MOM'S GOULASH AKA CHEESEBURGER MAC
Tasty dinner Mom always called "Goulash". I've renamed it "Cheeseburger Mac" because this dish has nothing to do with the Hungarian dish of the same name! Delicious, homemade dish.

Steps:
- Cook the pasta per directions.
- Drain noodles and set heat to low.
- Add butter and melt.
- Add milk and stir, being sure sure it's not too hot because your milk could curdle in the heat.
- Add cheese and stir until it melts, salt and pepper to taste. Keep on low.
- In a separate dish, combine ground beef, pepper, onion, and garlic salt, and cook until meat is brown.
- Turn on low and cover until pepper/onion starts to soften.
- Add the tomatoes, cover, and let simmer for 10 minutes, stirring occasionally.
- Combine and nom :).

- Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. Remove from the heat and stir in the Cheddar and cream cheese until smooth. Fold in the parsley. Garnish with more parsley, if desired.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.

- Cook the macaroni to al dente according to package directions.While it's cooking, brown the ground beef and onion together in an extra-large skillet or in a dutch oven.Drain and season with spices to taste.In a large bowl, mash tomatoes with a potato masher and add to beef along with the ketchup.Drain macaroni and add to the beef mixture, stirring well.Taste and add additional seasoning as needed.I didn't need to add any tomato juice to mine, but if you like yours very juicy you can add as much tomato juice as you like.Phyllis adds it to her leftovers, which I would also recommend because the noodles tend to soak up all the juice with time.

- Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).

MY MOM'S GOULASH

- Mix all of the ingredients together except the noodles and cook until onion and celery are tender.
- Add this to 1-lb macaroni noodles or a package of egg noodles which has been cooked.
- in a separate pot according to directions.
- Add minced garlic with salt and pepper.
- Then add the Bay leaf and Marjoram in the last 30 minutes of cooking.
- Note: You can add your own spices to the mix as well.

This is a wonderful and simple recipe from my German Mother. I usually make this soup a day before serving since it tastes better the day after making it.

- Brown beef in skillet, and drain.
- Add water, ketchup and onion powder; mix well. Bring to boil. Stir in macaroni; cover. Simmer on medium-low heat 8-10 min or until macaroni is tender.
- Stir in cheese; cook until melted, stirring occasionally.
MOM'S GOULASH
I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.
