MINI CORNDOGS

Mini Corndogs image

Provided by Trisha Yearwood

Categories     appetizer

Time 55m

Yield 24 servings (2 franks per serving)

Number Of Ingredients 10

2 quarts neutral frying oil
One 12-ounce can smoked cocktail franks, such as Hillshire Farms
One 8.5-ounce box corn muffin mix, such as Jiffy
1/2 cup reduced-fat buttermilk
1 large egg
1/4 cup hot pepper jelly, melted
1/4 cup yellow mustard
1/4 cup ketchup
1/4 cup mayonnaise
2 dashes Worcestershire sauce

Steps:

  • For the corndogs: Pour the oil into a Dutch oven fitted with a deep-fry thermometer. Place over medium-high heat and preheat to 375 degrees F.
  • Insert a toothpick lengthwise into the center of each cocktail frank, leaving about 1/2 inch of toothpick exposed.
  • Mix together the corn muffin mix, buttermilk and egg in a medium bowl to make a batter. Pour the batter into a small cup to make it easier to dip the franks.
  • In batches, hold onto the toothpick and dip a frank into the batter. Slowly turn until the frank is evenly coated. Drop into the hot oil and fry until golden brown, 1 to 2 minutes per side. Drain and place onto a cooling rack over a baking sheet. Repeat with the remaining franks and batter. Let cool slightly.
  • For the sweet and spicy mustard: Whisk together the hot pepper jelly and mustard in a small bowl.
  • For the fry sauce: Whisk together the ketchup, mustard and Worcestershire sauce in a small bowl.
  • Serve the corndogs with the sauces.

Time 30m

Yield Makes 24 mini corn dogs

Number Of Ingredients 11

1 cup yellow cornmeal
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 cup sugar
3 teaspoons baking powder
2 large eggs
1 cup milk
4 cups (1 quart) vegetable oil, for frying
One 16-ounce package cocktail-sized beef frankfurters
Cornstarch, for dusting

Steps:

  • In a medium bowl, combine cornmeal, flour, salt, pepper, sugar, and baking powder. In a separate bowl, gently whisk the eggs with the milk and stir into the dry mix.
  • Preheat the oil in a Dutch oven, deep saucepot or mini fryer to 350 degrees F.
  • Insert wooden skewers through the center of each frankfurter.
  • Dry frankfurters with a towel, then dust with cornstarch and shake off the excess. Then hold the frankfurters by the end of the skewer and dip in the batter until well coated. Let the excess batter drip off.
  • Carefully holding the end of the skewer, let the corn dogs fry for 5 seconds before letting go to prevent them sticking to the bottom of the pot. Fry until lightly browned, about 3 minutes. Drain on paper towels.

SWEET PEPPER AND CORN RELISH

Sweet Pepper and Corn Relish image

This relish comes together in a snap. Add fresh flavor and eye appeal to grilled meats, fish, and sausages. We particularly like it on salmon, and it's also tasty with tortilla chips or as a topping on hot dogs and fish tacos. So very versatile.

Provided by lutzflcat

Time 15m

Yield 4

Number Of Ingredients 11

2 teaspoons olive oil
¾ cup fresh corn kernels
½ red bell pepper, diced
½ cup diced red onion
2 cloves garlic, minced
2 tablespoons fresh lime juice
1 teaspoon brown sugar
1 teaspoon lime zest
⅛ teaspoon cayenne pepper
1 green onion, minced
2 tablespoons chopped fresh parsley

Steps:

  • Heat olive oil in a medium skillet over medium heat and add corn, bell pepper, and onion. Saute until onion softens slightly and corn is tender, about 2 minutes. Stir in garlic and cook until fragrant, about 1 minute.
  • Stir in lime juice, brown sugar, lime zest, and cayenne pepper. Remove the relish to a bowl and cool slightly. Stir in green onion and parsley, and serve warm or at room temperature.

DANGER DOGS WITH SPICY FRUIT RELISH

Danger Dogs with Spicy Fruit Relish image

Provided by Guy Fieri

Categories     main-dish

Time 45m

Yield 4 to 8 servings

Number Of Ingredients 15

1/2 pineapple, peeled and sliced into 1/2-inch planks
1 mango, peeled and sliced into 1/2-inch pieces
1 jalapeno, seeded and finely diced
1 red chile (Fresno or jalapeno), seeded and finely diced
1/2 medium red onion, finely diced
1 tablespoon olive oil
1/2 lemon, juiced
1/2 cup pickle relish
Kosher salt and freshly ground black pepper
8 slices applewood-smoked bacon
8 good quality all-beef franks
16 pickled jalapeno slices, drained
8 hot dog buns
Ketchup, for serving
Country mustard, for serving

Steps:

  • For the fruit relish: Preheat an oiled grill pan over medium-high heat. Grill the pineapple and mango slices until grill-marked, 1 to 2 minutes per side. Set aside to cool, then slice into 1/4-inch cubes. In a large bowl, combine the fruit with the jalapeno, red chile, onion, olive oil, lemon juice and pickle relish. Season lightly with salt and pepper. Set aside in the fridge.
  • For the hot dogs: Set a grill pan over medium-high heat. Cook the bacon for 1 to 2 minutes on each side, just to render some fat, not to cook through. Transfer the bacon to a paper-towel-lined plate to drain.
  • With a sharp knife, make a small lengthwise slit down the center of each hot dog (do not cut all the way through). Cut the jalapeno slices so you can unroll them into long strips. Place 2 or 3 jalapeno strips into the slit of each hot dog. Wrap each dog with a strip of bacon and secure it in place with toothpicks. In the same grill pan used for the bacon, cook the hot dogs until the bacon is cooked through and crisp, rotating frequently, 5 to 6 minutes total.
  • To serve, toast the buns for 1 to 2 minutes per side. Remove the toothpicks from the hot dogs and nestle the dogs in the buns. Top with fruit relish and serve with ketchup and mustard.

Cheesy Hot Dogs with Pickle-Pepper Relish image

Provided by Food Network Kitchen

Time 1h20m

Yield 4 servings

Number Of Ingredients 15

1/4 cup apple cider vinegar
2 teaspoons sugar
1/4 teaspoon celery seeds
1/4 teaspoon yellow mustard seeds
1/2 cup finely chopped dill pickles
1/4 cup finely chopped pickled yellow pepper rings
2 tablespoons finely chopped pimientos
1 tablespoon finely chopped pickled jalapeno peppers
1 tablespoon finely chopped fresh chives
Kosher salt
4 hot dogs
4 top-split hot dog buns
2 tablespoons unsalted butter, melted
4 slices American cheese, quartered
Ketchup and mustard, for topping

Steps:

  • Make the relish: Combine the vinegar, sugar, celery seeds and mustard seeds in a small saucepan. Bring to a boil and cook until syrupy, about 2 minutes. Transfer to a bowl; let cool slightly. Stir in the dill pickles, yellow peppers, pimientos, pickled jalapenos and chives. Cover and refrigerate at least 1 hour or overnight. Season with salt.
  • Preheat a grill to medium high. Grill the hot dogs, turning, until well marked, 4 to 5 minutes. Meanwhile, open the buns and toast cut-side down on the grill. Brush the insides of the buns with the melted butter and arrange the cheese inside; cover to melt, 1 to 2 more minutes.
  • Drain the relish. Serve the hot dogs on the cheesy buns; top with ketchup, mustard and the relish.

MINI CORN DOGS WITH SWEET AND SPICY RELISH

Mini Corn Dogs with Sweet and Spicy Relish image

Saw this recipe on Food Network a few years ago, has been a hit in our family ever since! Made a few minor modifications (tooth picks instead of meat skewers, and cut the hot dog dogs myself instead of cocktail franks.) We love mustard so haven't actually tried the relish yet, so give it a try and let me know how it is! The...

Time 20m

Number Of Ingredients 13

1 egg
1 8.5 oz package corn muffin mix
2 tsp garlic powder
2 tsp onion powder
3/4 c milk
1/2 c all purpose flour
1 pkg hot dogs of your choice (i like to use oscar myer bun length as one dog cuts perfectly into 3)
vegetable oil for frying
24 toothpicks
FOR THE RELISH
3/4 c ketchup
1/4 c pickled hot peppers (diced)
1/4 c pickled sweet peppers (diced)

Steps:

  • 1. In a small bowl mix the ketchup and peppers, set aside
  • 2. In a large bowl combine egg, corn muffin mix, garlic powder, onion powder and milk
  • 3. In a seperate dish add flour. Cut hot dogs in 1/2's or 1/3's depending on hot dog size. To save time I dredge all hot dog pieces in flour in the bowl at same time and leave in there until i am ready to dip in batter.
  • 4. Insert toothpick into end of hot dog, shake off excess flour, and dip into batter. Fry 2-3 hot dogs at time for 1-2 minutes or until golden brown. Original recipe says deepfryer but I just use small saucepan with few inches of oil and a pair of tongs. Drain on paper towels. Serve warm with the relish.

Sweet and Spicy Pepper Relish image

Provided by foodinjars (Marisa McClellan)

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Pickled

Time 1h45m

Yield 24

Number Of Ingredients 6

1 pound medium-hot red chile peppers, such as Fresnos or red jalapenos
2 small red or orange bell peppers - stemmed, seeded, ribs removed
½ large onion, peeled and quartered
1 ¼ cups white sugar
¾ cup apple cider vinegar
1 ½ teaspoons pickling salt

Steps:

  • Wearing rubber or latex gloves, trim tops off chiles. Working in batches, pulse chiles, bell peppers, and onion in a food processor until chopped into fine bits, about 1 minute per batch. Transfer to a nonreactive 3-quart pot.
  • Stir sugar, vinegar, and salt into chile mixture and bring to a boil over high heat. Reduce heat to medium and simmer, stirring more frequently toward end of cooking to prevent scorching, until thickened, 20 to 30 minutes.
  • Pour or ladle relish into clean, wide-mouth, half-pint jars, leaving 1/2 inch headspace. Wipe rims clean with a damp paper towel. Let cool to room temperature, about 1 hour.
  • Apply clean lids. Enjoy immediately, store in fridge 2 to 3 weeks, or freeze up to 6 months.
