TEXAS BAKED BEAN DIP

8 slices thick-cut bacon, chopped
1 small yellow onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 1/2 cups packed brown sugar
1 cup brewed coffee
1 tablespoon ketchup
2 teaspoons mustard
1 teaspoon chile paste, such as sriracha
Kosher salt and freshly ground black pepper
Two 16-ounce cans pinto beans, drained
1/2 cup sour cream
1/2 cup grated Cheddar
1/4 cup sliced green onions
Butter crackers, such as Ritz, or tortilla chips, for serving

Steps:

  • Heat a Dutch oven over medium heat; line a plate with a paper towel. Add the bacon to the pot and cook, stirring occasionally, until crisp, 5 to 7 minutes. With a slotted spoon, transfer the bacon to the lined plate to drain.
  • Discard most of the bacon fat, leaving about 2 tablespoons in the pot. Return to medium heat, add the onion, bell pepper and garlic and saute until beginning to brown, about 3 minutes. Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

1 (1-pound) package pasteurized process cheese spread, cubed (1 1/2 packages for a thicker dip)
1 (10-ounce) can diced tomatoes and green chilies, with liquid

Steps:

  • Place cheese, tomatoes, and jalapenos and their liquid in small heavy saucepan. Set over low heat and cook, stirring often, about 15 minutes until cheese melts and mixture is smooth, or microwave 5 minutes on HIGH in covered, microwave-safe casserole, stirring once at halftime. Serve warm with corn chips or bite-size broccoli or cauliflower florets, celery, carrot, or zucchini sticks.

  • Combine all ingredients in microwave-safe dish. mix well. Microwave on high for approximately five minutes, or until cheese is melted. Serve as a party dip with about 3 pounds of nacho chips.

1 c sour cream
2 can(s) (16-oz.size)refried beans
1 pkg taco seasoning
2 c cheddar cheese, shredded
2 c monterey jack cheese shredded

Steps:

  • 1. DIRECTIONS: Preheat oven to 350 degrees. Mix together cream cheese and sour cream in a large bowl. Mix in refried beans until combined. Stir in taco seasoning.
  • 2. Spray a 9x13 baking pan with cooking spray. Spread mixture evenly into the bottom of the baking dish. Sprinkle the top with both cheeses.
  • 3. Bake for 25-30 minutes, or until cheese in melted and slightly browned. Serve with tortilla chips.
