Adapted from a recipe that ran in the Los Angeles Times on November 14, 1932. The local legend is that this pie originated with and was served in the restaurants owned by the original Mildred Pierce, portrayed in the movie starring Joan Crawford. I've heard the same legend regarding the woman who opened the Darling restaurant chain in Rhode Island. I don't know how true the legends are, but it's still a good pie.

1 3/4 cups milk
3/4 cup sugar
3 egg yolks
3/4 cup ghirardelli unsweetened cocoa
1 tablespoon unflavored gelatin, soaked in
1/4 cup milk
2 cups heavy cream, divided
1 tablespoon powdered sugar
1 (9 inch) chocolate crumb crusts
2 tablespoons grated chocolate (to garnish)

Steps:

  • Scald the milk in a saucepan.
  • Stir together the sugar and egg yolks in a bowl until smooth. Mix a little of the hot milk with the eggs, then stir the mixture into the milk.
  • Sift the cocoa into a bowl. add a little of the hot milk mixture and stir, then add the cocoa mixture to the milk mixture. cook over medium heat, stirring constantly, until the liquid coats the back of a wooden spoon, about 2 to 3 minutes.
  • Remove from heat. Stir the gelatin into the hot custard. Place the pan over a bowl of ice. Chill, stirring occasionally, until the custard forms a mound when dropped from a spoon.
  • Whip 1 cup cream until it forms still peaks. Fold into the custard.
  • Fill the pie crust with the custard mixture and refrigerate until set, overnight or several hours.
  • In a small bowl, whip the remaining 1 cup cream. Stir in the powdered sugar. spread evenly over the filling and sprinkle with grated chocolate.

This recipe came from the 'Out to Brunch with Mildred Pierce' cookbook by the former Mildred Pierce restaurant in Toronto. The pancakes are thick, fluffy and satisfying.

2 cups all-purpose flour
1/4 cup white sugar
1/2 teaspoon salt
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2 large eggs
2 cups buttermilk
1/4 cup unsalted butter, melted
1 cup fresh blueberries (or whatever other similar fruit of choice so long as it's not watery)
unsalted butter, to grease the skillet

Steps:

  • Sift together the dry ingredients in a large bowl.
  • In another bowl whisk together the eggs with the buttermilk and melted butter.
  • Using a spatula, combine the wet and dry ingredients together to make a thick lumpy batter. No need to mix until smooth.
  • Fold in the blueberries or fruit of choice.
  • In a nonstick skillet, melt some butter over medium-high heat. Ladle 1/3 cup of batter into the hot skillet. When bubbles appear on the surface of the pancakes and the edges begin to brown, flip the pancakes and cook the other side. It should take 2 to 3 minutes per side.
  • Serve with butter, maple syrup, a dollop of whipped cream or other toppings of choice.

The creamy, bittersweet-chocolate "bottom" of this early-twentieth-century icebox pie rests on a graham cracker crust. The pile of ethereal meringue on top includes a hint of rum.

1 1/4 cups graham cracker crumbs
1/4 cup (1/2 stick) unsalted butter, melted
3 tablespoons sugar
Pinch of salt
1/3 cup sugar
1/3 cup unsweetened Dutch-process cocoa powder
2 tablespoons cornstarch
1/8 teaspoon salt
1 1/2 cups whole milk
3 ounces bittersweet chocolate, finely chopped
2 tablespoons unsalted butter, cut into small pieces
1/2 teaspoon pure vanilla extract
1 1/2 teaspoons unflavored gelatin
3/4 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1 cup whole milk
1 teaspoon vanilla
2 tablespoons light rum
4 large egg whites, room temperature

Steps:

  • Make the crust: Stir together graham cracker crumbs, butter, sugar, and salt in a bowl. Press into bottom and up sides of a 9-inch pie plate. Refrigerate until firm, about 30 minutes. Preheat oven to 350 degrees. Bake until crust is set and begins to turn golden brown, about 12 minutes. Let cool completely on a wire rack.
  • Make the filling: Sift together sugar, cocoa powder, cornstarch, and salt into a medium saucepan. Gradually whisk in milk. Cook over medium-high heat, stirring constantly, until almost boiling. Reduce heat to medium; add chocolate. Cook, stirring constantly, until chocolate has melted and mixture is thick, about 2 minutes. Remove from heat; whisk in butter and vanilla until smooth. Spread chocolate mixture over crust. Refrigerate until cold and firm, about 1 hour.
  • Make the topping: Prepare an ice-water bath; set aside. Sprinkle gelatin over 2 tablespoons cold water in a small bowl. Let stand until soft, about 3 minutes. Whisk 1/4 cup sugar, the cornstarch, and salt in a medium saucepan. Gradually whisk in the milk. Cook over medium-high heat, stirring constantly, until mixture is thick and boiling, about 5 minutes. Remove from heat; stir in gelatin mixture, and let cool completely. Stir in vanilla and rum. Briefly place pan in an ice-water bath to thicken slightly, if needed. Do not let it set completely. Set aside.
  • Put egg whites in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-low speed until soft peaks form. Reduce speed to low; continue beating while you make syrup.
  • Bring remaining 1/2 cup sugar and 3 tablespoons water to a boil in a saucepan, stirring to dissolve sugar. Brush down sides of pan with a wet pastry brush to prevent crystals from forming. Cook, without stirring, until syrup registers 240 degrees on a candy thermometer.
  • Raise mixer speed to high, and beat egg whites just until stiff peaks begin to form. Immediately pour syrup into egg whites in a slow, steady stream near side of bowl, avoiding whisk. Beat until glossy and cooled, about 7 minutes.
  • Fold meringue mixture into reserved gelatin mixture in 3 batches until just combined. Mound the mixture into the chocolate-filled crust. Refrigerate pie for 2 1/2 hours or overnight before serving.

  • Separate Eggs. Separate the yolks from four eggs. Place the egg whites in a large mixing bowl or the bowl of a stand mixer, cover allow to sit at room temperature until later.

  • Add Milk and Heat to Scald. Add 2 Cups milk to the sugar and cornstarch and whisk to combine. Place the pan over medium heat and keep stirring until the milk is scalded (or right before it begins to boil).
  • Add Egg Yolks. Lower the heat to low and slowly pour the egg yolks into the milk mixture whisking constantly. Once the egg yolks are all in keep stirring but switch to a wooden spoon.
  • Cool and Add Vanilla. Take the pot off the stove and add 1 teaspoon of vanilla. This is now a traditional custard!
