2 large eggs
2/3 cup vegetable oil
2 teaspoons vanilla
3/4 cup white sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Beat together eggs, oil, vanilla and sugar; add flour, baking powder and salt and mix well.
  • Drop by heaping teaspoon approx 3" apart on an ungreased cookie sheet.
  • Flatten with bottom of glass moistened with water and dipped in sugar.
  • Bake at 400°F for 6-10 minutes or just until lightly golden.

1 cup sugar
3 eggs, beaten
1 teaspoon vanilla
3 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1 teaspoon ground nutmeg

Steps:

  • Cream together sugar and butter.
  • Add the beaten eggs and vanilla.
  • sift together flour, cream of tartar, baking soda, and nutmeg.
  • Add to the first four ingredients.
  • Let the dough chill for 2 hours.
  • preheat oven to 425.
  • roll out dough on lightly floured surface and cut the cookies about 1/2 inch thick.
  • Try not to add too much flour to them it will ruin the texture of the cookies.
  • Bake for 8 minutes.
  • Let cool, then frost with any frosting you would like.

Great cookies for a cold winter night. I only make these on special occasions. I got this out of an old Working Mother's magazine.

Number Of Ingredients 10

2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 (8 ounce) container sour cream
2 eggs
1 tablespoon vanilla extract
1/4 cup coarse sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease large cookie sheets.
  • In medium bowl, mix first 4 ingredients until well combined; set aside.
  • In large bowl with electric mixer on medium speed, cream butter and 1 cup of the granulated sugar until light and fluffy. Beat in sour cream, eggs and vanilla.
  • Beat in half the flour mixture until just combined. Stir in remaining flour mixture with a spoon (dough will be very soft). Spoon dough by heaping tablespoons on prepared baking sheets about 3 inches apart, making about 24 cookies.
  • Butter the base of a flat bottomed glass that about 3 inches wide. Dip bottom of glass into the remaining 1/4 cup granulated sugar. Use sugared glass to flatten cookies into 3 inch rounds, coating bottom of glass with sugar each time.
  • Sprinkle cookies with some coarse sugar.
  • Bake for 10 to 12 minutes, or until tops spring back when lightly pressed. (Cookies will be very light in color).
  • Immediately remove to racks to cool.

KATHY'S FROSTED SOFT SUGAR COOKIES

This is a recipe I got from my awesome mother-in-law. We used to always make them around Christmas and have lots of fun together. She was the one who inspired the baker and cook in me so these are very special to me. It would not be Christmas if I didn't make these at least once! The dough needs to refrigerate overnight. I frost these with "Recipe#201364". These cookies are recommended to be frosted. These are not the type of cookies you want to just use sprinkle sugar on. There are other recipes for that if you don't want to frost them.

2 cups granulated sugar
1 cup shortening
3 eggs
2 teaspoons vanilla
1 cup sour milk (put 1 T vinegar in measuring cup and add enough milk to make 1 cup)
1 1/2 teaspoons baking soda
1 teaspoon salt
6 cups flour
3 teaspoons baking powder

Steps:

  • Mix the vinegar and milk to make sour milk.
  • Add vanilla to the sour milk; set aside.
  • In large mixing bowl, cream together sugar and shortening until light and fluffy.
  • Add eggs, one at a time.
  • In separate bowl, blend together baking soda, salt, flour and baking powder.
  • Add flour mixture, alternately with sour milk mixture, to the creamed sugar and egg mixture.
  • Cover and refrigerate overnight.
  • On floured surface, roll out dough to desired thickness, about 1/4 inch.
  • Cut out with desired cookie cutter or cutters.
  • Bake at 350 degrees for about 5-7 minutes; I like mine soft.
  • Let set on cookie sheet for 1 minute before removing to wire rack to cool.
  • Frost when cool.
  • This recipe should make about 5-6 dozen, depending on the size of the cookie cutter you use.

1 egg
1 teaspoon vanilla
1/2 teaspoon almond extract
2 1/2 cups flour

Steps:

  • Mix together butter, sugar, egg, vanilla, and almond extract in a large bowl.
  • In another bowl stir together flour, soda, and cream of tartar.
  • Slowly add the dry mixture to the wet ingredients.
  • Cover and refrigerate for 2 hours.
  • Preheat oven to 375.
  • Divide dough in half.
  • On a lightly floured surface roll each half to 3/16 of an inch.
  • Cut out shapes as desired and sprinkle with sugar.

2 cups whipping cream
2 cups shortening, reg
2 cups sugar
2 teaspoons baking soda
2 teaspoons baking powder
2 eggs
1 teaspoon vanilla
1/4 teaspoon salt
3 1/2-6 1/2 cups flour (you will probably need all 6 1/2 cups)

Steps:

  • Mix all the wet ingredients together
  • Then add the dry ingredients.
  • Chill dough for several hours preferably overnight.
  • Roll out onto a flour covered surface and cut with cookie cutters. (Keep dough not being used in the fridge as this dough softens quickly.).
  • Bake at 350 for 8-10, let cool then frost.
  • (We make both large and small cookies and we usually end up around 80-100 cookies).

1 1/2 cups granulated sugar
2 eggs
3 tablespoons milk
1 teaspoon vanilla
2 teaspoons baking powder
3 cups flour (you may need to alter depending on how flour is scooped)

Steps:

  • Cream together butter and sugar; add vanilla, eggs and milk. Add baking powder and flour. Roll, cut and bake or roll into balls and smash with the bottom of a sugared glass.
