Mole sauces have layers of rich flavor with mild to moderate heat. - In a large saucepan, saute 1 cup onion in oil until tender. Reduce heat to low. Add the garlic, salt, oregano and cumin; cover and cook for 10 minutes. Stir in chili powder, spicy chocolate cinnamon sugar and flour until blended. Gradually stir in broth. Bring to a boil. Cook until mixture is reduced to 3 cups, about 35 minutes. , In a large bowl, combine chicken and 1/2 cup sauce. Spread 1/2 cup sauce into a greased 13x9-in. baking dish. Layer with half of the tortillas, chicken mixture, remaining onion and olives; top with 1 cup sauce and 2 cups cheese. Repeat layers., Cover and bake at 375° for 30 minutes. Uncover; bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.

Steps:
- Combine first nine ingredients through cloves in blender and mix until smooth, adding the oil and chicken broth gradually.
- Heat another tablespoon of olive oil in a skillet and add spice paste (from blender), cooking on medium heat until fragrant.
- Add tomatoes, sauce, peppers, garlic, broth and seasonings and simmer for five minutes until thickened and creamy.
- Serve over chicken or fish.

- Heat a large, heavy skillet over medium heat; add pumpkinseeds. Cook 3 minutes or until lightly browned, shaking pan frequently. Remove from heat; cool completely.
- Place pumpkinseeds, salt, cumin, cinnamon, and black pepper in a spice or coffee grinder; process until finely ground.
- Place spice mixture in a small bowl; stir in 1/2 cup broth. Set aside.
- Heat skillet over medium-high heat; add tomatillos, chile, garlic, and onion. Cook 5 minutes or until browned, turning frequently.
- Remove from heat; cool. Quarter tomatillos. Trim root from onion half; discard root.
- Place tomatillos, chile, garlic, and onion in a blender or food processor; process until coarsely chopped.
- Add 1/4 cup broth, cilantro, and lettuce; process until smooth.
- Prepare grill. Heat 1/2 teaspoon oil in skillet over medium heat. Add pureed tomatillo mixture; reduce heat to low, and cook 5 minutes or until slightly thick, stirring occasionally.
- Stir in spice mixture and 1/4 cup broth; simmer 10 minutes, stirring frequently. Add 1/4 cup broth, stirring with a whisk. Remove from heat; keep warm.
- Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or rolling pin. Place chicken on grill rack coated with cooking spray; grill 3 minutes on each side or until done. Top chicken with mole. Serve with rice.

- Cook the chicken for 8 mins in microwave.
- Chop cooked chicken. Set aside.
- Warm cream cheese until soft;.
- add cooked spinach.
- Mix well with cream cheese.
- Add garlic powder, carrots, and dash of pepper and salt.
- Add chicken, mix well, lay in baking dish,.
- smooth out.
- Place dough on top of mixture. make sure that dough covers whole dish.
- Pinch seams together.
- Follow baking instructions on crescent roll package.

- Poach the chicken breasts 15-20 minutes in a saucepan with enough water to cover chicken.
- Allow the chicken breasts to cool.
- Cut chicken into bite size pieces, and set aside.
- Melt margarine in a large pan, and saute onion.
- Add spinach to the pan and cover allowing spinach to steam in the pan 5-10 minutes.
- Add the chilies, sour cream, chicken, cumin and garlic powder.
- Mix thoroughly.
- Line a greased casserole dish with a layer of tortillas, cover tortillas with a layer of chicken filling followed by a layer of cheddar cheese and Monterey Jack chees.
- Continue layering in this manner ending with a layer of tortillas covered by a layer of cheese.
- Bake in a preheated 350 degree oven for 30 minutes.
