My Mexican friend gave me this recipe for corn on the cob. Street vendors there sell their corn made this way. Cotija cheese can be found in most grocery stores.

4 ears corn, shucked
¼ cup melted butter
¼ cup mayonnaise
½ cup grated cotija cheese
4 wedges lime

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Grill corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.

Mexican-Style Corn on the Cob With Lime, Ancho, and Queso Fresco image

Slathered with queso fresco and ancho chili powder-Mexican street-food style-this recipe for corn on the cob is sure to be the hit of your barbecue. This recipe comes from the delicious Miami Beach Party Menu created by one of the most exciting Latin chefs working today, Michelle Berstein. Note - prep time includes soaking time.

4 ears fresh corn, in their husks
4 tablespoons softened unsalted butter
1 tablespoon chopped cilantro leaf, plus more for garnish
1 teaspoon fresh lime juice
1/2 teaspoon kosher salt
fresh ground pepper
1 cup shredded or crumbled queso fresco (about 4 ounces) or 1 cup mild feta cheese (about 4 ounces)
1 pinch dried chipotle powder
1 pinch , ancho powder

Steps:

  • To make pineapple-cucumber puree: Put pineapple and cucumber chunks in a blender. Add a pinch of salt, aSoak corn in cold water for 1 hour. Preheat a gas grill or a ridged grill pan to medium, or prepare a charcoal grill, letting coals burn until covered with white ash.
  • Grill corn, turning frequently, until the husks are charred, 25 to 30 minutes. Meanwhile, put butter, cilantro, and lime juice in a small bowl. Season with salt and pepper, and stir to incorporate the ingredients. Spread the butter mixture on a serving platter.
  • Remove corn from grill and carefully peel back the husks. (Corn will be very hot!) Remove corn silk and, if desired, wrap some strands of husk around top of corn and knot them. Put the hot cobs on the buttered platter and roll to coat. Sprinkle cheese evenly over the ears, turning them to coat. Sprinkle with chipotle and ancho chili powders and a little extra cilantro. Serve immediately.

For the garlic butter:
12 tablespoons (1 1/2 sticks) unsalted butter, slightly softened
4 cloves garlic, coarsely chopped
Salt and freshly ground black pepper
For the corn:
8 ears corn, silks removed but husks left on, soaked in cold water for at least 10 minutes
2 fresh limes, quartered
1/2 cup crumbled queso fresco or mild feta

Steps:

  • Make the garlic butter:
  • Combine the butter and garlic in a food processor or with a mixer until smooth. (To mix by hand, let the butter get very soft, then beat in the garlic, finely minced, with a large wooden spoon.) Season to taste with salt and pepper. (The garlic butter can be made in advance, covered, and kept refrigerated up to 2 days, or frozen for a week. Bring to cool room temperature before serving.)
  • Make the corn:
  • 1. Heat your grill to high.
  • 2. Place the corn on the grill, close the grill hood, and cook for 15 to 20 minutes, turning occasionally, until steamed through and hot but still crisp (test by carefully piercing with a knife). Unwrap the husks from the corn and immediately spread or brush with garlic butter.
  • 3. Squeeze the limes on top and and sprinkle with cheese. Serve immediately.

On the streets of Santa Maria, California, street vendors (think an ice cream man with a 'trash can' full of hot corn on the cob instead of ice cream) roam the sidewalks selling corn on the cob for a dollar an ear! They slide a wooden skewer in one end for you to hold the corn. We crave it often and it's become a regular on our Saturday grill nights! Give it a try. You'll be surprised!

4 ears corn on the cob, husks and silk removed
¼ cup mayonnaise (such as Hellmann's®/Best Foods®), or to taste - divided
¼ cup margarine in a squeezable container, or to taste - divided
¼ cup grated Parmesan cheese, or to taste - divided
1 teaspoon chili powder, or to taste - divided

Steps:

  • Bring a large pot of water to a boil and gently place ears of corn into the boiling water. Reduce heat to low and simmer until corn is very tender, 20 to 25 minutes.
  • Remove an ear of corn with tongs and spread about 1 tablespoon of mayonnaise all over the kernels. Squeeze about 1 tablespoon of margarine over the ear of corn in a zig-zag line, turning the ear as you squeeze. Generously sprinkle Parmesan cheese over the ear and dust with chili powder. Repeat with remaining ears of corn.

  • For Slow Cooker method - add 1/2 cup water to to the slow cooker add cleaned corn on the cob. Cover and cook on low for 5-6 hours or high for 2-3 hours. OR Keep corn in the husk following this slow cooker Corn on the Cob method.
  • Corn on the Cob Stove Top - Over medium high heat bring a large stock pot of water to a boil. Place clean corn in the pot and cover bringing the corn back to a boil. Cook for 3-10 minutes according to your preference. Remove with tongs and let cool.
  • To Grill Corn on the Cob - Remove a couple of layers of the husks and soak the corn in a large pot of water for 15 minutes. Pull down the husks to remove the silk, but keep a couple of layers intact. Over medium heat on oiled grates grill the corn turning them to char the whole corn. Place your corn on indirect heat (sides or a top grill) and cook for about 15 minutes. Remove with tongs and cool before handling.
  • In a shallow bowl or dish mix cheese, chili and salt together. Coat corn with melted butter and then roll into cheese mix. Garnish with cilantro and serve with lime. Squeeze lime over corn and enjoy!
