These mango popsicles are the ultimate refreshing summer treat. They're also so delicious and super easy to make!

3 medium mangos (about 1 pound total)
½ lime (juice)
¼ cup sugar (or any sweetener you prefer)

Steps:

  • Wash mangos and peel them. Slice the pulp with a sharp knife making sure to get the most of it attached to the pit.
  • Cut 1 ½ cup of mango pulp into small bites.
  • Place the remaining mango pulp into a blender, add sugar and lime juice. Pour in 1 cup of water and blend until smooth.
  • Place some diced mango into your popsicles molds.
  • Pour in some mango mixture filling just about half the mold. Shake the molds a bit so the mixture fills all the gaps.
  • Add more diced mango to each mold and finish with mango mixture to completely fill them.
  • Insert a stick on each popsicle and freeze for six hours or overnight.

MANGO PALETAS/FROZEN MEXICAN MANGO POPSICLES WITH CHILI AND LEMON



Mango Paletas/Frozen Mexican Mango Popsicles with Chili and Lemon image

Mango paletas, frozen mango ice pops or popsicles with a hint of chili.

Yield 4 to 6

Number Of Ingredients 6

2 large mangoes/2 cups mango pulp
¼ cup sugar syrup (or to taste) - recipe below
¼ to ½ teaspoon red chilli powder
1 to 2 tablespoons lime/lemon juice
¼ cup chopped mangoes
1/8 cup pomegranate pearls

Steps:

  • Combine 1 cup sugar and 1 cup water in a small saucepan. Stir over medium heat just until the sugar dissolves. Mix well and remove from heat. Let cool. Simple sugar syrup is ready to be used in any sorbet, drinks or even in desserts.
  • If using whole, fresh mangoes, peel and cut mangoes into rough chunks. Blend with sugar syrup, lemon juice and chili powder to a fine puree, scraping sides in between.
  • Adjust the amount of sugar syrup and chili powder according to your taste.
  • Gently mix in chopped mangoes and pomegranate pearls.
  • Pour this mango mixture into ice pop or popsicle molds. Insert popsicle sticks into each mold and freeze until they are solid, about 3 to 4 hours or more.
  • Just before serving, run the ice pop molds under running water and gently release the popsicles.
  • Enjoy!!!

3 cups Diced Mango (fresh or frozen (thaw first if using frozen))
1/4 cup Water
2 Tbsp Honey
1 Lime (juiced)

Steps:

  • Place all the ingredients in a food processor or a blend. Blend until the mixture is combined and smooth.
  • Pour the mixture into a popsicle molds and add popsicle sticks.
  • Place the molds in the freezer and freeze for 4-6 hours or until the popsicles are fully frozen (overnight works great too).
  • When you are ready to serve, run warm water on the outside of the molds to loosen the popsicles from the molds.
  • Then they are ready to enjoy!

1 cup drinking water
1 1/2 cups ice cubes
1 cup fresh mango, chopped
1/4 cup sugar

Steps:

  • Bring the water to a boil and reduce to a simmer. Add the sugar and stir occasionally until sugar has melted into the water.
  • Remove from heat and pour into large measuring cup, and add ice until you reach 2 cups total. Stir ice until it is melted and the water mixture is cooled.
  • Place approximately 2 tablespoons of the mango into each popsicle mold. Pour the water mixture into each mold to reach the top.
  • Use a long spoon or a popsicle stick to gently stir the mango into the liquid. Place lid on, and add sticks. Freeze for one hour or until solid.
  • Yield: 10 Paletas (depending on size of mold).

JUST MANGO POPSICLES

Just mangos with a little bit of sugar (if needed) and a tiny bit of lemon juice to prevent browning. You could easily use stevia or erythritol for a sugar free version. I like to unmold my popsicles, wrap in wax paper, and store in a freezer bag so I can use the molds to make another flavor without having to finish the whole batch.

2 fresh mangoes (or 1 lb frozen diced mangos)
1/4-1/2 cup sugar
1 teaspoon lemon juice

Steps:

  • Peel mangoes, remove pit, and dice. I like to scoop the mango straight into the blender as I go.
  • Taste a piece of the mango, and add sugar as needed. Some mangos are very sweet and won't need any sugar added, some are a little bitter and will need the full 1/2 cup. Add the lemon juice (to prevent browning) and blend until you have a homogenous puree.
  • Divide puree among popsicle molds, and freeze until solid, about 6 hours. If you are using cups, freeze for 2 hours, then insert sticks, and freeze until solid, about 4 hours more.

  • If using fresh mangoes, place a mango on its side on a cutting board. With a sharp knife, cut straight down on either side of the large, flat-sided pit in the middle of the mango. Scoop out the mango pulp from both sides. Repeat with the second mango.
