The basic classic: bacon, lettuce, and tomato -- nothing fancy, just delicious. (I personally use fake vegetarian bacon these days, and it's still really good!)

4 slices bacon
2 leaves lettuce
2 slices tomato
2 slices bread, toasted
1 tablespoon mayonnaise

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

Try a twist on a classic with this BLT eggs benedict recipe--after all, what is breakfast without a little bacon? We've made this recipe a breeze by poaching the eggs in a muffin tin and making the hollandaise sauce in a blender. Your friends will be in awe of your culinary skills.

Number Of Ingredients 14

3 english muffins
6 strips bacon
nonstick cooking spray, for greasing
6 large eggs
kosher salt, to taste
freshly ground black pepper, to taste
6 tablespoons water
½ stick unsalted butter, melted
mixed green, to taste
1 large beefsteak tomato, cut into 6 slices
3 large egg yolks
1 tablespoon lemon juice
8 tablespoons unsalted butter, melted
½ teaspoon kosher salt

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut the English muffins in half and place on a baking sheet.
  • Arrange the bacon strips on a separate baking sheet.
  • Bake the bacon until browned and crispy, 12-15 minutes. Add the English muffins to the oven for the last 5 minutes of cooking, or until toasted. Remove from the oven.
  • Grease 6 cups of a muffin tin with nonstick spray. One at a time, crack the eggs into each greased cup. Season the eggs with a pinch of salt and pepper. Gently spoon 1 tablespoon of water over each egg.
  • Bake until the egg whites are set and the yolks are still runny, 7-9 minutes. Remove from the oven and let sit for 1-2 minutes, then scoop out the eggs with a slotted spoon and gently pat dry with a paper towel.
  • Arrange the English muffins on a serving platter and brush with the melted butter. Top each muffin half with mixed greens and a slice of tomato. Break each bacon strip in half and lay over the tomatoes, then top with a poached egg.
  • Make the hollandaise: Add the eggs yolks and lemon juice to a blender. Blend until pale yellow in color, about 1 minute.
  • Once the yolks have lightened in color, turn the blender to the lowest speed and slowly drizzle in the melted butter. 10. Add the salt and continue blending until the butter is well incorporated.
  • Drizzle the hollandaise over the benedicts. Garnish with black pepper.
  • Serve immediately.

1 egg
2 slices
7-grain or sourdough bread
lightly toasted
Handful of arugula (There's been much debate over the perfect lettuce for a BLT. Some prefer the crunch of iceberg or romaine
others like leaves with a peppery bite
like watercress or arugula. It's your choice.)
3 thick slices of tomato
4 strips of bacon
cooked
Salt and black pepper to taste

Steps:

  • Heat a small nonstick skillet over medium heat. Coat with olive oil cooking spray and add the egg. Cook sunny side up until the white is set but the yolk is runny. Line the bottom half of the bread with the arugula, followed by the tomato slices and bacon. Set the cooked egg carefully on top, and season with a pinch of salt and plenty of fresh cracked pepper. Top with the second slice of bread.

2 1/2 cups fresh basil leaves, lightly packed
1 cup mayonnaise
1/4 cup butter, room temperature
1 lb thick slab bacon
12 slices whole wheat bread
3 large tomatoes, cut into 1/4-inch-thick rounds
2 ripe avocados
1 sweet onion, thinly sliced
1 head of boston bibb lettuce

Steps:

  • Mix basil, mayonnaise and butter in processor until basil is finely chopped and mixture is well blended. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.).
  • Cook bacon in heavy large skillet over medium-high heat until crisp, about 8 minutes. Or roast in the oven at 375 for 10-12 minutes. Transfer to paper towels to drain. Toast thickly sliced bread in toaster or under broiler.
  • Spread half of mayonnaise mixture over 6 of the toasted bread slices. Top each with 2 tomato slices. Sprinkle tomatoes with salt and pepper. Top tomato slices with sliced avocado, then with bacon strips, onion and lettuce. Spread remaining mayonnaise mixture over remaining 6 bread slices. Place bread slices on top. Cut sandwiches in half and serve.

Steps:

  • Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  • Arrange the bacon on the prepared baking sheet and place in the oven. Bake to your desired level of crispiness, 12-15 minutes. Transfer the bacon to a paper towel-lined plate to drain.
