup apricot nectar in large bowl. Continue to mix with electric mixer, adding eggs one at a time, beating well after each addition.
  • 3. Pour into prepared bundt or tube pan and spread out evenly. Bake in 325º preheated oven for 1 hour. Test cake for doneness by inserting a toothpick into the thickest part. If it comes out clean, the cake is done. Let cool for about 5 minutes in pan, then gently run thin knife or spatula around edges and turn out onto serving plate
  • 4. While cake is still warm, drizzle glaze over it. To make glaze, Whisk together confectioners sugar, lemon juice and 1/4 cup apricot nectar until well blended. Optional you can punch small holes in cake to let the glaze penetrate down into the cake, but I never do that.

½ cup vegetable oil
1 cup apricot nectar
4 eggs
1 cup confectioners' sugar
2 tablespoons lemon juice

Steps:

  • Grease and flour a 10 inch tube pan. Preheat oven to 325 degrees F (165 degrees C).
  • Combine cake mix with sugar, cooking oil, and apricot nectar. Beat for two minutes with mixer. Add eggs one at a time, beating for 30 seconds after each addition. Pour batter into pan.
  • Bake for 50 to 60 minutes. Cool for 10 minutes in the pan before turning out onto a plate.
  • In a small bowl, mix lemon juice with confectioners' sugar until you reach desired consistency. Drizzle glaze over sides of warm cake.

1/2 cup sugar
3/4 cup vegetable oil
1 (12 1/2 ounce) can apricot nectar

Steps:

  • Mix all ingredients with spoon until smooth.
  • Bake at 350 degrees for 1 hour in a greased Bundt pan.
  • Make a glaze with ReaLemon juice and powdered sugar and pour on cake while hot.
  • NOTE: No specific amounts were given to me for the glaze- I usually start with about 1°C.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 10 inch tube or Bundt pan.
  • Mix the cake mix, eggs, vegetable oil, and apricot nectar together.
  • Dissolve the gelatin in the hot water and add to cake batter. Mix well and pour the batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes. Invert cake onto a plate and cool for several minutes. Pour glaze over cake while it is still warm.
  • To Make Glaze: Combine the confectioner's sugar and the lemon juice. Use immediately to pour over still warm cake.

1 box lemon cake mix
1 cup apricot nectar
1/2 cup sugar
2/3 cup oil
4 eggs
1 cup powdered sugar
lemon juice

Steps:

  • Combine lemon cake mix, apricot nectar, sugar and oil in large bowl.
  • Beat for 3 minutes.
  • Add 1 egg at a time, mix after each one.
  • Pour mixture into greased and floured pan.
  • (you can use either a bundt or rectangle 13" x 9" pan) Bake at 325* for 1 hour or until done.
  • (check a few times toward the end, don't want it to dry out.) Cool right side up 5 minutes then remove from bundt pan or leave in rectangle pan.
  • Mix 1 cup powdered sugar and enough lemon juice to make a glaze.
  • Pour over still warm cake to make a glaze over top and let it drizzle down the sides.

1 (18 1/4 ounce) package yellow cake mix
1 (3 ounce) package lemon gelatin
3/4 cup canned apricot nectar
3/4 cup vegetable oil
1 teaspoon fresh grated lemon zest
4 large eggs
3/4 cup confectioners' sugar, sifted
2 tablespoons fresh lemon juice
4 tablespoons canned apricot nectar

Steps:

  • Preheat oven to 325. Lightly mist a 12 cup Bundt pan with vegetable oil spray, dust with flour. Shake out excess flour.
  • Place cake mix, gelatin, apricot nectar, oil, lemon zest, and eggs in mixing bowl. Blend with mixer on low speed for 1 minute. Stop machine and scrape down sides of bowl. Increase mixer speed to medium and beat 2 to 3 minutes more, scraping down sides of bowl again, if needed. The batter should look thick and smooth. Pour batter into prepared pan. Place pan in oven.
  • Bake cake until it is light brown and springs back when lightly pressed with your finger, 40-42 minutes. Remove pan from oven and place on wire rack to cool for 10 minutes.
  • Prepare glaze. Combine confectioners sugar, lemon juice, and apricot nectar in small saucepan and heat over medium-low heat, stirring, until sugar has dissolved, 3 to 4 minutes.
  • Run a long, sharp knife around the edge of the cake and invert it onto a platter. While the cake is still warm, poke holes in the top with a toothpick or wooden skewer. Spoon glaze onto cake so that it seeps down into the holes. Let the cake cool before slicing.
