Scrumptious little mini phyllo cups filled with a cheesy. lightly spicy sausage mixture.

1 pkg (15 mini cups) frozen phyllo dough
2 sweet Italian sausage links
2 oz cream cheese (lite or regular)
1/2 C shredded Mexican Blend cheese
1/2 C Rotel tomatoes*
1/4 tsp garlic salt
pinch of paper

Steps:

  • Preheat the oven to 350°. Line a baking sheet with aluminum foil. Set out the frozen phyllo cups to thaw a bit while you're making the filling.
  • Remove the casings from the sausage. Place a medium skillet over medium heat and brown the sausage, breaking it up into small bits.
  • Add the cream cheese to the browned sausage and stir until the cream cheese is melted and combined into the sausage.
  • Add the garlic salt, pepper, and shredded cheese and stir until combined and melted. Add the Rotel and stir to until thickened and hot, about 1 minute. Remove from heat.
  • Place the phyllo cups on the cookie sheet. Spoon about 1 heaping teaspoon of the mixture into each cup. Bake for 9-10 minutes. Serve warm.

Sausages bites are baked wrapped in crescent dough. A blitz to prepare, guaranteed to disappear shortly after served.

1 tube crescent dough sheet (make sure it is not pre-perforated to make actual crescents)
4 links of pre-cooked sausage such as bratwurst, chicken apple, etc.
1 egg
1 tbsp beer or milk (optional, for the egg wash you can use water instead)
1/2 tbsp caraway seeds or poppy seeds or everything seasoning etc.

Steps:

  • Preheat the oven to 375 F (350 F if your oven tends to be stronger). Lay the crescent dough sheet flat onto a cutting board.
  • Place a sausage link in the center of each of the four quadrants of the dough and gently cut the dough into four (see picture image grid above). Roll the sausage links in the dough, leaving the seam underneath. Cut into bite sized pieces (about 6 per sausage link).
  • Transfer the pieces onto a parchment paper lined baking sheet. Beat the egg with a tablespoon of water or milk or beer. Brush over each dough wrapped piece. Sprinkle with your choice of spice.
  • Bake for 15-17 minutes or until the dough is nicely browned and puffy.

Number Of Ingredients 12

1 sheet frozen puff pastry (from a 17.25-ounce box), thawed
All-purpose flour, for rolling
1 large egg
2 tablespoons creole mustard
One 12-ounce package precooked andouille sausage, such as Aidell's
2 tablespoons finely chopped fresh dill
1/2 cup creole mustard
1/4 cup ketchup
1/4 cup mayonnaise
2 tablespoons maple syrup
2 tablespoons cider vinegar
Dash hot sauce

Steps:

  • For the sausage bites: Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Unfold the pastry sheet and dust both sides with flour. Roll to an approximately 12-inch square. Cut into four 6-inch squares. Beat the egg in a small bowl. Brush the entire surface of the top of each pastry square lightly with beaten egg. Reserve the egg wash. Brush with the mustard, leaving a 1/2-inch border around the edges. Roll each sausage tightly in a pastry square, crimping the edges to seal. With a serrated knife, trim the loose edges from each roll. Cut each crosswise into 4 sections.
  • Place the bites seam-side down on the prepared baking sheet, about an inch apart. Bake until the pastry is crisp, browned and cooked through, 35 to 40 minutes. Sprinkle with dill.
  • For the creole mayo sauce: Meanwhile, combine the mustard, ketchup, mayonnaise, maple syrup, cider vinegar and a dash of hot sauce in a bowl.
  • Serve the sausage bites warm with the sauce for dipping.

You could even switch out the breakfast sausage for Italian sausage and have pizza bites. Versatile... Easy to make... Packed with great flavor... What could go wrong. So, you ready... Let's get into the kitchen.

8 ounce(s) ground breakfast pork sausage
1/8 teaspoon(s) ground cumin, or to taste
1/8 teaspoon(s) white pepper, freshly ground, or to taste
1/4 teaspoon(s) oregano, dried
1/4 teaspoon(s) thyme, dried
1 ounce(s) colby cheese, freshly grated
1 sheet(s) puff-pastry dough
1 large egg, beaten with 1 tablespoon of water

Steps:

  • PREP/PREPARE
  • Gather your Ingredients (mise en place).
  • Chef's Note: Not all breakfast sausages are created equal. Some contain more fat than pork. To test out your breakfast sausage, cook up one patty in a skillet. If it winds up swimming in a sea of grease, you need another brand. Better yet, why not make your own.   • Add the sausage to a skillet over medium-low heat, and allow to slowly cook until any excess fat renders.
  • Remove from the pan, and drain on paper towels, and allow to cool.
  • Chef's Note: Don't completely cook the sausage, just lightly cook it to render some of the fat.
  • Place a rack in the middle position, and preheat the oven to 375f (190c).
  • Thaw out the puff pastry, and lay on a clean, lightly floured surface, and cut in half.
  • Combine the sausage with the dried spices, and the cheese.
  • Chef's Note: I choose Colby cheese because it holds up to the baking process, and has a nice mild flavor that does not overpower the sausage.
  • Place the sausage mixture on one side of the puff pastry.
  • Roll the log together, until it slightly overlaps, and use some of the egg wash to seal the seam.
  • Chef's Note: You only want it to slightly overlap. If you have any extra, just cut it off.
  • Place seam-side down, and brush with the egg wash.
  • Cut into thick pieces, and then put the sausage bites on a parchment-lined baking sheet, fitted with a wire rack.
  • Place the baking sheet in the preheated oven and bake until golden brown, about 15 - 18 minutes.
  • PLATE/PRESENT
  • Serve while still nice and warm, and watch them disappear. Enjoy.
  • Keep the faith, and keep cooking.

1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1/2 pound bulk pork sausage

Steps:

  • Heat the oven to 400 degrees F.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12x10-inch rectangle. Cut into 3 (3-inch) strips.
  • Divide the sausage into thirds. Shape each into a cylinder the same length as the pastry. Place 1 piece sausage on the long edge of each pastry rectangle. Roll up the pastry around the sausage and press the seams and pinch the edges to seal.
  • Cut each roll into 12 (1-inch) slices, making 24 in all. Place the slices, cut-side down, onto a baking sheet.
  • Bake for 15 minutes or until the pastries are golden brown and the sausage is cooked through. Remove the pastries from the baking sheet and let cool on wire racks for 10 minutes.
  • Tip: You can substitute Italian sausage (casing removed) for the bulk pork sausage.
  • Tip: To make ahead, place the unbaked slices onto a baking sheet. Cover and freeze until firm. Remove the frozen slices from the baking sheet and store in a gallon size resealable plastic bag in the freezer for up to 1 month. Bake the frozen slices on a baking sheet at 400 degrees F for 20 minutes or until the pastry is golden brown and the sausage is cooked through.

  • Preheat oven to 350°. Cut bacon strips widthwise in half; cut sausage links in half. Wrap a piece of bacon around each piece of sausage. 1 tablespoon butter, melted

Steps:

  • On a lightly floured surface, roll out each biscuit into a 4-in. circle; brush with butter. Combine Parmesan cheese and oregano; sprinkle over biscuits.
