The strawberry takes the cake! This classic cake is full of strawberry flavor and frosted to perfection with a thick vanilla-scented buttercream.

2 pt strawberry, stemmed
¼ cup granulated sugar
1 teaspoon vanilla extract
nonstick cooking spray, for greasing
3 cups all purpose flour
2 teaspoons kosher salt
2 teaspoons baking soda
4 sticks unsalted butter, room temperature
1 cup granulated sugar
½ cup light brown sugar
4 large eggs
3 teaspoons vanilla extract
1 cup buttermilk
5 ½ cups powdered sugar
4 sticks unsalted butter, room temperature
2 teaspoons vanilla extract
3 tablespoons heavy cream
strawberry, for garnish

Steps:

  • Make the strawberry purée: Preheat the oven to 400°F (200°C).
  • Spread the strawberries on a baking sheet and toss with the sugar until well coated.
  • Roast the strawberries for about 25 minutes, or until very fragrant and bright red in color.
  • Transfer the roasted strawberries to a blender and purée for 1-2 minutes, or until very smooth.
  • Transfer the strawberry purée to a small saucepan over medium heat. Simmer for about 20 minutes, or until very fragrant and most of the liquid has evaporated. Stir in the vanilla. 6. Remove the pot from the heat and let the purée cool completely. The purée can be made 1 day ahead and stored in an airtight container in the refrigerator.
  • Make the cake: Preheat the oven to 350°F (180°C). Grease and line 2 9-inch (22 cm) round cake pans with parchment paper.
  • In a medium bowl, whisk together flour, salt, and baking soda. Set aside.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar with an electric hand mixer on medium speed until very light and fluffy, about 4 minutes. Scrape down the sides of the bowl. Add the strawberry purée and beat on high speed for 30 seconds. Add the eggs, 1 at a time, beating on medium speed after each addition for about 30 seconds, or until just combined, before adding the next.
  • Add ⅓ of the dry ingredients to the batter and beat on medium speed for about 30 seconds, or until fully combined. Add the vanilla, ½ of the buttermilk, and another ⅓ of the dry ingredients and beat for another 30 seconds, until well incorporated. Add the remaining buttermilk and dry ingredients and beat to incorporate. Scrape down the sides of the bowl. Add the vanilla, then mix on medium speed for 2 minutes.
  • Divide the batter evenly between the prepared pans. Bake the cakes for 30-32 minutes, or until a toothpick inserted in the center comes out clean. Remove the cakes from the oven and let cool slightly, then remove from the pans and let cool completely on a wire rack.
  • Make the frosting: In a large bowl, combine the powdered sugar and butter. Beat with an electric hand mixer on medium-high speed for 1 minute, until fluffy. Add the vanilla and heavy cream and beat for 1 minute more, until smooth. The frosting will keep in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before frosting the cake.
  • To frost the cake, set one layer on a cake stand lined with strips of parchment paper. Spread about 1½ cups (260 G) of frosting evenly over the cake. Top with the remaining cake layer and evenly frost the top and sides with a thick layer of frosting. Decorate the cake with fresh strawberries.

1 sheet puff pastry, thawed
3 teaspoons sugar
2 egg yolks
⅓ cup sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 cup milk
6 strawberries, sliced

Steps:

  • In a microwave-safe bowl, whisk the yolks and sugar until pale in color.
  • Add cornstarch and whisk well. Add the vanilla extract and milk. Whisk until well combined.
  • Loosely cover the bowl with plastic wrap and microwave for 4 minutes, stirring halfway through. Remove plastic and stir.
  • Cover with a plastic wrap and chill at least 30 minutes.
  • Cut the thawed puff pastry into three equal-sized rectangles.
  • Pierce each piece of puff pastry with a fork.
  • Heat a nonstick pan over low heat. Place the puff pastry in the pan and cook for 10 minutes.
  • Flip the puff pastry sheets, and place a lid on the top of the pan. Cook for 10 minutes.
  • Remove the lid and sprinkle 1 teaspoon of sugar on sheet of puff pastry. Flip the pastry over so that the sugared side is on the bottom.
  • Bring the heat up to high. Place a piece of parchment paper over the puff pastry and weigh it down with another pan. Once the surface is caramelized, about 1-2 minutes, remove from the heat and let cool to room temperature on a cooling rack.
  • Place the custard in a piping bag fitting with an large round tip.
  • Pipe the custard on one sheet of puff pastry. Top with a layer of sliced strawberries, then pipe another row of custard. Top with another sheet of puff pastry, custard, sliced strawberries, custard, and the remaining puff pastry sheet.
  • Dust the top with powdered sugar.

8 oz fresh strawberry , chopped
2 cups whipped cream
strawberry topping, for serving

Steps:

  • Make the ganache: In a medium bowl, combine the white chocolate and heavy cream. Microwave in 30-second intervals, stirring after each one, until the texture is silky and smooth.
  • Refrigerate for 20 minutes.
  • Place the pound cake on a cutting board and slice lengthwise into 4 equally thick pieces.
  • Set the bottom piece of the cake down first on a small baking pan or serving platter.
  • Spread an even layer of white chocolate ganache over the cake, then sprinkle with a layer of strawberries. Repeat making with the next two pieces of pound cake. Place the final piece of pound cake on top of the last strawberry layer and cover it with an even layer of white chocolate ganache. Refrigerate for 1 hour.
  • Remove the cake from the refrigerator and place it on the edge of a cutting board sitting at the edge of your work surface. Use a serrated knife to cut the cake diagonally, lengthwise, creating two, right-angled pieces of cake. Use the edge of the cutting board to help guide your knife.
  • Set the two right-angled pieces next to each other to form a triangle with the final layer of ganache and base cake piece at the center. Cover with whipped cream.
  • Serve with strawberry topping.
  • Pairs well with rosé.

Since only fresh strawberries will do, I have been thinking of trying a different kind of berry so we can enjoy it more often. Baking is great fun for me. 1/2 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
1/2 cup sour cream
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
3/4 cup chopped fresh strawberries
3/4 cup chopped walnuts, toasted, divided

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Add sour cream and vanilla; mix well., In another bowl, whisk flour, baking powder, baking soda, salt and cinnamon; gradually stir into creamed mixture just until moistened. 2 ½ teaspoons baking powder
2 cups white sugar
1 (3 ounce) package strawberry flavored Jell-O®
1 cup butter, softened
4 eggs
1 cup milk
1 teaspoon vanilla extract
½ cup strawberries, pureed
1 ½ cups heavy cream
2 tablespoons sugar
½ teaspoon vanilla extract
1 ½ cups fresh strawberries, sliced
½ cup margarine, softened
1 (8 ounce) package cream cheese, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract
1 ½ cups quartered strawberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9 inch round cake pans.
  • In a large bowl, beat sugar, gelatin and butter until fluffy. Add eggs one at a time, beating well with each addition. Mix flour and baking powder, and beat alternately with the milk into the sugar mixture. Fold in 1 teaspoon vanilla and pureed strawberries. Divide equally into three 9 inch round cake pans.
  • Bake 25 minutes in the preheated oven, or until toothpick inserted into cake comes out clean. Cool for 10 minutes in the pans, then remove from pans and cool completely.
  • To make the filling: Beat whipping cream, 2 tablespoons sugar and 1/2 teaspoon vanilla on high until stiff. Fill each layer with 1/3 of the whipped cream and 3/4 cup sliced strawberries.
  • To make the frosting: Beat the margarine, cream cheese, confectioners' sugar, and vanilla until creamy. Spread over the sides of the cake, and pipe an edge of frosting around the top of the cake.
  • Spread remaining whipped cream on cake top. Top with quartered strawberries.

1 tablespoon freeze-dried strawberry, plus more for serving, optional

Steps:

  • Add the angel food cake mix and yellow cake mix to a jar. Place a cupcake liner over the cake mix and add the freeze-dried strawberries. Cover with the lid.
  • Store in the pantry for up to 3 months.
  • When ready to eat, remove the lid and cupcake liner with the strawberries from the jar. Pour the water into the dry cake mix. Mix thoroughly, making sure to scrape the dry mix from the bottom of the jar.
  • Microwave for 20 seconds.

Everyone loves ice cream cakes, especially ones that bring the nostalgia. This cake is not only easy to make, it's easy to swap in your favorite flavors-we went with strawberry shortcake for classic summer vibes.

1 16-ounce frozen pound cake, thawed
8 strawberry shortcake ice cream bars, softened
3 tablespoons melted unsalted butter
1/2 cup crumbled freeze-dried strawberry
1/2 cup crumbled shortbread cooky
1 1/2 cups frozen whipped topping, thawed

Steps:

  • Line a 9-inch square glass baking dish with plastic wrap.
  • Trim the ends off of the pound cake, then slice crosswise into 8 1-inch-thick slices.
  • Arrange the pound cake slices tightly in the bottom of the prepared baking dish.
  • One at a time, place a strawberry shortcake ice cream bar on top of the pound cake layer, then remove the stick. Freeze for about 3 hours.
  • In a medium bowl, toss together the melted butter, freeze-dried strawberries, and shortbread cookies. It should resemble the cookie coating from the outside of the strawberry shortcake bars.
  • Remove the baking dish from the freezer. Spread the whipped topping over the strawberry shortcake bar layer, then sprinkle generously with the cookie crumble. (Alternatively, to cover the entire cake, lift the plastic wrap to remove the cake from the baking dish and set on a small baking sheet. Cover the top and sides with double the amount of whipped topping and cookie crumble.) Freeze overnight.
  • When ready to serve, use the plastic wrap to remove the ice cream cake from the pan. Place on a cutting board and remove the plastic. Cut into 8-10 pieces and serve immediately.

3 tablespoons lemon juice
3 tablespoons canola oil

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. , In another bowl, beat egg yolks until slightly thickened. Gradually add 3/4 cup sugar, beating until thick and lemon-colored. Beat in the lemon juice, oil and water. Combine flour and salt; add to yolk mixture., Beat egg whites on medium speed until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form. Fold a fourth of the egg whites into the batter, then fold in remaining whites. , Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on the lowest oven rack at 325° for 35-40 minutes or until or until cake springs back when lightly touched. Immediately invert pan; cool completely, about 1 hour. , In a large bowl, beat cream until it begins to thicken. Add the confectioners' sugar and vanilla; beat until stiff peaks form. , Run a knife around sides and center tube of pan; remove cake. , Cut into three horizontal layers. Place one layer on a serving plate; top with some of the whipped cream and sliced strawberries. Repeat. Top with remaining cake layer; spread remaining whipped cream over top and sides of cake. Arrange remaining sliced berries on sides of cake. , Cut whole berries in half; arrange on cake top. Store in the refrigerator.
