MOLASSES SUGAR COOKIES
These are a wonderful chewy spice cookie. They are drop cookies that keep very well. I make them at the beginning of the holiday season and they keep all the way to New Year's!

Steps:
- Melt the shortening in a large pan on the stove, and cool.
- Add sugar, eggs, and molasses, beat well.
- In a separate bowl, sift dry ingredients together and add to the pan. Mix well and chill 3 hours or overnight.
- Form into walnut-size balls. Roll in granulated sugar. Place on greased cookie sheet about 2 inches apart.
- Bake at 375 degrees F (190 degrees C) for 8-10 minutes.
- Store in an airtight container to keep from getting overly crisp. If they do lose their softness, an easy way to restore it is to place one slice of fresh bread in the container with the cookies for a couple of hours or overnight and they will be soft again!

There's nothing really fancy about these cookies, but they're my husband's all-time favorite. He enjoys their chewy, comforting flavor and the childhood memories they bring back.

- In a large bowl, combine the oil, sugar and molasses. Add egg; mix well. Combine the flour, baking soda, cinnamon, salt, cloves and ginger; add to sugar mixture and mix well. Cover and refrigerate for 4 hours or until easy to handle., Shape dough into 1-in. balls; roll in additional sugar. Place 3 in. apart on greased baking sheets. Bake at 375° for 7-9 minutes or until tops are cracked and edges are set. Cool for 2-3 minutes before removing from pans to wire racks.

Steps:
- In a large bowl, whip together sugar, butter, molasses, egg, and vanilla. Mix in flour, baking soda, baking powder, and spices until dough comes together. Wrap well and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Roll cookie dough into 1-inch balls and roll in sugar to coat. Arrange on rimmed baking sheets. Bake for 15 minutes.

- Cream together until light and fluffy butter flavored shortening and brown sugar. Add egg and molasses and beat well. Sift together flour, salt, baking soda, cinnamon, ground cloves and ginger. Add to creamed mixture and mix well.
- Chill at least 1 hour or overnight.
- Preheat oven to 375 degrees F (190 degrees C).
- Roll into 1-inch balls, roll in sugar. Place balls 2 inches apart on ungreased cookie sheet. Bake for 10 minutes. Cool slightly before removing from pan.

GRANNY'S MOLASSES COOKIES
Whenever we went to my granny's for afternoon tea we knew we would be served these. These are nice and chewy. These have very similar ingredients to other molasses cookies recipes posted-the exception is the addition of maple flavouring and vanilla which i think make a nice addition! I'm a huge oatmeal/chocolate chip cookie fan but have to admit that these are a nice change from the everyday cookie, I hope you do too. (Don't overcook-unless you like crispy cookies).

- Mix in the molasses, egg, vanilla and maple flavouring.
- Sift together the remaining ingredients.

AUNT RUTH'S MOLASSES COOKIES
These are just like the wonderful cookies at Winkler's Bakery in Old Salem, NC. These are from a 1940s Geneva, OH community cookbook.

Steps:
- Cream the sugar and shortening together.
- Add two beaten eggs. Blend well.
- Add the ginger, cinnamon and salt. Blend.
- Add the molasses. Blend well.
- Dissolve the 2 teaspoons of baking soda in 1/2 cup of hot water.
- When it is just warm add it to the other preparation. Smooth it all.
- Add the flour incrementally until the mixture is right for making drop cookies.
- Drop from a teaspoon onto a greased cookie sheet. One teaspoon of cookie mix makes a 3" cookie.
- Bake 8 - 9 minutes at 350°F.
- Leave cookies on the pan a little bit before removing.
- Rest the dough in the refrigerator between batches.

Steps:
- Cream butter and sugar together; stir in egg, molasses and vanilla; combine and gradually add dry ingredients (add a couple more tablespoons flour if your dough seems too soft) then stir until completely mixed.
- Roll dough into 1 1/4" balls; roll each ball of dough in granulated sugar and place on a greased baking sheet.
- For soft & chewy cookies, bake at 375° for 8 minutes or just until edges start to turn golden-brown; for crisper cookies, bake for up to 10 minutes; allow cookies to remain on baking sheet for a couple minutes after they come out of the oven; remove cookies to a cooling rack to cool completely.
