A co-worker gave me this recipe. I added a few things for extra zip, and it always turns out well.-Kathy Willis, Pryor, Oklahoma

Number Of Ingredients 11

1 pound ground beef
2 celery ribs, chopped
1 small green pepper, chopped
1/4 cup chopped onion
1 package (8.6 ounces) beef taco pasta dinner mix
1 teaspoon chili powder
3-2/3 cups hot water
2 cups shredded cheddar cheese
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (2-1/4 ounces) sliced ripe olives, drained
Sour cream, optional

Steps:

  • In a large skillet, cook beef, celery, green pepper and onion over medium heat until meat is no longer pink and vegetables are tender; drain. , Set aside topping packet from the dinner mix for another use. Stir the contents of dinner mix seasoning packet, chili powder and water into beef mixture. Bring to a boil. Stir in noodles from dinner mix. Reduce heat; cover and simmer for 12-15 minutes or until noodles are tender. , Stir in the cheese, tomatoes and olives; heat through. Serve with sour cream if desired.

This is a super easy dinner. Serve with a side salad for an easy fix meal. I think this was originally from Southern Living.

Number Of Ingredients 12

1/4 cup flour
3/4 teaspoon seasoning salt
1 lb boneless skinless chicken breast, cubed
2 tablespoons vegetable oil
29 ounces canned tomatoes, diced and undrained
1 1/4 ounces taco seasoning mix
1 cup celery, thinly sliced
1 small onion, chopped
2 1/4 ounces ripe olives
1 cup long grain rice, uncooked
1 cup water
2 ounces cheddar cheese, shredded

Steps:

  • Combine flour and seasoned salt in Ziploc bag. Add chicken. Seal and shake to coat chicken.
  • Brown chicken in large skillet in oil over medium high heat. Add remaining ingredients, except cheese, and bring to a boil.
  • Cover, reduce heat and simmer 25 minutes until rice is tender and liquid is absorbed.
  • Serve with sprinkled cheddar cheese.

(If your skillet doesn't have a lid, use foil.) Let your beef and rice casserole simmer for approximately 20 min or until the broth is absorbed and the rice is cooked.
