Time 45m

Yield 6 sandwiches

Number Of Ingredients 11

4 ounces cream cheese
1 tablespoon sour cream
1 clove garlic, smashed
1/2 teaspoon grated lemon zest (from 1/2 lemon)
1/4 teaspoon kosher salt
One 10-ounce package frozen spinach, thawed and squeezed dry
1/2 cup marinated artichoke hearts, drained
1/2 cup grated mozzarella
1/4 cup freshly grated Parmesan
1/2 cup mayonnaise
12 slices white bread

Steps:

  • Put a rimmed baking sheet in the oven and preheat to 450 degrees F.
  • Combine the cream cheese, sour cream, garlic, lemon zest, salt, spinach and artichoke hearts in a food processor. Pulse until evenly combined. Add the mozzarella and Parmesan; pulse to combine.
  • Spread 1/4 cup of the mayonnaise over half of the bread slices. Place the slices, mayo-side down, on a second rimmed baking sheet and spread evenly with the spinach filling, all the way to the edges. Top with the other 6 slices of bread. Spread the top slices with the remaining 1/4 cup mayonnaise. Carefully, remove the hot baking sheet from the oven and place it directly on top of the sandwiches. Transfer the double-stacked baking sheets to the oven and bake until the sandwiches are golden brown and the filling is melted, about 15 minutes.
  • Let sit for 5 minutes before slicing into bite-size squares or triangles. Serve warm.

SPINACH AND ARTICHOKE DIP

Spinach and Artichoke Dip image

Make creamy spinach with artichokes, sprinkle with Parmesan and bake for a party-worthy dip.

Provided by Food Network Kitchen

Time 1h

Yield 6 servings

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil, plus more for oiling the dish
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
Pinch of freshly grated nutmeg
4 scallions, thinly sliced
2 cloves garlic, finely chopped
One 10-ounce bag baby spinach, roughly chopped
Two 6-ounce jars marinated artichokes, drained and chopped
6 ounces cream cheese, cut into small pieces
2 tablespoons grated Parmesan
Toasted bread and/or crackers, or serving

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 1-quart baking dish.
  • Whisk the heavy cream, 1 teaspoon salt, a few grinds of pepper and the nutmeg together in a small bowl. Set aside.
  • Heat the oil in a large skillet over medium heat. Add the scallions and garlic. Cook, stirring, until the garlic is fragrant and the scallions are soft, about 2 minutes. Add the spinach and artichokes and cook, stirring, until the spinach wilts, about 3 minutes. Add the cream cheese and stir until melted, about 1 minute.
  • Remove the skillet from the heat and stir in the heavy cream mixture. Transfer it to the prepared dish and sprinkle the Parmesan on top. Bake until the center of the dip is just set and the edges are golden brown, about 30 minutes. Serve warm or at room temperature with toasted bread or crackers.

GRILLED SPINACH-ARTICHOKE STUFFED CHICKEN BREASTS

Grilled Spinach-Artichoke Stuffed Chicken Breasts image

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 9

4 skinless, boneless chicken breasts (about 8 ounces each)
Half of one 5-ounce package soft garlic-and-herb cheese
1 canned artichoke heart, chopped
1 1/2 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh dill
1 teaspoon grated lemon zest plus 2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil, plus more for the grill
Kosher salt and freshly ground pepper
2 cups spinach leaves, stemmed

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Mash the garlic-and-herb cheese, artichoke heart, parsley, dill and lemon zest in a bowl. Whisk the lemon juice and olive oil in a separate bowl; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with half of the lemon oil; top with the spinach. Spoon the filling over the top, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine. Brush with the remaining lemon oil.
  • Brush the grill grates with olive oil. Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.
