- Beat dressing, cumin and cinnamon in medium bowl with wire whisk until well blended.
- Add beans and raisins; mix lightly. Sprinkle with almonds; cover.

- In a small saucepan, combine the sugar, vinegar, oil, salt and pepper. Cook and stir over medium heat until sugar is dissolved. Remove from the heat; cool slightly. , In a large salad bowl, combine the remaining ingredients. Drizzle with dressing; toss to coat. Cover and refrigerate overnight. Serve with a slotted spoon.

MIXED BEAN SALAD IN A MOROCCAN DRESSING
I got this recipe from cannedfood.co.uk about 6 years ago and this is the only mixed bean salad that I like to have! This salad is great made the day before as the longer it is left the more intense the flavours become.

Steps:
- Mix all the beans together in a bowl.
- Heat 1 tbsp olive oil in a large frying pan.Add half the onion and all of the garlic, and cook gently for 5 minutes until the onion is soft.
- Add the spices and cook for 1 minute, stirring continuously. Let cool for 5 minutes.
- Add the spice mix to the beans and stir well. Add the cucumber, tomatoes and remaining onion.
- Whisk together the remaining olive oil and lemon juice and pour over the bean salad.
- Leave to marinade if you can, as this will enhance the flavours.

Steps:
- Place water in a 3-quart saucepan, and bring to a boil.
- Add beets, and simmer until beets are tender when pierced with a fork, about 45 minutes.
- Cool, peel, and cut beets into bite-size pieces.
- Place in a serving bowl.
- Place lemon juice, garlic, cumin and salt and pepper to taste in a small bowl.
- Whisk in olive oil, then toss with beets.
- Let sit a few hours.
- Just before serving, sprinkle with parsley.

MOROCCAN RED BEET SALAD
Another recipe from the kitchen of Momma Simo. This is my best guess from watching her make it. I have since tried this at home with measuring and this is pretty darn close. There is one optional ingredient which while not terribly authentic works really well in this dish.

Steps:
- Trim the the long root tip off the beets, leaving about 1/2 inch of stem on the tops. Scrub the beets rather well taking care not to damage the skin.
- Place the cleaned beets into a large heavy saucepan filled with water and bring to a boil. Cook until the beets are cooked tender. This can vary from 30 to 60 minutes depending on the size of your beets.
- When the beets are cooked, pour out the boiling water and run the beets under cool running water. Reduce the temperature of the beets to a point where they can be handled. The skins should be fairly loose.
- Peel and trim the beets. Dice into bite sized cubes about 1/2 - 3/4 inches.
- Mix together all remaining ingredients and pour over the slightly warm beets. Toss and place in the fridge for a minimum of 1 hour.

- In a small bowl, stir together all ingredients for dressing then set it aside while you assemble the rest of the salad.
- Drain and rinse all the beans to remove any residual packing liquid. Allow the beans to drain in the colander until completely dry.
- In a large bowl, add the drained beans and red bell pepper then stir to combine. Pour dressing over the salad ingredients and stir gently to coat. Cover and allow the salad to marinate at least 1 hour or up to several days. Stir occasionally to ensure that the flavors blend well.
- Remove from the fridge, add feta cheese and chopped cilantro then stir to combine. Season to taste with salt and pepper and enjoy!
