CAFé DE OLLA RECIPE

Those times are long gone but the memories are still there, especially on a cold day like this when a good cup of coffee from México with Cinnamon and Piloncillo will warm you up. I love making this coffee when we go camping.

Number Of Ingredients 4

4 cups of water
3 oz. Piloncillo/Panela or dark brown sugar (about 1/3 cup)
1/2 a stick of Mexican Cinnamon
4 Tablespoons of ground Coffee (it would be better if you could get a Dark Mexican Coffee.)

Steps:

  • In a Medium saucepan, place the water, cinnamon, and Piloncillo (or brown sugar). Turn heat and simmer until the piloncillo is dissolved. About7 minutes.
  • When the water starts boiling, add the coffee, turn the heat off and stir.
  • Cover the pot and let steep for 5 minutes. Pour through a strainer to serve.

Café de Olla is a traditional Mexican coffee spiced with cinnamon, cloves, star anise and sweetened with piloncillo. Serve black or with milk.

8 cups water
4 ounces piloncillo ((or 1/2 cup dark brown sugar), plus more to taste*)
2 cinnamon sticks ((Mexican cinnamon sticks preferred))
2 whole cloves
1 star anise pod
9 tablespoons dark roast ground coffee

Steps:

  • In a medium olla or pot, add water, piloncillo, cinnamon sticks, cloves and star anise pod.
  • Place over medium-high heat and stir often until the piloncillo completely dissolves and the water comes to a boil.
  • Remove the pot from the heat. Add the ground coffee, stir to combine, and cover. Let the coffee steep for 6 minutes for regular strength coffee or 8 minutes for extra-strength strength coffee.
  • Pour the coffee through a fine mesh strainer or cheesecloth into a coffee mug and serve.
  • Enjoy as is or add some milk for a cafe con leche.

  • Pour sugar and hot water into a coffee mug. Stir in the coffee and liqueur, and then spoon whipped cream gently on top of the coffee.

1 cup butter, softened
1/2 cup sugar
2 teaspoons vanilla extract
1-3/4 cups all-purpose flour
1/3 cup baking cocoa
1 tablespoon instant coffee granules
1 cup finely chopped pecans or walnuts
Confectioners' sugar

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour, cocoa and coffee granules; gradually beat into creamed mixture. Stir in pecans. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets., Bake 14-16 minutes or until set. Cool on pans 1-2 minutes. Roll warm cookies in confectioners' sugar. Cool on wire racks.

1/2 lb ground blanched almond
1/3 cup unsweetened cocoa powder
1/4 cup white sugar
2 tablespoons instant coffee
1/3 cup coffee liqueur
1/2 cup light corn syrup
cinnamon sugar, for rolling

Steps:

  • Crush chocolate wafers into crumbs.
  • Mix with ground blanched almonds, unsweetened cocoa powder, and sugar.
  • Dissolve instant coffee in coffee liqueur and stir into crumb mixture with the light corn syrup.
  • Shape into small balls and roll in cinnamon sugar.
  • Store in refrigerator.

1 cup milk

  • Place coffee and cinnamon in the filter basket of coffee maker.
  • Add water to coffee maker and brew as directed.
  • In a saucepan, blend milk, chocolate syrup and sugar.
  • Stir over low heat until sugar dissolves.

These will become more flavorful after sitting for 2-3 days, so plan ahead or make sure you put some aside for yourself to enjoy later. Time is a guess because I have not made these yet.

3 1/2 cups vanilla wafer crumbs
1 cup pecans, finely chopped
1 1/2 cups confectioners' sugar, sifted and divided
3 tablespoons instant coffee granules
1/3 cup Irish whiskey
1/3 cup light corn syrup

Steps:

  • In a large bowl, combine the cookie crumbs, pecans and 1 cup of sugar.
  • Dissolve coffee granules in the Irish Whiskey in a small cup.
  • Add the coffee/whiskey mixture and the corn syrup to the dry ingredients, mixing until blended.
  • Shape mixture into 1-inch balls and roll in the remaining 1/2 cup of sugar.
  • Store in an air tight container.
