This is just like its name--it is truly a delight to eat. Making it is really simple, and it doesn't last long once it starts to get eaten.

1 cup finely chopped pecans
1 cup flour
1/2 cup margarine
2 (8 ounce) packages cream cheese
2 (8 ounce) containers Cool Whip
2 (6 ounce) boxes chocolate instant pudding
4 cups milk
2 cups powdered sugar
1 (8 ounce) container Cool Whip
1/2 cup of finely chopped pecans

Steps:

  • Preheat the oven to 400°F.
  • Start with the crust: Mix the pecans and flour together. Melt butter; add to mixture and stir until moist.
  • Press into a deep ungreased 9x11 inch pan--crust should be thin.
  • Bake until lightly brown; cool completely.
  • Blend the cream cheese and Cool Whip together until smooth. Add sugar slowly until mixed well (make sure the Cool Whip is defrosted and the cream cheese is at room temperature before starting). Spoon filling into crust and let sit in the refrigerator while you mix the pudding.
  • Mix the 2 boxes of pudding with the milk. When the pudding is thickened, add it to the top of the cream cheese mixture. Let set in the refrigerator.
  • Next spread the last tub of Cool Whip on top of the pudding, being careful not to mix with the pudding.
  • Top with chopped pecans.

These little chocolate, peanut butter candies melt in your mouth. They are so yummy and don't require paraffin wax like so many other buckeye recipes.

3 cups creamy peanut butter
7 -8 cups powdered sugar
2 cups margarine, softened
4 teaspoons vanilla
3 (12 ounce) packages chocolate chips
6 tablespoons shortening

Steps:

  • Mix peanut butter, sugar, butter and vanilla together in a large bowl. Cover and refrigerate for 1 hour.
  • Melt chocolate chips and shortening over low heat (I use my crockpot). Make peanut butter mixture into 1 inch to 1 1/2 inch balls. Work with a small amount of the peanut butter mixture at a time, keeping the rest refrigerated until ready to form into balls. Using toothpicks or small forks, dip the balls into the chocolate. Set on wax paper and refrigerate.

1/2 cup butter (melted)
1 1/2 cups self rising flour
1 1/2 cups chopped pecans
8 ounces cream cheese
1 cup confectioners' sugar
1 cup Cool Whip
1 (3 1/2 ounce) box chocolate instant pudding
1 (3 1/2 ounce) box instant vanilla pudding
3 cups milk

Steps:

  • Crust:.
  • Oven at 375ºF.
  • Press mixed ingredients onto the bottom of a 13x9 baking pan.
  • Bake for 15 minutes, let cool completely.
  • 1st Layer:
  • Mix cream cheese, confectioners sugar, and cool whip.
  • Pour on cooled crust.
  • 2nd Layer:
  • Mix chocolate instant pudding, vanilla instant pudding, and milk.
  • Combine with a mixer until mixture becomes thick.
  • Pour on top of cream cheese mixture.
  • Top with Cool whip.
  • Chill in refrigerator until ready to serve.

  • Place cream cheese and butter in large mixing bowl and beat with an electric mixer until smooth and creamy, 1-2 minutes. Add 1/2 cup cocoa powder, vanilla, lemon juice, and milk and beat again until well combined.
  • Add 6-7 cups confectioner's sugar, one cup at a time, beating well and scraping down the sides of the bowl after each additional. Keep adding sugar until dough is sticky and thick like cookie dough. Will likely use at least 6 cups but may not need the whole 7.
  • Stir together remaining 2 tablespoons cocoa powder with 1/4 cup confectioner's sugar in a small bowl until no lumps remain. Pinch dough off and form into one inch balls before rolling in cocoa powder/sugar mixture.
