My adaptation of one of several budget-savvy "sizzling sausages" recipes in the current issue of the Australian magazine 'New Idea'. Cooking editor Barbara Northwood has costed this one at $A3.34 per serve.

Number Of Ingredients 13

1 tablespoon olive oil
600 g beef sausages (slightly more than 19 ounces)
1 onion, finely chopped
2 garlic cloves, finely chopped
50 g taco seasoning (between 11/2 and 2 ounces)
1 1/2 cups water
420 g four-bean mix, drained (131/2oz)
310 g corn kernels, drained (just under 10oz)
6 jumbo tortillas
3 iceberg lettuce leaves, shredded or 2 cups baby spinach leaves
2 tomatoes, chopped
1/2 cup tasty cheese, grated
2 limes, halved then quartered, to serve

Steps:

  • Heat the oil in a large non-stick pan; add the beef sausages cook, turning occasionally, until browned all over and cooked through; remove and thinly slice.
  • Add the chopped onion and garlic to the same pan; cook, stirring occasionally, until they have softened; add the sausages, burrito seasoning and water; bring to the boil; add the four-bean mix and the corn kernels; cook, stirring, until hot.
  • Heat the tortillas according to the packet directions.
  • Divide the lettuce (or baby spinach leaves) and the sausage mixture among the tortillas; top with tomato and cheese; fold over sides to enclose.
  • Serve the Mexican Sausage Tortillas with lime quarters.
  • NOTE: This can also be served with tacos.

This Mexican Tortilla Casserole is an easy-to-prepare, vegetarian meal that's perfect for weeknight meals or a dinner party. You can easily add meat for a heartier dish!

1 tablespoon extra virgin olive oil
1 large yellow onion, (chopped)
1 medium garlic clove, (minced)
1 teaspoon ground cumin
1½ teaspoons chili powder
1 (14-ounce) can fire roasted diced tomatoes, (drained, 1/4 cup juice reserved)
¼ cup tomato paste
2 (15 ounce) cans black or pinto beans (or a mix), (drained)
1½ cups frozen corn
3 cups coarsely chopped fresh spinach ((baby or regular will work))
salt and ground black pepper
8 corn tortillas
2 cups monterey jack or cheddar cheese ( (I used both))
Optional toppings: chopped fresh cilantro, chopped fresh jalapeño, sour cream, salsa

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8x11 or 9x9 inch baking dish (or a similar sized pan) with cooking spray.
  • Heat the olive oil in a large skillet over medium low heat and add the onion, garlic, cumin and chili powder. Stir for a few minutes until the onions are soft and the spices are fragrant, about 3-5 minutes. Add the tomatoes, reserved tomato juice, tomato paste, beans, corn and spinach. Stir and cook for another minute or two until the spinach has wilted and the corn has thawed. Season with salt and pepper to taste.
  • Place two corn tortillas in the bottom of the prepared pan and top with 1/4 of the bean mixture, spreading the mixture evenly. Sprinkle evenly with 1/2 cup of the cheese. Repeat until all of the ingredients have been used up, finishing with the cheese.
  • Bake until the tortilla casserole has cooked through, approximately 20 minutes. Allow to cool for 5 minutes before cutting.
  • Serve with garnishes, if desired (I highly recommend them!).

I learned how to make these growing up watching my mother Alma. We have never used an actual recipe, but for your convenience I came up with one.

3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
¾ cup shortening
¾ cup hot water

Steps:

  • Combine the flour, baking powder, and salt. Either by hand or with a pastry cutter, cut in the shortening till the mixture is crumbly. If the mixture looks more floury than crumbly, be sure to add just one or two more tablespoons of shortening till it is crumbly. Add about 3/4 cup hot water to the mixture, or just enough to make the ingredients look moist.
  • With your hand or a large fork, knead the mixture making sure to rub the dough against the sides of the large mixing bowl to gather any clinging dough. If the dough still sticks to the side of the bowl, add a couple more tablespoons of flour until the dough forms a soft round shape. The dough is ready to roll out now, but it is best to let it rest. Cover it with a dish towel, and let it sit for about an hour or so.
  • Take the dough, and pull it apart into 10 to 12 balls. Lightly flour your rolling area, and roll each ball with a rolling pin to about 1/8 inch thickness.
  • Place each tortilla on a medium hot cast iron skillet. Cook for about 1 to 2 minutes on each side, or until the tortilla does not look doughy.

1 pound bulk pork sausage
1 4-ounce can chopped mild green chilies
4 tablespoons chopped fresh cilantro
1/4 teaspoon hot pepper sauce (such as Tabasco)
1 1/2 cups grated cheddar cheese
1 cup grated Monterey Jack cheese
12 6-inch-diameter flour or corn tortillas

Steps:

  • Preheat oven to 350°F. Sauté sausage in heavy large skillet over medium-high heat until brown, breaking up clumps with back of spoon, about 7 minutes. Using slotted spoon, transfer sausage to 8x8x2-inch glass baking dish or other ovenproof pan. Mix chopped green chilies, 3 tablespoons cilantro and hot sauce into sausage. Sprinkle cheddar cheese, Monterey Jack cheese, then remaining 1 tablespoon cilantro over sausage mixture. Bake casserole 10 minutes.
  • Wrap tortillas tightly in foil. Place in oven to heat through alongside sausage casserole. Continue to bake casserole until cheeses bubble and sausage mixture is heated through, about 10 minutes longer.
  • Serve sausage and cheese mixture with warm tortillas.

8 ounces bulk lean turkey breakfast sausage
1/2 cup canned diced tomatoes and green chiles
6 corn tortillas (6 inches)
1/2 cup shredded Monterey Jack cheese
1/4 cup shredded pepper jack cheese
2 green onions, chopped
6 large eggs
3/4 cup fat-free milk
3/4 teaspoon paprika
1/4 teaspoon ground cumin
Reduced-fat sour cream, optional
Salsa, optional
Additional chopped green onions, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes. Stir in tomatoes., Coat a 9-in. deep-dish pie plate with cooking spray. Line pie plate with half the tortillas. Sprinkle with half of each of the following: sausage mixture, cheeses and green onions. Repeat layers. , In a bowl, whisk together eggs, milk, paprika and cumin; pour slowly over layers. Bake, uncovered, until set, 25-30 minutes. Let stand 10 minutes. Cut into wedges. If desired, serve with sour cream, salsa and additional green onions.
