TAQUERIA STYLE PICKLED JALAPENOS AND CARROTS



Taqueria Style Pickled Jalapenos and Carrots image

This recipe will result in two pint-sized jars of pure zip. They'll keep in the fridge for at least a month. (Note: these instructions are not designed for long-term canning.)

Number Of Ingredients 12

8-10 jalapenos
2 carrots
1 small onion
4-6 cloves of garlic
olive oil
1.5 cups white vinegar
1 cup water
1 tablespoon salt (Kosher or sea salt)
1/2 teaspoon Mexican oregano
1/2 teaspoon cumin seeds
8-10 black peppercorns
1 bay leaf (optional)

Steps:

  • Give the jalapenos a rinse and then cut into 1/4 inch slices. Peel the carrots and cut into 1/4 inch slices.
  • Peel and quarter the onion, chopping into thin slices. Peel and roughly chop the garlic.
  • Heat a glug of oil in a medium sized sauce pan over medium heat. Saute the onion and garlic for a few minutes.
  • Add the spices: 1/2 teaspoon cumin seeds, 1/2 teaspoon Mexican oregano, 8-10 black peppercorns. I usually give the spices a quick crush in the molcajete but this is optional. And feel free to use powdered spices if you don't have seeds or peppercorns on hand.
  • Add the jalapenos and carrots. Briefly saute and then add 1.5 cups white vinegar, 1 cup water, 1 tablespoon kosher or sea salt, and 1 bay leaf (optional). Simmer until the jalapenos are just turning army green in color.
  • Fill two pint-sized Mason jars with the veggies and fill to the brim with the vinegar mixture. You can also use a single quart-sized Mason jar. You can give them a taste test now for a preview, but they won't have full flavor until they rest overnight in the brine.
  • I usually let the jars cool on the counter for a bit, then cap and store in the fridge where they will keep for weeks at a time.

1 1/2 pounds fresh jalapeños (or a combination of jalapeños and mini bell peppers)
14-16 ounces Mexican chorizo
12 ounces cream cheese, (softened (could be low-fat))
2 cups shredded smoked cheddar
1/4 teaspoon garlic powder
3 ounces crumbled queso fresco
1/2 cup chopped green onions

Steps:

  • Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper and set aside. Place the chorizo in a skillet over medium heat. Brown the chorizo until mostly cooked, and break into small pieces with a wooden spoon. Then move the chorizo to a paper towel lined bowl to drain.
  • Cut the jalapeños lengthwise and use a spoon to scrape out the veins and seeds. Set them cut-side-up on the baking sheets. Then mix the cream cheese, smoked cheddar, and garlic powder in a medium bowl until well combined.
  • Spread 1 tablespoon of cheese filling into each jalapeño half. Press crumbled chorizo into the top of the cheese filling. Bake for 9-10 minutes until the filling has melted and the peppers are soft.
  • While the jalapeños are still warm, sprinkle the tops with crumbled queso fresco and green onions. Serve warm.

5 to 6 medium jalapeño peppers
2 garlic cloves
1/2 cup white vinegar
1/2 cup water
1 tablespoon sugar
2 teaspoons kosher salt
1 tablespoon black peppercorns
1 bay leaf

Steps:

  • Wash a wide-mouth pint mason jar and and its lid in hot soapy water. Then rinse and let air dry.
  • Thinly slice the jalapeño peppers. Fill the jar with the slices.
  • Peel the garlic cloves, leaving them whole. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Bring to a boil, stirring occasionally to dissolve the sugar and salt (this will take only a few minutes).
  • Once boiling, pour the brine into the jar (including the bay leaf). Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any peppers are exposed at the top.
  • Screw on the lid tightly and allow to cool to room temperature (about 1 hour). Eat immediately, or refrigerate until serving. Keeps up to 1 month refrigerated.

1 lb grated monterey jack cheese
3 eggs, beaten

Steps:

  • 1. Grease a 9x9 glass dish. Spread chilles on the bottom.
  • 2. Mix beaten eggs and cheese and spread on the chilles
  • 3. Bake for 30-45 minutes or until golden brown. Cool slightly and allow to set.
  • 4. Cut into squares. Can be served warm or cold.
