MICROWAVE BAKED APPLES WITH GRANOLA FOR TWO

Steps:
- Cut apple in half lengthwise. With spoon, remove and discard core, making at least a 1-inch indentation in each apple half. Place each half in small microwave-safe bowl.
- Fill each apple half evenly with raisins and brown sugar; dot with margarine. Cover each with microwave-safe plastic wrap, venting one corner.
- Microwave each apple half on HIGH for 2 1/2 to 3 minutes or until apple is tender. Top each with granola. If desired, serve with a little milk, cream or fruit-flavored yogurt.

- Core the apples, leaving the bottom intact.
- In a bowl, mix the brown sugar, cinnamon and nutmeg. Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple. Place the apples in a deep casserole dish and cover.
- Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving.

- Cut apples in half lengthwise. Using spoon, remove and discard cores, making at least a 1-inch indentation in each apple half. In microwavable pie plate, arrange apple halves, cut sides up. If needed, cut thin slice off bottoms to keep halves from tipping.
- Fill each apple half evenly with raisins and brown sugar; dot with butter. Cover with microwavable plastic wrap, folding back one edge 1/4 inch to vent steam.
- Microwave on High 5 to 6 minutes or until apples are tender. Top each with granola. Serve with milk.

APPLE CRUMBLE WITH GRANOLA TOPPING
This is a nice and simple recipe, the most time consuming thing is preparing the apples. The topping is nice and crunchy. Different fruits, such as dried cranberries, raisins, rhubarb or any type of berry could be added for a unique taste.

Steps:
- Preheat oven to 400F.
- Core, peel (or not) and slice apples.
- In a large bowl, stir together apples, brown sugar, lemon juice and cinnamon.
- Put in a 9"x9" casserole dish and dot with 1/3 of the butter.
- Place granola in a plastic bag and crush with a rolling pin to break it up.
- Place granola in a bowl and add the rest of the butter.
- Using a fork, push the butter into the crushed granola, working it through.
- Sprinkle the mixture over the apples.
- Cover the dish with foil and bake for 40 to 45 minutes.
- Remove foil and bake about 10 minutes longer or until the topping has browned.
- Let stand for approximately 10 minutes then serve with vanilla ice cream.
- Enjoy!

- Heat oven to 200C/180C fan/gas 6. Mix together the granola, cinnamon, sugar and orange zest and juice. Put the apples on a baking tray and spoon the granola mixture into the hole, spooning over any juice left. Top each one with a knob of butter and bake for 30 mins until soft and sticky. Serve with a scoop of crème fraîche or ice cream.
