ZHA JIANG MIAN MEATLESS CHINESE SPAGHETTI



Zha Jiang Mian Meatless Chinese Spaghetti image

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt and freshly ground black pepper
3 tablespoons canola oil
1/4 cup finely chopped garlic
1 tablespoon finely chopped fresh ginger
1 tablespoon fermented black beans, rinsed, drained and gently smashed by hand
1 red onion, finely diced
2/3 cup hoisin sauce
2 cups vegetable stock or water
1/2 cup Shaoxing rice wine
1 pound beef substitute, preferably Beyond Beef
1 pound fresh or dried Shanghai noodles or other egg noodles
1 cucumber, peeled, seeded and julienned
2 carrots, julienned
2 cups mung bean sprouts

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat a large high-sided saute pan over high heat. Add the oil and swirl to coat the bottom of the pan. When the oil shimmers, add the garlic, ginger, beans and onion and saute, stirring, until the vegetables are soft, about 5 minutes. Add the hoisin sauce and cook, stirring, to remove any raw taste, about 2 minutes. Add the stock and wine and bring to a simmer. Add the beef substitute and reduce the heat to low. Simmer until the mixture has a sauce-like consistency, stirring occasionally, 30 to 45 minutes. Season with salt and pepper.
  • Add the noodles to the boiling water and cook until al dente, about 5 minutes for fresh or 10 to 15 minutes for dried. Drain well and divide among serving bowls. Ladle on the sauce, then top with the cucumbers, carrots and sprouts and serve.

1 piece konbu (approximately 5 by 6 inches)
1 cup bonito flakes
5 cups cold water

Steps:

  • Wipe konbu with a damp cloth to clean.
  • In a stock pot, place konbu and cold water over medium heat. Just before the water begins to boil (DO NOT BOIL!) pull off heatand let stand 5 minutes.
  • Remove konbu, and bring back to heat. Again, right before stock begins to boil, remove from heat and add the bonito flakes. When flakes sink to the bottom, strain through cheesecloth or a fine mesh strainer. Dashi can hold in the refrigerator for 2 weeks.

2 tablespoons vegetable oil, plus more as needed for pan-searing
1 red onion, thinly sliced
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
8 ounces sliced shiitakes
1 cup shelled edamame
1/2 cup toasted pepitas
Kosher salt
Egg wash or water, for brushing
1 shallot, sliced
1/2 cup yuzu juice (may substitute with lemon juice)
1 tablespoon Dijon mustard
1 tablespoon palm sugar
Kosher salt and freshly ground black pepper
2 cups extra-virgin olive oil
One 18-ounce package lumpia or egg roll wrappers

Steps:

  • Heat the vegetable oil in a medium saute pan over medium-high heat. Once the oil is hot, add the onions, garlic and ginger and cook until the onions are a deep golden brown, 5 to 7 minutes. Remove to a bowl. Add the shiitakes to the same pan and saute until browned, about 5 minutes. Add more oil to the pan, if needed. Add the cooked mushrooms to the bowl along with the edamame, pepitas and salt, to taste. Toss to thoroughly combine and adjust the seasoning. Allow to cool completely.
  • For the yuzu emulsion: Add the shallot, yuzu juice, Dijon, palm sugar and salt and pepper to a blender; blend until smooth. Drizzle in the olive oil until thick and smooth. Adjust the seasoning.
  • Add 1/3 cup filling to the middle of an egg roll wrapper with the longer side facing you. Wet the edge closest to you with egg wash or water and fold that side up over the filling. Wet the other edge furthest away from you and fold on top of the other edge, creating a seal. Fold the side pieces in towards the middle of the wrapper, resulting in a sealed rectangle. Set aside seam-side down as you repeat with the remaining filling and wrappers.
  • Heat 1/4 cup vegetable oil in a 14-inch cast-iron pan over medium-high heat. Once the oil is hot, add the bings to the pan in batches of 4, and cook until evenly golden brown, 3 to 4 minutes per side. Remove to a paper towel-lined plate.
  • Serve the bings hot with the yuzu emulsion.

1 tablespoon canola oil
4 chicken leg quarters, skin-on, thigh and drumstick separated
2 ounces pancetta, ¼-inch julienne
1 ½-inch finger of ginger, peeled, long slices
10 garlic cloves, smashed
1 red onion, sliced
1 cup carrot nubs, roughly chopped
4 ribs celery, roughly chopped
1 jalapeño pepper, thinly sliced with seeds
2 cups edamame, shelled
1 cup Wan Ja Shan® organic wheat-free tamari
Water
Kosher salt and freshly ground black pepper to taste

Steps:

  • 1. In a pressure cooker over medium- high heat, add the oil. 2. Season the chicken with salt and pepper, and add to the pressure cooker, skin-side down. Cook until skin is golden brown, about 8 to 10 minutes. Transfer the chicken to a plate and reserve. 3. Add pancetta, ginger, garlic, red onion, carrot, celery, jalapeño and edamame to the pressure cooker. Allow to sweat for about 3 minutes. 4. Deglaze with the tamari and add enough water to submerge both the vegetables and chicken pieces. Taste the cooking liquid and adjust the seasoning if necessary. Return the chicken to the pressure cooker, submerging it. Cover the pressure cooker with the lid, sealing it tightly. Bring to a simmer, and cook 15 to 20 minutes from when the pressure cooker steams
