APPLESAUCE BARS

- In a large bowl, beat the sugar, applesauce and oil until well blended. In a small bowl, combine the flour, baking powder, cinnamon, salt, baking soda, nutmeg and cloves; gradually beat into sugar mixture until blended. Stir in raisins. , Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. , In a small bowl, beat the confectioners' sugar, butter, vanilla and enough milk to achieve a glaze consistency. Spread over warm bars. Cool on a wire rack. Cut into bars.

MOIST APPLESAUCE COCOA BARS
These bars are so moist and yummy. I have even added chopped apples to the batter... Note: this makes a large amount of bars, but they freeze well...great for potlucks too.

Steps:
- Set oven to 350 degrees.
- Grease a 15 x 10-inch jelly roll pan.
- In a bowl, cream the 1-1/2 cups sugar with the 1/2 cup butter; beat until fluffy.
- Add in the eggs; beat well.
- Sift together the cocoa, baking soda, cinnamon and the flour.
- Add to the butter mixture, alternately with the applesauce; mix well.
- Transfer the mixture to the prepared baking pan.
- In a small bowl, combine the 2 Tbsp sugar, 1 cup chocolate chips and 1 cup chopped nuts.
- Sprinkle over the batter in the pan.
- Bake for 30 minutes (do not over bake!) Cut into bars.

Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
- Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
- In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

- grease a 15x10 baking sheet.

CHOCOLATE-APPLESAUCE-FLAX SEED BARS
This is a variation of a recipe from "Desserts for Diabetics" by Mabel Cavaiani. This is very easy to make, and they stay moist for a couple days (they never last longer around here!) DO NOT try using cold applesauce--doesn't work! You can make these non-diabetic friendly by using all sugar. NOTE: The flax seed is whole seed, not ground.

- Preheat oven to 375°F.
- Spray a 9x13-inch baking pan with cooking spray.
- Place flour, sugar, Splenda, flax seeds, cocoa and spices in a mixer bowl and mix at low speed to blend well.
- Heat applesauce in a glass bowl in microwave for about 2 minutes until hot. Stir in baking soda. (DO NOT USE COLD APPLESAUCE!).
- Add to dry mix with oil, nuts and raisins. Mix at medium speed until creamy. Spread batter into baking pan.
- Bake 20-25 minutes, or until bars pull away from sides of pan. Cool on wire rack. Cut into 18 bars.

- 1. Stir raisins, applesauce and vanilla; set aside.
- 2. Melt butter in pan over medium heat and add oatmeal and nuts stirring constantly; 3-4 minutes.
