Authentic Mexican Hot Chocolate with Chile image

To make this authentic Mexican hot chocolate, you need Mexican hot chocolate tablets or squares which gives it its unique taste. Eat the chile only if you can handle it!

½ Mexican hot chocolate drink tablet (such as Nestle® Abuelita®)
1 dried red chile de arbol, lightly toasted

Steps:

  • Place milk and chocolate in a small saucepan over medium-low heat and simmer, stirring, until chocolate is melted but not boiling, about 5 minutes.
  • Pour chocolate mixture into a blender. Cover and hold lid down with a potholder; blend until foamy. Pour into a mug. Break the chile into 2 or 3 pieces, discarding seeds, and drop into the hot chocolate. Drink immediately.

This is a big batter and the cake is very rich. Make sure you have a lot of people around you when you bake it - or you will find yourself eating too much of this delicious, but oh-so-sinful cake with that little sting of chile. Serve with vanilla quark curd or vanilla yogurt and some slices of fresh mango.

2 dried red chile peppers, seeded, or to taste
1 ½ cups chopped dark chocolate
1 cup butter
2 tablespoons butter, divided
1 cup blanched almonds
1 tablespoon unsweetened cocoa powder
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons Greek yogurt
6 eggs, separated
¾ cup white sugar
6 tablespoons white sugar
1 ½ cups chopped dark chocolate
2 (1.2 ounce) packages milk chocolate bars, chopped
2 tablespoons butter
1 cup heavy whipping cream
1 tablespoon heavy whipping cream
2 tablespoons white sugar

Steps:

  • Place chiles in a bowl with water to cover; let soak until slightly softened, about 15 minutes.
  • Place 1 1/2 cups dark chocolate and 1 cup plus 2 tablespoons butter in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat.
  • Preheat oven to 325 degrees F (165 degrees C). Line a 10-inch springform pan with parchment paper.
  • Place chiles in a food processor; process until finely chopped. Add almonds, cocoa powder, flour, and cinnamon; process until almonds are chopped. Add Greek yogurt. Mix chile mixture thoroughly into the bowl of melted chocolate to make the batter.
  • Place egg yolks and egg whites into 2 different bowls. Place 3/4 cup sugar into the bowl of egg yolks; mix until fluffy and creamy. Stir carefully into the batter.
  • Beat egg whites until foamy using an electric mixer. Add 6 tablespoons sugar gradually, continuing to beat until medium peaks form. Blend meringue carefully into the batter; pour batter into the prepared pan.
  • Bake until a toothpick inserted into the center comes out mostly clean, 25 to 30 minutes. Let cake cool, at least 20 minutes.
  • Combine 1 1/2 cups dark chocolate, milk chocolate, and 2 tablespoons butter in a bowl.
  • Combine 1 cup plus 1 tablespoon heavy cream and 2 tablespoons sugar in a saucepan over medium heat; bring to a boil. Pour over the bowl of chocolate; mix thoroughly. Let ganache cool, at least 15 minutes. Spread over the cake.

6 ounces canola oil
1 1/2 cups all-purpose flour, divided
1/2 cup cornstarch
2 tablespoons Sabor Italia, recipe follows
6 egg whites
Water, for consistency
2 chicken breasts, pounded thin and sliced
4 large shrimp, peeled and deveined
1 poblano chile, grilled, peeled, seeded and diced
1/2 onion, diced
2 tablespoons Sabor Italia, divided, recipe follows
2 ounces red wine
1/4 cup milk chocolate
2 tablespoons chili powder
1/4 cup canned tomatoes
2 tablespoons freshly chopped cilantro leaves
2 tablespoons kosher salt
1/4 teaspoon freshly cracked black pepper
2 tablespoons granulated garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon crushed red pepper flakes

Steps:

  • Preheat oven to 400 degrees F and preheat 6 ounces canola oil to 400 degrees F.
  • For the tempura: In a small mixing bowl, add 1 cup flour, cornstarch, Sabor Italia, egg white and enough water to have a pancake-like consistency. Mix until thoroughly combined.
  • Thread chicken slices onto wooden skewers. Season, to taste, with Sabor Italia. Dredge the skewers into 1/2 cup flour and then into prepared batter. Place skewers immediately into preheated oil and fry until golden brown. Place onto a baking sheet and finish in the oven, about 5 minutes. Do the same for the shrimp.
  • For the sauce: In a medium saute pan over medium-high heat, saute the poblano, onions and a pinch of Sabor Italia. Add the red wine and chocolate and stir until combine. Add the chili powder and remaining Sabor Italia and stir until thickened. Add the chopped tomatoes and stir. Continue to cook for another 5 minutes. Remove from heat and stir in cilantro leaves.
  • Place skewers on a platter and top with sauce.
  • For the Sabor Italia: In a small bowl, combine all ingredients and store in an airtight container for up to 6 months

1 medium yellow onion, chopped
3 cloves garlic, minced
2 pounds lean ground beef, preferably organic
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried Mexican oregano
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 tablespoon Mexican chile paste (homemade or store-bought)
Two 15-ounce cans diced tomatoes, in juice
One 15-ounce can no-salt-added kidney beans, rinsed and drained
One 15-ounce can no-salt-added pinto beans, rinsed and drained
1/2 cup enchilada sauce
3 tablespoons unsweetened chopped chocolate
Crema
Cotija cheese, crumbled
Tortilla strips
Chopped cilantro
Lime wedges

Steps:

  • Heat the oil in a large pot over medium heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic and cook, stirring occasionally, until slightly golden, 2 to 3 minutes. Add the beef, breaking it up with a wooden spoon, and cook for about 5 minutes. Add the chili powder, cumin, oregano, salt, cayenne and chile paste and stir until the beef is coated with the seasonings. Add the tomatoes with their juices, beans, enchilada sauce and chocolate and stir. Reduce the heat, cover and simmer until thickened, stirring occasionally, about 30 minutes.
  • Garnish the chili with your desired toppings and serve.

Steps:

  • In a metal bowl set over a saucepan of barely simmering water combine chocolate and water and stir until chocolate is melted and sauce is somewhat smooth, about 20 minutes. (Most of the water will have evaporated and mixture will have thickened slightly.) Remove bowl from heat and stir in cream and liqueur until combined well. Cool sauce completely and transfer to a jar with a tight-fitting lid. Sauce keeps, covered and chilled, 1 month. Serve sauce over ice cream.
