Junket Tablets Ice Cream Recipes

MOM'S OLD FASHIONED HOMEMADE VANILLA ICE CREAM

Steps:

• 1. In a large mixing bowl, beat eggs until light and fluffy, about 2 minutes.
• 2. Add sugar and beat another 2 minutes.
• 3. Add milk and beat until well blended.
• 4. Place in a 2 quart saucepan and heat until lukewarm. Watch closely; do not overheat or scotch!
• 5. This is a box of Junket Rennet Tablets. I don't know if your grocer carries this product but if not, you can order it on-line.
• 6. This is 4 foil wrapped Junket Rennet Tablets.
• 7. Break the Junket Rennet tablets and place in a small measuring cup.
• 8. Add a small amount of warm water and allow tablets to dissolve.
• 9. Add Vanilla and dissolved tablets to warmed ice cream mixture and stir until well blended.
• 10. Pour mixture immediately into freezing container of your choice and insert the churn blade. Let ice cream mixture set undisturbed for a few minutes. Take a spoon and scoop out a small amount of the mixture. Check to see if it has set to a soft custard like consistency.
• 11. When mixture is set, place container into the ice cream freezer of your choice and follow manufacturer's instructions. Begin churning until it is frozen.
• 12. Yum; doesn't this look good?
• 13. This delicious ice cream is best if eaten immediately. It is similar in texture to a Frosty Ice Cream Cone. Enjoy!
• 14. Add the sauce of your choice. It is wonderful with chocolate sauce!
• 15. Or sweetened crushed strawberries!
• 16. Or Mrs. Richardson's Butterscotch Caramel Sauce.

GRANDMA'S DELICIOUS HOMEMADE ICE CREAM

Steps:

• Dissolve Junket tablets in cold water.
• Mix milk, cream, sugar, salt and vanilla in a pan& heat to lukewarm.
• (NOT hot!) Add Junket tablets.
• Mix well and pour immediately into freezer (with dasher in place).
• Let stand until set.
• (will be thick like Junket) Mix in the ice cream freezer until thick& stiff.
• Serve as-is- or with toppings!

HOMEMADE ICE CREAM

Steps:

• will need electric ice cream maker, rock salt (ice cream salt), lg. bag of ice (from store) unwrap junket tablets & place in small bowl, add just enough reg. milk to cover them. let set until ice cream mixture is ready to be put in container.
• in lg bowl, beat eggs until a little frothy, add sugar, vanilla, condensed milk, whipping cream. mix until all combined. taste to see if sweet enough (for you), then add the junket tablet mixture. mix again.
• pour into ice cream container, fill up to line with reg,milk. insert paddle and rotate to make sure the mixture is all combined after pouring milk in. place lid on container, twisting until locked. place container in bucket (be careful as to not spill the mixture) place motor on top & lock. plug in, start adding the crushed ice all around, then salt, alternating layers until bucket is full. the mixture will automatically shut off when done.
• when ice cream is done, start removing some of the ice & salt then remove motor, being careful as to not lift lid to container (if any salt gets into the ice cream, it will be ruined). lift container & place in sink, using wet cloth, wipe salt & ice from around the container & lid. when that is done, then lift lid & gradually pull out the paddle, scraping off ice cream as you go. (i do this because it is easier to dip the ice cream without the paddle in the container. ice cream will be a little soft so therefore, i put the container in my freezer for about 6 hrs to completely freeze. i make the ice cream a day before you are to serve it.
• i have also made this using crushed strawberries (i mix them with sugar to help sweeten), also peaches, doing the same thing to them. after berries or peaches are sweet, i then add them to the ice cream mixture. if you are using fruit in the mix, then you don't have to fill the container with milk to bring it up to the line.
