Creamy Homemade Macaroni & Cheese image

Very creamy, cheesy and yummy! My grandson loves it, you might too.A little healthier than my regular recipe, but definitely a comfort food. Can use any milk, 2% was all I had in the house.

Number Of Ingredients 6

*Pasta, whole wheat elbows, 13.25 oz
Butter, unsalted, .25 cup
*Flour, white, .25 cup
Bongards' Reduced Fat Pasteurized Process American Cheese, 8 serving (8oz)
Pepper, black, 1 tbsp
Basil, 2 tbsp

Steps:

  • 1 - Cook noodles according to package directions. Drain.
  • 2 - In the same pot you cooked the noodles, melt butter on med-high heat, add flour and stir until smooth, heat until bubbly.
  • 3 - Add milk all at once and stir until smooth. Heat until bubbly stirring constantly and after bubbly, stir 1 more minute until thickens. Add black pepper and basil to your liking. Cayene pepper, paprika, oregano, etc are also good in this too. Depends on your mood.
  • 4 - Add chunks of cheese, remove from heat, stir until cheese is melted.
  • 5 - Add cooked noodles and stir until mixed well.
  • That's it!

2 cups uncooked elbow macaroni
1/4 cup butter, cubed
1/3 cup all-purpose flour
1-1/2 cups fat-free milk
1/4 cup reduced-sodium chicken broth
1 cup fat-free sour cream
1/2 pound reduced-fat process cheese (Velveeta), cubed
1/4 cup grated Parmesan cheese
1/2 teaspoon ground mustard
1/2 teaspoon pepper
2 cups shredded reduced-fat cheddar cheese
Minced chives, optional

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat; stir in the sour cream, process cheese, Parmesan, mustard and pepper until smooth. , Drain macaroni; stir in cheddar cheese. Transfer to a 13x9-in. baking dish coated with cooking spray. Add cream sauce and mix well. Bake, uncovered, at 350° for 35-40 minutes or until bubbly. Sprinkle with chives if desired.
