2 lbs ground goat meat or 2 lbs ground beef
5 eggs
3 tablespoons ginger-garlic paste
1/2 teaspoon jeera powder or 1/2 teaspoon cumin powder
1 1/2 teaspoons coriander powder
1/4 teaspoon turmeric powder
2 teaspoons indian chili powder
salt
1/2 teaspoon garam masala
5 large potatoes, mashed and salted (should not be watery)
seasoned dry bread crumb
ghee or oil (for frying)

Steps:

  • Place the ground meat in a pan and add to it the ginger garlic paste, chilli powder, garam masala, coriander powder, turmeric and salt and mix well.
  • Add ½ cup of water and cook until the meat is done.
  • Let it cool and then place the ground meat in a blender/ grinder and make a fine paste of it.
  • The paste should not be too liquid you should be able to make balls of the mixture.
  • Add an egg while grinding.
  • When done add salt to taste.
  • Now make 1-inch round balls from the dough and keep aside.
  • Also make 3" balls from the mashed potato mixture and keep aside.
  • Now flatten each potato ball into a flat disc.
  • Place a ground meatball in the centre and cover it with the mashed potato from the sides.
  • Shape them into balls and slightly press them flat shaping them like thick flat circular discs.
  • Beat the remaining eggs in a flat dish with salt according to taste.
  • Dip each potato cutlet in the egg mixture, then coat with breadcrumbs (shake off the excess) and fry on a hot pan with ghee or oil till it is golden on both sides.
  • Serve piping hot.

These are quite common in India... This is my version! I buy bakery breadcrumbs b/c they just taste better than the "stuff" you buy in cans at the grocery store... and I get 2xs the amount for 99cents. Servings will depend on how large/small you make your cutlets.

4 medium onions, chopped fine
9 green chilies, chopped fine
6 garlic cloves, minced
1/2 teaspoon ground turmeric
1 lb ground beef (any mince you want to use)
6 medium potatoes
3 tablespoons lemon juice, freshly squeezed
4 teaspoons black pepper
2 1/2 teaspoons garam masala
salt, to taste
2 cups fresh cilantro, chopped fine
4 eggs, whisked
oil, for shallow frying
2 cups dry breadcrumbs

Steps:

  • Put your onion, chiles, garlic, turmeric and mince in a pan over high heat and cook mixing often for around 15 mins (you dont need to add any oil/fat).
  • Poke the potatoes with a fork, wrap in moist papertowels, and microwave according to your microwave settings.
  • I have a baked potato setting, and they are done in around 6 minutes on my baked potato setting, but each microwave is different.
  • After 15 mins of cooking the mince, turn heat off, add lemon juice, black pepper, garam masala, cilanto and salt.
  • Transfer to a bowl lined with paper towels to drain excess oils/fat.
  • Remove skins from cooked potatoes and mash thoroughly making sure there are no lumps.
  • Mix potatoes into meat mixture.
  • Now shape the mixture into cutlets (I usually make them into oval shaped cutlets about 1/2 inch thick).
  • dip into egg mixture and coat with breadcrumbs.
  • Shallow fry in a frying pan until golden brown and serve hot!

  • Combine the ground chicken or beef with the lime juice in a nonstick pan and season with salt, to taste. Cook over medium heat until all of the excess water dries up. Let some amount of moisture remain. Remove from the heat and let cool.
  • Heat the oil in another pan over medium heat and cook the minced onions until they turn pale. Toss in the green chiles, ginger, garlic, cilantro, and mint leaves and stir. Just before removing from the heat, add the pepper, turmeric, garam masala, cumin, and cinnamon.
  • Remove from the heat and set aside. Let the mixture cool a bit. Add the mashed potato and ground chicken or beef and mix well. If the mixture is soggy, add the bread and mix well.
  • In a bowl, beat the egg whites and set aside. Place the breadcrumbs on a plate. Heat 1 inch vegetable oil in a deep-sided sauté pan over medium heat. Shape the mince mixture into balls and flatten them in the center of your palm. Dip each patty in the egg whites and then roll it over the breadcrumbs. Fry until both sides are golden brown.
