MIXED GREENS WITH TURKEY SAUSAGE
Cooked turnip and mustard greens are flavored with onion, garlic, crushed red pepper and bits of smoked turkey sausage for a savory side dish.

Steps:
- Wash greens, removing all grit. Remove and discard hard stems. Stack greens in small bunches; roll up. Cut crosswise into wide strips.
- Melt shortening in large skillet on medium heat. Add onions and garlic; cook 3 to 5 min. or until crisp-tender, stirring frequently.
- Add remaining ingredients; mix well. Stir in greens; simmer on low heat 45 min. to 1 hour or until tender, stirring occasionally.

Steps:
- Sauté sausages in heavy large skillet over medium heat until well browned and cooked through, about 15 minutes.
- Meanwhile, combine arugula, mixed greens, fennel and chives in large bowl. Whisk olive oil and vinegar in small bowl to blend well. Season generously with salt and pepper. Toss salad with dressing. Top salad with Parmesan shavings and sausages and serve.

Steps:
- 1. Add Turkey legs to a large pot, cover with water, and bring to a boil, then lower heat and cook till turkey legs are tender, and begin to pull away from the bone.
- 2. Remove turkey legs from pot to a large platter and allow to cool. Then remove bones, & splinters, and then chop into bite size pieces.
- 3. Add greens to pot, along with spices, sugar, & vinegar, and additional chicken stock or water as needed. Cover with lid and return to boil, then lower heat to a simmer, and continue to cook as desired, about 1 hour or more as desired.
- 4. Add the cooked Turkey back into the pot & cook about 1/2 hour or longer as desired.
- 5. Now add the chopped onions, & minced garlic, & continue to cook.
- 6. Add butter as desired, and stir till melted.
- 7. Serve with your favorite condiments, and Corn Bread, if desired. I served mine with my own Canned Pickled Okra.

SPAGHETTI WITH ITALIAN SAUSAGE AND MIXED GREENS
Steps:
- Whisk oil, lemon juice and garlic in small bowl to blend. Season dressing to taste with salt and pepper.
- Cook sausages in heavy medium skillet over medium heat until browned and cooked through, turning frequently, about 20 minutes. Using tongs, transfer sausages to paper towels and drain; cut into 1/4-inch-thick rounds. Combine sausage rounds and greens in large bowl.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain well.
- Add hot pasta to bowl with sausage rounds and greens; toss until greens begin to wilt. Mix in enough dressing to coat. Season to taste with salt and pepper. Divide pasta among bowls. Top with cheese and serve.
